How To Make Meal Prep Chicken In The Instant Pot

I found a 4 lb tray of boneless chicken breasts on sale at Aldi which is why I decided to do this in the first place. So here is how you cook boneless chicken breasts in the Instant Pot or any pressure cooker.

  • Cut up raw chicken breasts in to even sized cubes.
  • Season the chicken with salt and pepper .
  • Place the cubes in the Instant Pot and then pour in some chicken broth.
  • Hit the manual button to pressure cook for 8 minutes.
  • Do a quick pressure release when done and let the chicken cool before freezing in ziplock bags. You want to do a quick release;instead of a natural pressure release because you dont want the chicken to continue cooking.
  • PS Make sure to drain the liquid before freezing but save it for chicken broth which you can also freeze separately.

By the way, this is the Instant Pot that I use but you can use any kind of pressure cooker for this recipe.

As you can see below I got a big bowl full of chicken from this recipe. I also saved the liquid and used it for soup that day. You dont want to freeze the chicken with the broth though.

    • Add 1 cup water and place trivet on top.
    • Lay chicken breasts in a single layer, sprinkle with spices and rub onto each other.
    • Press Pressure Cook on High or Manual for 10 minutes under 2 thickness and 15 minutes over 2 thick breasts.
    • Do Natural Release for 5 minutes and then turn pressure valve to Venting.

    How To Cook Chicken From Frozen In The Instant Pot

    Cooking times are based on 1-2 pounds of frozen medium-sized boneless, skinless chicken breasts.

    We found frozen chicken breasts are at a safe cooking temperature at 15-20 minutes using a quick release method. We always use the manual function . When cooking food from frozen in the Instant Pot, we recommend starting at the shorter end of the time range and then adding more minutes if its not done.

    The only variation to this cooking time is when chicken is in a soup. We found that because it takes so much longer for the Instant Pot to come to pressure, the chicken takes LESS time to cook. Likely 5-6 minutes. It feels a bit counter intuitive since there is more in the pot when cooking a soup recipe but we consistently found that chicken was done quicker this way.

    I tend to cook skinless boneless breasts most often, simply for the ease of it. And my method is so simple its scary:

  • Remove the chicken breast from the fridge or freezer and add to the Instant Pot insert. Use a metal rack with handles if youd like, or you can skip the rack if you prefer.
  • I typically cook 3 breasts at at time for my little family, which yields about 6 cups of shredded chicken. To cook more chicken breasts at once, layer the chicken side by side if frozen or stacked if fresh.
  • Add 1 cup of water plus kosher salt and black peppercorns.
  • Set the cooking time for just 10 minutes.
  • Be sure your chicken has an internal temperature of 165° F to be cooked through.

    Add between 2-4 minutes to the cook times listed above if your chicken breasts are frozen. I find that adding 3 extra minutes is usually perfect for frozen chicken breasts. You will also want to do a 10 minute natural release instead of a quick release for frozen chicken.

    Make sure that your frozen chicken breasts are not all stuck together in one mass, as this will increase the cook time needed. I recommend freezing chicken breasts in a flat layer so that they are easy to separate when adding to your Instant Pot.

  • Turn On the Instant Pot: Set the Instant pot to SAUTE on normal.;
  • Add Chicken: Heat olive oil in the pot, then add the chicken tenders. Season them with salt, pepper, and oregano.;
  • Saute: Brown the chicken tenders for 1 or 2 minutes on each side. This step is optional, but recommended for better texture and locking in the flavor.;
  • Deglaze: Remove the chicken from the pot and set aside. Deglaze the pot by adding a little bit of water and scraping off any bits of chicken stuck to the bottom of the pot.;
  • Set Up Instant Pot: Place the trivet in the Instant Pot, and add the rest of the water.;
  • Add The Chicken: Return the chicken tenders to the Instant Pot, stacked on the trivet.;
  • Pressure Cook: Secure the lid and set the vent to SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 3 minutes.;
