A pressure cooker pork loin roast recipe that results in tender and juicy meat every time. And its a faster cooking method than using the oven or slow cooker.
Now that Im getting more comfortable using the electric pressure cooker, Ive been using it more to make simple main dishes. I use it to quickly cook whole chicken and turkey breast.
Ill admit that I was a little intimidated to use the Instant Pot when I first bought it. Now, I have two of them. One is a 6 quart model and the other is a larger 8 quart model.
I made this pressure cooker pork loin roast recipe using the 8 quart so there was plenty of room. The great thing about having two electric pressure cookers is I can use one for the main dish and the other for the side dish.
And Im learning that its so much more convenient to use the Instant Pot instead of turning the oven on. Plus, the food cooks a lot quicker under pressure.
In fact, food cooks so fast that when I was just starting to learn how to use the pressure cooker, I often overcooked everything. So be sure to check out the recommended cooking times if youre a beginner.
The other thing to keep in mind is that the food cooks as the pot is building pressure and its also cooking as the pressure is released. So the cooking time is longer than whats set in the program.

Tips For The Perfect Dish
- Browning the meat adds a few minutes to the prep time, but it brings a lot of extra flavor to the pulled pork, so its worth it.
- Homemade spice rub is best, but you can use store bought in a pinch.
- Cutting the roast into a few larger pieces helps it to cook quickly and evenly.
- For an extra level of flavor, you can add up to a teaspoon of liquid smoke if you have it on hand.
- This recipe can also be made in a slow cooker. Coat the meat in spices and brown as directed, then cook for 8 hours on low with the broth and BBQ sauce. Shred the meat, add more BBQ sauce, then serve.

How To Reheat Instant Pot Pulled Pork
If the pulled pork has dried out, add a bit of the leftover cooking broth and reheat in the microwave for a couple of minutes.
You can also add a little bit of the cooking broth to the pulled pork and sauté it in a frying pan on the stovetop.

How To Make Instant Pot Pulled Pork
Making this pulled pork in Instant Pot recipe is a breeze.
Make the dry rub
Add the brown sugar and spices to a large bowl and mix together.
Prepare the pork
If you have a bone-in pork butt, trim away the pork meat and fat. Cut into four even-sized pieces.
If you have a boneless pork butt, cut the pork into four even-sized chunks.
Make sure to weigh your pork after trimming so you’ll know how to estimate Instant Pot pulled pork cooking time.
Coat the pork with the rub
Now add pork to the dry rub bowl and toss until well coated.
I usually do this with my hands. But you can do this with tongs if you dont want to get messy.
Brown the pork
Turn Instant Pot to Sauté setting. Add the olive oil until hot.
Add pork pieces to the Instant Pot and brown on all sides. You’ll need about 2 minutes for each side to get nice and brown.
Searing helps create a crispy, caramelized surface. This gives a nice texture to the pulled pork. It also adds a smoky flavor to the pulled pork recipe, making this an important step.
I make my slow cooker pulled pork without searing the meat beforehand and it’s very tasty. So, you could probably skip this step. But it only adds like 10 minutes to the prep time – and that delicious smoky flavor. So it’s worth it.
Once all the pieces of pork are browned, remove, and set the pork aside.
Deglaze the Instant Pot
Pressure cook the pork
Place the chunks of pork back into the Instant Pot. Pressure cook on High pressure for 60 minutes.

Use Your Instant Pot For The Easiest Bbq Pulled Pork
With the Instant Pot, its no longer an all-day affair to cook up a batch of ultra-tender saucy pulled pork. A lot of pulled pork recipes start with a dry rub or brine, with the option to mix in BBQ sauce after cooking, but not this one. To keep it easy while getting lots of rich, smoky-sweet flavor, the pork gets cooked directly in the sauce.
Start by cutting that big piece of pork into several smaller pieces, which will keep the cook time as short as possible and reward you with more tender meat. The cookers sauté function means this is a one-pot affair with no extra dirty dishes. Youll use it first to sear the pork, then again after the meat is cooked to quickly reduce the sauce for a more concentrated flavor.
Can You Freeze Pulled Pork
I mentioned this earlier so you already know you can freeze pulled pork. Freezing excess Instant Pot pulled pork makes for delicious future meals. It will last for up to 8 months in the freezer. Awesome, right??
As for how to freeze pulled pork, its super easy. All you have to do is
- transfer the pulled pork to freezer-safe meal prep containers or Ziploc or re-usable freezer-safe bags
- leave a little bit of space at the top of the container or freezer bag because pulled pork extends while frozen
- place the airtight containers or Ziploc bags in the freezer.

Should You Brown The Pork Before Putting It In The Instant Pot
Ok so its not a make it or break it matter, but personally, I feel like browning the pork before putting it in the instant pot really bumps up the flavor of the meat. So if you have the time, I say go ahead and do it!
However, if you are adding a completely frozen pork butt, then skip this step. It just doesnt come out right when its frozen.
Start With A Good Rub
Our pulled pork will be getting its flavor start by applying a rub. We use simple ingredients that include brown sugar, onion powder, garlic powder, paprika, ground mustard, salt, pepper and a dash of cayenne. Whisk the dry ingredients together in a large bowl and add the pieces of pork. Use your hands and toss it all together for a couple of minutes. Make sure that seasoning mixture is well incorporated into the meat.

Instant Pot Bbq Pork Shoulder Recipe
This pulled pork recipe is so easy to make, youll kick yourself for not trying it sooner! It doesnt matter if you use a bone-in pork shoulder or a boneless one, if its frozen or thawed. The method remains the same. The only note here is if using a frozen pork shoulder, the instant pot will take longer to come to temperature, extending the cooking time.
While this Instant Pot pork shoulder recipe is a BBQ one, you can easily change the spice mix to a Cajun spice mix, or Mexican fajita-style pulled pork!
Lets get started, Youll need:
- 1 3 lb Pork Shoulder
- 2 Tbsp Paprika
- 2 cups Chicken stock
Chefs Tips: For maximum flavour, mix all the spices together, dry rub the pork shoulder and let it marinate overnight. This will help infuse the spices into the meat itself and not just into the sauce.
If youre in a hurry though and need something to eat ASAP, just toss everything into the Instant Pot in one go!
Regardless of if you marinate the pork or not, place the pork shoulder in the Instant Pot, along with the spices, chicken stock, and molasses.
How To Cook Frozen Pork In The Pressure Cooker
Cooking frozen meat in the Instant Pot is very practical. I have a few recipes where I show in detail how to cook frozen pork tenderloin or frozen chicken breasts in the IP.
Simply follow the recipe card steps below, and add 5 minutes per pound of meat if cooked frozen. In addition, please note that it will take longer to come to pressure.

Why I Love My Instant Pot For Pork Roast
There are three things that I really love about cooking a pork roast in my Instant Pot .
The first is the sauté function. Using it creates a lovely, caramel-colored layer on the pork. Which means I dont have to pull out another pan and get it dirty. Love it!
After searing the roast, I remove it from the Instant Pot and put the trivet that was included to get the roast up out of the cooking liquid and off the bottom of the pot. I think it helps to maintain the color from the searing as well as ensuring that the bottom doesnt burn.
The second thing that I love is the fact that once the lid is locked on and cooking time is set, Im free to focus on something else.
Finally, the result is like a slow-braised, tender pork roast, but in the Instant Pot, it cooks in much less time.

What Type Of Pork Should I Use
You want to use a marbled piece of pork, you should be able to see the fat on it, extra-lean pork will taste dry especially if you crips it. Avoid lean pork chops that are typically the white meat of pork and youll want a fattier cut to ensure the pork remains juicy. and has more flavor the dark meat of pork is what youre looking to use. Youll be looking for something labeled pork shoulder or pork butt. Or like in my store its a combination of words that dont make sense and they call it a pork butt shoulder.
Instant Pot Carnitas Ingredients
- Boneless Pork Butt or Pork Shoulder: You can use a pork butt or pork shoulder that is between 3 and 5 pounds.
- Seasoning Blend: A combination of dried oregano, cumin, chili powder, salt and pepper.
- Orange Juice and Lime Juice: These make the cooking liquid that flavors the pork and allows the Instant Pot to pressurize. This is all of the liquid that you need to add to the pot, since the pork will also release a lot of juices as it cooks.
- Onion and Garlic: These add more flavor, and the chopped onion almost melts into the juices as it pressure cooks.

What Kind Of Bbq Sauce Do You Use For Pulled Pork
You can use your favorite store bought or homemade barbecue sauce. In the recipe card below, I combine store bought BBQ sauce with other ingredients to create my own pulled pork BBQ sauce. I also add a bit of broth to prevent the pressure cooker from showing a burn error. More about this error below.
Want To Maximize Flavor Try Brining Your Meat
Brining your pork shoulder overnight will not only lock in flavor, but it will ensure a really juicy and moist end product.
- 3 tablespoons of your dry rub mix
Brine your pork
In a big pot prepare the brine solution and add the pork shoulder to the brine, throw in a couple bay leaves, cover the pot and put in the fridge overnight. You can also place the brine solution and pork in a big ziploc bag. In the morning, take the meat out and pat it dry. Put the meat in your Instant Pot and start rubbing in the dry rub all over the meat.

Can I Use Frozen Pork
If you buy a piece of pork butt and you are not going to cook it right away, then freeze it. You can then easily use frozen pork to make pulled pork.
The nice thing when cooking it in an instant pot is that you do not have to thaw it out before cooking it which is great when you forget to take something out of the freezer for dinner.
Plus when the pork butt is frozen you can skip the searing step.
How Do You Make Instant Pot Pulled Pork
Start by cutting a piece of pork shoulder into 3-4 large chunks. Mix together a homemade spice blend to use on the pork. Heat a little oil in the Instant Pot, then brown the meat on all sides. You may need to work in batches. Coat the browned meat in the spice rub. Place chicken broth and BBQ sauce in the bottom of the pressure cooker, then whisk to combine the two. Place the pork back in the pot, then seal the pot. Cook the pork, then let the pressure release naturally for 15 minutes. Manually release any pressure thats left, then open the pot. Shred the meat with two forks. Add more BBQ sauce until you reach the desired flavor and consistency, then serve.

How Long To Cook Pork Roast In The Instant Pot
When you roast a pork butt in the oven, it takes about 40 minutes per pound. The Instant Pot is MUCH quicker.
In the Instant Pot, you should cook a pork butt for 15 minutes per pound. What does that mean? That means that you set the Instant Pot to pressure cook for 15 minutes per pound. If the roast is 3 pounds, you set it to pressure cook for 45 minutes.
The roast ends up being in the Instant Pot for longer than just those 45 minutes though. Before the pressure cooking starts, the Instant Pot spends time coming up to temperature. That can take as long as 10-15 minutes.
Then, after the pressure cooking time is up, the pressure needs to be released. I do what is called a natural release for 10 minutes. A natural release happens if, when your pressure cooking time has reached zero, you do nothing. Basically, the heater of your Instant Pot stops heating at that point, and then the pressure inside slowly dissipates.
I do the natural release for 10 minutes whenever cooking meat in the Instant Pot because a quicker release results in a drastic change of temperature that can make meat seize up and get tough.
So do the natural release for 10 minutes and then switch the valve to Venting and let the remaining pressure escape. You then open up the Instant Pot and take out the roast.
Instant Pot Pressure Cooker
I purchased my first Instant Pot in November 2015, and its been true love ever since. I only use my slow cooker now when we have large gatherings, and I need to keep something warm for serving. Really, Id like to just get rid of it, but it does come in handy for parties!
I have the Instant Pot 7 in 1 model, in both the 6 quart and the 8 quart sizes. My preference the 7 in 1 model over the 6 in 1 because of the yogurt function. I make Instant Pot Coconut Yogurt regularly, so that yogurt option is perfect for my family!
The 6 in 1 model Instant Pot does not have the yogurt making option.

Can I Double This Recipe
If you dont think that a 4-5 pound roast is a big enough piece for your needs, then feel free to get a bigger piece of pork butt, maybe even double the size as long as it fits into your instant pot.
Some instant pots are larger than others and thats what you would need for a bigger piece of Boston butt.
If you increase the size of the meat you will also logically have to increase the other ingredients to compensate. Just be sure if you add a bigger piece of meat that it does not go about the maximum fill line because you still need to have air space inside the pot.
