When you see a cookbook recipe, you will be super excited to see it takes 4 minutes. But, its not that simple.

Every recipe needs some time on the front end to come to pressure, as well as time to depressurize.

The time to come to high pressure completely depends on what is in your pot, and how full it is.

How To Cook With The Instant Pot

How you use your Instant Pot depends on what you’re cooking. But, many recipes — especially those involving meat — tend to follow this formula:

  • Set the Insant Pot to Saute mode. Add oil and brown your protein, like beef or chicken. Aromatics, like garlic and onion, are browned in this step, too.
  • Hit the Cancel button. Now tap Manual, followed by Pressure. Tap it again to go into High Pressure mode Use the plus and minus buttons to set the cook time.
  • Place the lid on the Instant Pot and lock it into place. You should hear a lovely little sound letting you know it’s locked.
  • Make sure the valve built into the lid is in the Sealing position.
  • When the Instant Pot builds enough pressure, the red button will pop up. Now the cook time will officially begin.
  • The above steps can vary quite a bit, depending on the recipe, but most of what I cook in my Instant Pot follows that sequence.

    Other Useful Buttons To Know

    • +/- Button To adjust cook time.
    • Saute Button Used for sauteing and browning ingredients before pressure cooking. And simmering, thickening and reducing liquids after.

    Never have the lid on when sauteing . It will cause the pot to pressurize eventually and is not necessary for sauteing.

    • Adjust Button Switches between Less, Normal and More to control the amount of heat during Saute mode.
    • Keep Warm/Cancel Button Once a cooking program is selected, the Auto Keep Warm function is on by default but it can be turned off by pressing this button again before you begin pressure cooking. Cancel button ends cooking program at any time.

    Even if you dont need to keep food warm, it is handy to leave this function on when you are not around during cooking. So, when you come back to the kitchen you know exactly when Instant Pot has finished cooking. Display will say L and number of minutes.

    • Pressure Level Button This button switches between Low and High pressure levels that is available on all Instant Pot models except Lux.
    • Delay Start Button Set the delayed time before a cooking program starts.

The Instant Pot makes a delicious pasta, in part because none of the starch is lost to the cooking water, and in part because the pressure helps the pasta and sauce to cook together. Its very easy, makes a super creamy pasta, and does it all in one pot, so theres less to clean up.

    But there are a few small things to get used to. The trick is that you should never stir the pasta once its in the pot. Stirring will cause the starches in the water to get tangled and the pasta will clump into a giant noodle that wont get cooked through. Instead, place the noodles on top of the sauce and cover with just enough water usually 4 cups of liquid for every pound of pasta so the noodles absorb it all and nothing is left to dilute the sauce.
