When you see a cookbook recipe, you will be super excited to see it takes 4 minutes. But, its not that simple.
Every recipe needs some time on the front end to come to pressure, as well as time to depressurize.
The time to come to high pressure completely depends on what is in your pot, and how full it is.
Something that is cut up into multiple pieces and is filled & frac13 is going to come to high pressure quicker than one solid item with the pot filled & frac23 .
Think about this much like an oven preheating. When you see a recipe that says bake for 20 minutes, the recipe didnt factor in the time it takes for the oven to preheat. As with Instant Pot recipes, you will usually see just the pressure cooking time, without the total time to come to pressure, and time to pressure release or venting .
My Sauce Or Stew Is Too Thin Can I Thicken It In The Instant Pot
You can reduce a sauce or stew on the Sauté setting after pressure cooking, but know that it only has one heat setting, and will boil quickly. Another option is to add a thickener, like cornstarch or a paste of butter and flour, after pressure cooking as well. When adding a thickener, be sure to set the pot to Sauté and whisk it evenly into the liquid, as it cooks.
How To Cook With The Instant Pot
How you use your Instant Pot depends on what you’re cooking. But, many recipes — especially those involving meat — tend to follow this formula:

Other Useful Buttons To Know
- +/- Button To adjust cook time.
- Saute Button Used for sauteing and browning ingredients before pressure cooking. And simmering, thickening and reducing liquids after.
Never have the lid on when sauteing . It will cause the pot to pressurize eventually and is not necessary for sauteing.
- Adjust Button Switches between Less, Normal and More to control the amount of heat during Saute mode.
- Keep Warm/Cancel Button Once a cooking program is selected, the Auto Keep Warm function is on by default but it can be turned off by pressing this button again before you begin pressure cooking. Cancel button ends cooking program at any time.
Even if you dont need to keep food warm, it is handy to leave this function on when you are not around during cooking. So, when you come back to the kitchen you know exactly when Instant Pot has finished cooking. Display will say L and number of minutes.
- Pressure Level Button This button switches between Low and High pressure levels that is available on all Instant Pot models except Lux.
- Delay Start Button Set the delayed time before a cooking program starts.

You can select Keep Warm cycle before you start cooking or after.
The Instant Pot Display Wont Turn On
Most display issues are often the direct result of a power problem. One quick way to try and fix your display is to make sure the power cord is fully plugged into your Instant Pot. Keep Warm/Cancel. Use this button to cancel a function or to turn off your Instant Pot.
Honestly, thats it! I recommend beginning with some easy, tried-and-true recipes before branching out into converting your old favorites. Since I write my recipes so they can be made in any electric pressure cooker, I rarely use the preset Instant Pot buttons.

Yesif you take the right precautions. The steam that immediately releases from the Instant Pot will be extremely hot. The Instant Pot User Manual warns to not place your hand or lean your face over the cooker while it is releasing steam. Its best to turn the valve with an object such as kitchen tongs or a wooden spoon to avoid any skin coming in contact with the hot steam. In order for pressure to build in a pressure cooker, there must be liquid, but not any liquid will do! You need to have thin liquid. Examples of thin liquids would be broth, wine, beer, juice, or water.
Keep in mind that sauce, like tomato sauce or BBQ sauce, is thicker, and will need to be thinned out in order to prevent a burn notice.

Can You Actually Make Pasta In The Instant Pot
Sounds wild but its true! The Instant Pot makes a delicious pasta, in part because none of the starch is lost to the cooking water, and in part because the pressure helps the pasta and sauce to cook together. Its very easy, makes a super creamy pasta, and does it all in one pot, so theres less to clean up.
But there are a few small things to get used to. The trick is that you should never stir the pasta once its in the pot. Stirring will cause the starches in the water to get tangled and the pasta will clump into a giant noodle that wont get cooked through. Instead, place the noodles on top of the sauce and cover with just enough water usually 4 cups of liquid for every pound of pasta so the noodles absorb it all and nothing is left to dilute the sauce.
How To Release Pressure
After the cooking time has elapsed you may wonder how the pressure is released.
You have two options, you can do a natural pressure release or a quick release of pressure.
- Natural Pressure Release is when the pressure is slowly released on its own. This is when you leave your Instant Pot alone and allow the float valve to float down on its own. It is best to use a natural pressure release for meats, recipes with high starch , and recipes with a high volume of liquid.
- Quick Release is when you manually turn the valve to “Vent” and allow the pressure that has been built up to release rapidly. This method is used for things like seafood or delicate vegetables.
Important Tip for using Quick Release on your Instant Pot: Use a long handle of a wooden spoon to manually turn the valve from seal to venting AND STAND BACK to prevent yourself from getting burned by the steam.
