Ingredients In Instant Pot Chicken And Rice:

  • Chicken thighs: I highly recommend chicken thighs, over chicken breasts, because I think they cook much better in the instant pot and are more tender and flavorful. If you want to substitute chicken breasts, cook on high pressure for 8 minutes with a 5 minute natural release.
  • Rice: I use regular long-grain white rice. . Be sure to rinse the rice before adding it to the instant pot to remove the starch, and help keep the rice from sticking to the bottom of the pot.
  • White wine: Ive used white wine in this recipe to deglaze the pan and add great flavor to the dish. The alcohol gets cooked out. If you dont want to use wine, just leave this step out and deglaze the pan when you add the chicken broth.

My family loved this Instant Pot chicken and wild rice meal. Its definitely gonna be a frequent Instant Pot dinner now. Using cooked chicken is what helps make this such a quick meal. I love to use rotisserie chicken here. Its always tender and flavorful.

This all begins by melting some butter on sauté mode. Then you add in what is known in French cooking as a mirepoix diced onion, carrots, and celery. You cook this for about 4 minutes, until the onions are tender. Next, you add in the rice and coat it with the butter. The rice comes from a package of Uncle Bens original long grain and wild rice. Once you coat the rice, its time to turn off the sauté mode.

Add in the cooked chicken, seasoning packet, and green beans next. Now its time to cover and cook. This just cooks for 5 minutes on high pressure. After that, wait for 5 minutes allowing the pressure to release naturally. Then release any remaining pressure manually. Give it a stir and its ready to eat.

Is there an alternative if I dont have a trivet? Im ordering one but would like to make this tonight. Can I up the broth to avoid burning or otherwise do something in lieu of the trivet?

  • Megan | 40 Aprons Teamsays

You should be able to place the chicken directly in the pot without a burn notice, yes. The trivet keeps the chicken up out of the broth so it steams rather than boils!

The cooked chicken does not match the recipe. You said just salt and pepper but it looks like theres some red pepper flakes and some green stuff on the chicken.

A Versatile Burrito Bowl In 20 Minutes

Just as with a traditional burrito, this recipe is super versatile. Dont skip making it because you dont have one of the ingredients on the list. Besides the salsa, theres a good chance anything on the ingredient list can be omitted or swapped for something else.

Vegetable broth or even water can be used in place of chicken broth, while pinto, white, or kidney beans can easily be used in place of black beans. Have a pack of boneless, skinless breasts already in the fridge? Go ahead and use that in place of chicken thighs. None of these swaps will affect the cook time or finished burrito bowls.

For a Faster Dinner, Embrace the Meanwhile

My go-to tactic for making dinner prep as efficient and speedy as possible is to embrace the meanwhile. This means that instead of prepping all the ingredients at the onset , you should work as you go. This is largely a dump-and-go recipe, but theres still some room to embrace the meanwhile for more efficient and faster prep. Get started by prepping the onion and garlic, and having the spices and broth ready. While the onion sautés and simmers, cut up the chicken and rinse and drain the black beans.

Tips For Using An Instant Pot:

First-time users: always read the users manual for your specific instant pot prior to starting since your machine may not operate or look exactly like ours.

    • Make sure the rim and rubber seal on your instant pot are clean for the seal to form properly.
    • Stir the rice together before turning on to avoid the burn notice.
    • Remember to set your lever to the stealing position for pressure to build.
    • When manually releasing pressure, wear an oven mitt and keep your face away from the hot steam vent.
    • I keep a paper towel ready to shield the vent in case it sputters liquid while venting/releasing pressure.
    • Always check the pressure indicator on your machine to ensure that the pressure has fully released prior to opening the lid.
    • Follow timing instructions precisely and set timers. With pressure cooking it easy to over-cook something if you forget about your pot.

Making Chicken and rice in Instant Pot is easy and convenient. No need for cleaning multiple pans or spending hours in the kitchen. Make it in the instant pot from start to finish in just 20 minutes.

Start with seasoning Chicken. Seasoning Chicken well and browning helps in developing flavour. I have used chicken thighs but you can also use chicken breast instead.

Next is to caramelize onion and a lot of garlic in butter, which again adds lots of flavours. You can use Olive oil instead of butter, but believe me, it will not be the same. So for once keep your worries about calories aside and use butter.

I have used a mix of herbs Oregano, thyme and parsley. But you can use any of your favourite herbs.

Using Chicken Stock instead of water makes the flavour robust. Use water or a mix of water and stock instead.

Instant Pot Chicken Breast And White Rice

The original recipe initially was for chicken breasts and white rice cooked together in the Instant Pot. After extensive testing, I found the right amount of cooking time to achieve fluffy rice and juicy chicken. After 5 minutes high-pressure and 10 minutes natural pressure release, the chicken is JUST cooked. It wont be dry but it shouldnt be pink at all, just white.

Its important to note that if your pin drops before the 10 minutes, the pot most likely didnt get to high pressure and the chicken might be undercooked. Double-check before you start that the sealing knob is in the sealing position, and no air or steam comes out of the knob.
