Instant Pot Chicken Bone Broth That Gels Every Time

One of the best ways to avoid waste is to save your bones throughout the week or month. If you grill a T-bone steak, cook a Rib eye steak, or any other beef recipe that contains bones, save them in a freezer-friendly bag and label it. You can even do the same for veggie scraps! Keep them frozen and toss them into the pot.

  • Beef bones: I am using organic beef bones from the beef shank. You get the best bone broth from using the bones that you usually throw away!
  • Oil: Avocado oil is my favorites for this, but you can use whatever oil you have on hand to brown the beef.
  • Aromatics & veggies: Onion cut in half with the skin on, celery chunks, carrot chunks, and cloves of garlic. I say chunks because were using these for flavor and not for eating, so they can be roughly chopped.
  • Seasoning: McCormick Montreal spice, bay leaves, and salt to taste.

There are so many ways to use this yummy and versatile broth!

You can really use it to replace any broth youd need in any recipe. Here are just a few ideas to get you started:

  • Have a cup on its own! As I said, we use it in my home as an immune-boosting drink to fight off the sniffles. When the kids were toddlers, I added a little into their puréed food.
  • Use it as a flavorful base for gravies, soups, stews, and chili.
  • When a casserole calls for broth, use this one!
  • Replace the water with beef bone broth when youre cooking or steaming veggies, cooking rice, or making mashed potatoes.

Time To Make Instant Pot Bone Broth

Makes 8 cups

Heres how to make the broth:

Dump the leeks and carrots in the pressure cooker or Instant Pot , and toss in your bones .

Then, cover with water and add vinegar.

Add the fish sauce and toss in the dried shiitake mushrooms . Then, cover and lock the lid, and program to the Instant Pot to cook under high pressure for 30-50 minutes . If Im not in a rush, I set my Instant Pot on high pressure for 2 hoursthe broth only gets better with more time.

If youre using a stovetop pressure cooker, place the pot on a burner set on high heat. Once the indicator pops up showing that the contents of the pot have reached high pressure, immediately decrease the temperature to the lowest possible setting to maintain high pressure .

Set the timer for 30 minutes .

When the broth is done cooking in the Instant Pot or stovetop pressure cooker, let the pressure release naturally .

Remove the lid, skim of the scum , and strain the broth. Taste and adjust for seasoning. I keep it on the blander side if I will be cooking with it.

I dont parboil the bones to decrease the scum because Im lazy. Plus, there really isnt that much left after you strain it.

Faster and more flavorful than other methods. Really.

Can You Freeze Liquid Broth

Yes. If you arent going to use all of this in the next few days then you will want to store it for up to 3 months in the freezer instead. You can either pour it into an ice cube tray if you only want to use small amounts at a time later. If using more use pint size freezer bags instead.

Either way make sure the liquid is completely cooled and you have removed the layer of fat on the top first. If not it is more likely that it may grow bacteria. If you love batch cooking you could double this if you have a 10 quart pot. Mine is only 6 quarts so it barely fits what is listed below.

Can You Over Cook Bone Broth

Technically, yes you can cook bone broth for too long. If you go past the 24 hour mark your broth might wind up turning out bitter or getting a weird flavor.

I normally cook my slow cooker bone broth for about 18-20 hours, and have never had an issue with it, but I wouldnt cook it for any longer!

How To Choose Vegetables For Your Bone Broth

After youve let your turkey carcass soak in acidulated water in your stockpot for an hour, youll want to:

  • Bring the contents of your stockpot up to a boil on your stove top.
  • Skim off the foam or scum that may accumulate at the top.
  • Turn your stove top heat down to low.
  • Add your vegetables and other aromatics.
  • Let your bone broth simmer for six hours before straining and decanting it.
  • Choose vegetables for your bone broth that are getting past their prime. In my recipe video, I add rough chopped carrots, celery, and onions. Be sure to keep the onion skins on since that provides additional nutrition. I also add peppercorns and bay leaves for flavor.

    Note how my roast turkey bone broth looks as it is simmering in the following image. You want it to be at 180°F with light bubbles rising to the top. I describe it as a bloop, bloop. Thats the magical sight and sound to make sure your bone broth is warm enough to cook the ingredients but not too hot that the gelatin will break down.

    After your bone broth has simmered for six hours, youll want to strain out the solids and decant it, as I show you in the full recipe video and describe in the printable recipe below. I like to store my roast turkey bone broth in French jelly jars with plastic lids.

    The lids are especially handy in case I freeze my bone broth and the contents expands. If I didnt have enough headspace in the jar, the expanded frozen turkey bone broth would pop off my lid rather than risk breaking the glass.

    There other health benefits to using marrow too. The middle is actually a superfood so even if you dont eat it directly, the nutrients will leach into the broth itself. Small bits will remain in it, but you could spoon all of it into a dish and serve it separately as well. Some love to spread it on toast.

    Alternatively before you strain it like you see here you can scoop it out and put it in the pot below. After you drain the liquid, use an immersion blender to break it up so it will be included in the beef broth itself when stored.

    How To Make Chicken Stew In Instant Pot

    • Season and sear the chicken. Season the chicken thighs with salt and pepper. Set it aside. Add oil to the Instant pot and press SAUTE. Add the chicken thighs skin side down and sear them both until the chicken is slightly browned.
    • Deglaze and add honey mustard sauce. Stir in the chicken broth and deglaze the bottom of the pot. Add in the whole grain mustard, honey, Dijon mustard, and garlic. Turn off the SAUTE settings.
    • Add veggies and pressure cook. Add the halved potatoes, carrots, and celery. Check the seasoning and cover the Instant pot with a lid. Place the valve in the sealing position. Pressure cook the chicken on HIGH for 8 minutes and once the cycle is complete QUICK RELEASE the valve.

    Best Bones For Bone Broth

    • The best beef bones to use are knuckles, joints, feet, and marrow bones.
    • For added flavor incorporate meaty bones like oxtail, shank, and short ribs.
    • Chicken feet contain loads of gelatin and are less expensive than other gelatin-rich bones.
    • The bones of younger animals contain a lot of cartilage, as it is this cartilage that will eventually turn to bone as the animal ages. For this reason, veal bones are particularly prized for making stock.
    • If you cant get your hands on any marrow bones, 1-2 whole roasted chicken carcasses will also work. Keep in mind, however, that your broth will contain less collagen.

    What bones did I use in this recipe? For this Instant Pot Bone Broth recipe, I added a mix of collagen-rich beef bones as well as chicken feet. If youre unsure at all, ask your local butcher for the best broth bones and then request that he or she cut them in half.

    Blanch And Then Roast Or Cook The Bones

    Instant Pot Bone Broth

    The key to getting the best flavor from any bones from any animal is to make sure they are roasted or cooked first. If you prefer, you can also blanch your bones to remove impurities that can make the taste go off by submerging them in boiling water for 10-15 minutes and then roasting. Ive done the blanching step a handful of times, and Ive noticed with chicken, the difference is negligible, and not worth the extra time. With beef bones, however, I always blanch my bones before roastingit really does result in a tastier broth. Ive also noticed the better quality the bones , the less important the blanching step is, but thats just my personal experience. I highly recommend trying it out both ways to see what works best for you.

    Either way, you then want to roast your bones. If you are using bones leftover from cooking a whole chicken or making a roast, you can skip this step, since the bones were technically already roasted during your initial cooking process, but for any raw or blanched bones, I highly recommend a trip in the oven to get better flavor. I roast bones at 425°F for 25-30 minutes, or until quite brownedits really hard to over-roast bone broth bones.
