I decided to go with country style pork ribs because they are so very meaty!
I do like baby back ribs as well, but Iâve definitely bought them, then been disappointed at the measly amount of meat I got out of it.
Using country style ribs ensures that everybody leaves the table satisfied!
Depending on your grocery store, sometimes these ribs are sold bone in, and sometimes bone out. Mine were bone out. But, either one will work just fine!

Barbecue ribs are a finger-licking good, easy summer meal. If you usually cook your ribs low and slow with my slow cooker ribs or in the oven, you are going to go crazy for this Instant Pot ribs recipe!
Cooking pork ribs in your Instant Pot is not only much faster than cooking them in the oven, but it also makes the best tender, meaty ribs. Plus, you wont heat up your house by having your oven on for hours. Nobody wants a scorching kitchen on a hot summer day!
These Instant Pot ribs are pretty perfect as is, and even better when you serve them with your favorite BBQ sauce. Try my homemade BBQ sauce recipe, or use your favorite store-bought brand. I try to look for one with a clean ingredient list, but I will admit that a drizzle of Sweet Baby Rays is a real treat with this baby back ribs recipe.
Prepare & Season Baby Back Ribs
First, remove the membrane from the back of the ribs with a paper towel.
How to Remove the Membrane from Baby Back Ribs:
- Locate the membrane on either end of the rack .
- Slide a butter knife in between the membrane and bones .
- Pull the membrane and tear it off with a paper towel .
Then, season the Baby Back Ribs with a generous amount of kosher salt and ground black pepper.

Instant Pot Rack Of Ribs
Theres a pretty good chance that I used to be the worlds worst cook when it came to a rack of ribs. I could never get the flavor or the tenderness I wanted. Since getting my Instant Pot, that has all changed! Now, I can throw down with the best of them. Im talking a flavorful, tender, pull right off the bone, rack of ribs. Not to mention, mine are done in a fraction of the time. These Instant Pot Rack of Ribs are the best ribs Ive ever made at home.
Most of the time when I think about cooking ribs, what immediately comes to mind is marinating them overnight, firing up the grill, and slow cooking them on the grill. I would never have imagined I could cook them in my Instant Pot. But I have to say, these are the most tender ribs Ive ever made myself.
If you are the type who prefers to slow cook them on the grill, chances are you dont do that in the winter months. Right? So this is a great alternative when you cant fire up the grill or smoker. Me? This is now simply my go-to method no matter what time of year.
How Long Do I Cook Baby Back Ribs In The Pressure Cooker
As a rule of thumb, when making meat in the pressure cooker, if you release the pressure and the meat is too tough for your taste, then you need to increase the cook time. If your meat is drier than you like, decrease the cook time.
Use an instant-read thermometer to verify your baby back ribs have an internal temp of at least 145°F in the thickest part of the ribs after cooking.
Ive found that 15 minutes at High Pressure leads to ribs that are tender yet they still have a bit of bite and hold their shape when grilling.
If you want the ribs more fall off the bone tender, cook them another longer Id start with 5 minutes and go from there.

How To Cook Instant Pot Ribs From Frozen
One of the best things about the Instant Pot is that you can safely cook meat from frozen! To cook frozen baby back ribs in your Instant Pot, use a pressure cook time of 35 minutes plus a 15 minute natural pressure release.
The rack of ribs will have to already be cut in half so that it will fit in the Instant Pot, since you wont be able to curve a frozen rack of ribs to make it fit. If you have multiple slabs of ribs that are frozen together in a big mass, youll need to thaw them before cooking. Meat wont cook evenly in your pressure cooker if its frozen in one big piece.
Instant Pot Ribs: Dry Vs Wet Rubs
A wet rub is the same base mix of seasonings as a dry rub, only its supplemented by liquid like apple juice, vinegar, oil, liquid smoke, etc. to create a thick paste. For an Instant Pot, I like to use a sort of hybrid of the two:
First, add all of the liquid ingredients to a gallon sized ziploc bag. Then, add the dry seasonings to the bag, mix, then add the ribs to the bag and squish them to mix. This will make a sort of marinade that creates amazing flavor!
I have a delicious recipe for a homemade rib rub included in this recipe card, but feel free to use a premade dry rub! Add the liquid ingredients from the recipe to the marinating bag first, then sprinkle the ribs generally with your dry rub of choice.
If youre short on time, skip the marinade and just add the liquid ingredients directly into the Instant Pot, placing your dry rubbed ribs on top of the trivet.
Whether or not you decide to marinate the ribs is up to you. They can be marinated in a plastic bag for up to two days before cooking, or they can be cooked immediately. Ive found that the ribs that have been marinated have slightly more flavor, but Ive done them both ways and they are both fantastic.

Can I Finish The Ribs On The Grill
Yes, you can! In fact, finishing them on the grill is a great option when you dont want to heat up the oven, if the oven is already in use, or if you want to add a smoky flavor to them. We love to finish these Instant Pot pork ribs on our Traeger wood-fired pellet grill because they taste like youve been tending the grill all day. And honestly, if you didnt tell them that you didnt, no one would ever know.
How Long Do You Grill Ribs At 300 Degrees
Season liberally with the secret sweet rub and prepare your grill for indirect grilling. The target temperature on your grill is 300 degrees F. Use fruit woods like apple, peach, cherry, or hardwoods like hickory or oak. Place the ribs on the grill, close the lid and cook for 2 1/2 hours at 300 degrees.

Easy Instant Pot Ribs Recipe
When it comes to summer barbecues, I am always excited for BBQ Pork Ribs, because they are just among the best thing on this Earth. You see, I am a pork and beef girl at heart, and I just cant say no to a delicious rack of ribs.
These homemade pressure-cooker ribs are so good, I honestly dont think I will ever cook ribs any other way. They fall off the bone tender, meaty, and finger-licking good. Also, because they are cooked much faster under pressure, I really doubt there is any other better and quicker way to cook them.
They taste like they have been slowly cooked and smoked at a fancy North Carolina restaurant. Making them in the pressure cooker will save you so much time, as you only have to cook the ribs for 40 minutes. Covered in a sweet, spicy and flavorful homemade rub, and coated in a hickory brown sugar barbecue sauce, you will lick your fingers clean!
What Is The Membrane On Ribs
Theres a thin layer of membrane on the back of the ribs. And its really chewy tough skin and very unappetizing after its cooked.
- To remove this membrane, starting at one end of the rib rack, separate the skin from the meat using a sharp pairing knife. And then pull it with your hands all the way to the other end.
This will ensure you wont sink your teeth into tough chewy skin when youre ready to enjoy your ribs!
TIP: If the skin slips off easily, use a paper towel to hold the skin.

Can I Skip The Alcohol
If youre worried about the alcohol content, you need not be.
Since the alcohol in this recipe is being used to deglaze, it does evaporate a lot. However, if you prefer the alcohol to be completely gone, cook it a little longer before adding the other liquids. You can also add less burbon.
I have also had readers who substituted the bourbon with wine , and even coffee.
These pressure cooker short ribs are braised in my own homemade beef and chicken stock, but you can braise them in a good quality beef stock instead too. These instant pot short ribs are cooked to perfection in a slightly sweet and slightly spicy base. I added cayenne pepper and paprika to give these short ribs a little spicy kick. Brown Ribs Under The Broiler
I know this is an Instant Pot recipe, but dont skip this last step as it is critical for the best Instant Pot ribs! When you take your ribs out of the Instant Pot, put them on a foil-lined baking sheet. Brush barbecue sauce over the ribs and put them under the broiler for a few minutes. Broiling the ribs in the oven allows them to brown and starts to caramelize the BBQ sauce > more flavor!
Easiest Instant Pot Baby Back Ribs

What Do You Do If Instant Pot Ribs Are Tough
This recipe was designed for small baby back ribs. But sometimes even baby back ribs have more meat on them than others. If theyre on the large side or thick, they might come out of the pressure cooker tough.
First, dont panic. They simply need more time to cook.
For tough ribs, place the lid back on the pot. If they seem almost tender but not quite done, program the cooking cycle for 5 minutes. And, again, allow for a natural release.
For ribs that are very tough, program the cooking cycle for 10-12 minutes. When the cooking cycle completes, allow the pressure cooker to release pressure naturally.
What Do You Need To Make Baby Back Ribs In The Instant Pot
You dont need much. Youll need a small white onion and a bottle of your favorite barbecue sauce. We love Head Country in the original flavor. Its always our go-to bbq sauce for our barbecue dinners.
Youll also need the trivet for your Instant Pot. I like the trivet from this Instant Pot accessory set I ordered.
Add the trivet to the bottom of the instant pot and then add the water. Next, youll wrap the ribs circularly around the instant pot. Our 8 qt one will fit up to two racks with one rack of ribs in the middle.
Then, just toss in the chopped onion. It doesnt matter where it lands.
