Dont over-mix Or stir too much because that will break up the chicken and mushrooms.

Dont mix in the cream of mushroom soup Until after pressure is released, because it can stick to the bottom of the pot and lead to a burn notice.

Use nonstick pot in pressure cooker. They sell those separately online and are well worth the money. I really recommend it, because it is less likely that your food will burn and stick to the bottom of the pan, which consequently makes for a faster, easier clean-up.

Broth vs. Water You can use either, but I highly recommend using broth for added flavor.

What mushrooms to use? Use either white mushrooms or Cremini mushrooms, but make sure they are washed and sliced.

Whole chicken breast vs. Chicken cubes Either will work great for this recipe.

What cut of chicken to use? You can use various cuts, but thighs, drumsticks and breasts work best.

Use unsalted butterand low sodium cream of mushroom soup and low sodium broth- Because it avoids the dish from tasting overly salty.

Brown chicken first This is important because it gives the chicken a better texture and flavor for this dish as opposed to a more soft, watery texture that falls apart.

For firmer crispier mushrooms Sauté and then remove them and keep aside. Mix them in at the end.

Add more Italian seasoning For a more strong Italian base flavor.

Use full fat cream of mushroom soup- For creamiest, richest end result.

How to make sauce thinner? Mix in some water or broth.

  • 8 ounces cremini or baby portobello mushrooms, sliced or cut in half
  • salt & pepper to taste

Season the beef with the salt and black pepper. Heat the Instant Pot until using the Saute function when the Instant Pot indicates Hot, add the oil and wait until it begins to shimmer. Add the seasoned beef and cook until well browned on all sides. Beef may need to be moved around a bit after the initial sear to brown all over due to the doming of the Instant Pot bottom. Remove beef and set aside.

Add the soup, soup mix, wine, and garlic to the Instant Pot, gently scraping the bottom to incorporate any fond, making sure to get all of the fond off the bottom. Stir in the carrots, potatoes, and celery. Top with the thyme and bay leaves. Top with the beef and any juices. Cover, seal and set pressure cooker to Manual, adjust to high and adjust time to 45 minutes. When finished, allow the pressure cooker to go to Keep Warm for 20 minutes then release any remaining pressure manually.

Remove the beef & vegetables from the cooker, cover and keep warm. Remove and discard the bay leaves and thyme. Set Instant Pot back to Saute.

Stir the flour and water in a small bowl until the mixture is smooth. Stir the flour mixture and mushrooms into the juices in the cooker. Saute, stirring often, until the mixture boils and thickens and the mushrooms are tender. Taste and adjust seasonings. Serve with the beef and vegetables.

Adding vegetables to this chicken recipe gives it great flavor, texture, and the more I include them in our dinners the more my kids like them. Of course you can omit if you wish.

Seasoned with just some salt and black pepper, its so easy to throw together. I use frozen vegetables to make things easier.

Now I generally use boneless skinless chicken breasts diced into bite size pieces. Its the best way for this version, or our Instant Pot teriyaki chicken and rice dish.

If I find chicken thighs on sale I would use those instead. I find that thighs have more flavor and are more tender than the latter.

  • I get lazy though and if bone-in is all I can find I will opt for whatever is boneless and a decent price.

Can You Freeze This

Yes! Because the dairy ingredients are all mixed in with the other ingredients, you can safely store this for up to 4-6 months in the freezer.

Be sure to thoroughly cool your dish before you store it though! Any extra heat will lead to condensation, which will change the texture of your rice over time.

  • In the Instant Pot add the canned soup, water, and chicken breasts. The Chicken can be thawed or frozen. The more frozen the chicken the longer the Instant Pot takes to get up to pressure. The cooking process does not start until it is at pressure and the lid can no longer move.
  • Put the lid on, set it to seal and set the timer for 15 minutes. Allow releasing of the pressure naturally, about another 10 minutes until the lid can be removed.
  • Next: Put the rice, water, salt & oil in a smaller pressure cooker set to the rice setting (or high pressure for 4 minutes. If you only have one Instant Pot no problem, just cook your rice on the stovetop like regular.
  • After the 10 minutes natural release, give the chicken a stir and serve over rice.
