The flavors of Mississippi are are zesty and bright from the ranch seasoning. Pepperoncini adds a bit of heat, and the liquid from the jar adds brine and acid. The ghee or butter is the final element that adds lush, rich flavor.

Mississippi chicken is fall apart tender, and its well balanced, and hearty without being super heavy thanks to healthy and clean ingredients suitable for Weight Watchers and Keto ways of eating.

The whole house smells marvelous while it cooks, and you can serve your Mississippi Chicken with any sides you enjoy. Serve it on crusty rolls, with some quick air fryer fries or any easy, healthy vegetables you enjoy.

Pressure Cooker Mississippi Chicken

You can use a Mealthy, Crockpot Express or as an easy Ninja Foodi recipe as well. They all have the high pressure cook function and a steam valve that can be naturally released. If you are looking for a new family favorite meal that is quick and easy to throw together, this is it yall.

  • All you do is cut chicken into large chunks so it can break down quicker for shredding.
  • Put the chicken into the pot with all other ingredients on top.
  • Close lid and set steam valve to sealing position. Set to high pressure for 9 minutes with a complete natural release. Do not touch steam valve to release for 15 minutes.
  • Open pot, shred chicken, stir all ingredients together and serve on slider buns with a slice of cheese or over mashed potatoes.
  • You can use the drippings to mix with another packet au jus for a thicker sauce to drizzle over the top too. Cook time is accurate for quartered boneless breasts. If using more than 2 lbs you may want to increase a bit.

    Want to change it up? Use dark meat instead of white some time. It is kinda my favorite if I find boneless on sale because they have more flavor and are even more tender.

    Can you save shredded chicken?

    Of course. You want to keep it moist so keep some of that liquid you cooked it in. Wait until your meat is room temperature. Then portion it out into airtight containers or freezer bags. Pour 1/4 cup of broth or your sauce into the container too. Remove air and refrigerate. Reheat in microwave for about a minute.

    You can serve this as is as a keto low carb meal, on buns as sliders or on top of a bed of rice. This is a very high protein meal that can be made lower in fat with the omission of the butter . If you wanted it creamier you could stir in some sour cream and cheese.

    First, place your roast in a small roasting pan or a heavy-based dutch oven. Add all of your ingredients as directed in the recipe box below, cover with a lid or a sheet of foil and bake in the oven set at a 325°F. Let cook for about 3-4 hours. Its ready when it falls apart with a fork. Check on your roast halfway through cooking time and add in 1 cup of beef broth if needed.

    How To Make Crockpot Mississippi Chicken

  • Fill the Slow Cooker: Start by adding the chicken to the crock pot insert. Sprinkle the au jus mix and ranch seasoning on top of the chicken, and top with sliced butter and pepperoncini.
  • Cook: Cook on low for 3 hours, or on high for 1.5 or 2 hours. When the chicken is ready, check for doneness by inserting the thermometer in the center of the chicken, and the internal temperature of the chicken should read 165°F or 75°C.
  • Shred: Let the chicken rest for 5 minutes, then shred it while its still warm using a hand mixer, two forks, or your hands.
  • How To Make Instant Pot Mississippi Chicken:

    Put the chicken breasts in the instant pot and sprinkle the ranch seasoning mix on top of the chicken. This is what makes it delicious!

    Put the stick of button on top then add the peppercini peppers with juice.

    That is it! Let the pressure cooker do the work and you will have dinner ready in about 30 minutes!

    Shred the chicken once cooked. This is really easy because the chicken is so tender.

    Top with a little provolone cheese if you like. We love to add this to our rolls. Yum! Yum!

    You might be well familiar with the Mississippi pot roast, which is usually made with chuck beef but in this recipe, we are using chicken instead of red meat. This dish showcases how the rich Mississippi roast gravy pairs just as well with white poultry meat.

    Chicken breasts are cooked in the sauce made with au just gravy mix, ranch dressing seasoning, lots of butter and pepperoncini peppers. This might sound like a strange combination of ingredients but it works and is absolutely delicious with lots of savory, umami flavors and a touch of acidity from the peppers to cut through the richness of meat and butter.

    Chicken is succulent and tender, shredded after cooking and drenched in the thickened gravy to absorb as much flavor as possible.

    I have made Robins version in my slow cooker but we like chicken more than red meat so I thought I would give it a try with chicken. After a few tries we have a winner!! And this is my kids favorite right now!! We serve it on soft buttery rolls with a little lettuce on top and it just melts in your mouth!!

    In the winter I think Ill make it and serve it over rice for a more hearty, warm dish.

    Instant Pot Mississippi chicken should be stored in the refrigerator in an airtight container for 2 to 3 days. Anything after that, it should be frozen. It will freeze well – the peppers may lose some of their crunch when they thaw but the rest of the meal should stay the same. I recommend that you freeze it separately from the rice or potatoes that you plan on serving it with.

    How Do You Store Leftovers

    I love that this family favorite dish is even better the next day when flavors have had more time to develop. It will be great for quick meals for anyone coming and going through the kitchen.

    I recommend just storing it in the pot covered in the refrigerator but any airtight container will work.

    To reheat in the Instant Pot, simply turn the pot onto saute and stir until hot making sure not to let it burn. You can also reheat in the microwave easily.

    To Make This A Mississippi Chicken Crock Pot Meal

    If you dont have an instant pot, this recipe is just as easy in the crock pot! Itll take a while longer, so this is a perfect recipe to start in the morning if youre aiming for this to be a dinner time meal.

    Add all your ingredients to the crock pot in the same manner as for the instant pot, with the exception of the chicken broth. No liquid is needed for crock pot cooking . Put the lid on and cook on high for 4-5 hours or low for 6-7 hours.

    Because there is no extra liquid being added, the broth that develops during the cooking time is much richer and the flavor is more intensified in the crock pot vs the instant pot.

    You will find the full recipe with ingredients and nutritional breakdown in the recipe card below. Here are some handy step-by-step photos for how to make Mississippi chicken in the Instant Pot. You can use a 6-quart or 8-quart Instant Pot for this dish.

    Step 1. Cut the chicken breasts into 2-3 pieces, especially around the thicker part of the breast.

    Step 2. Add 1 cup water, au jus gravy and ranch seasonings to the pot and stir. Place the chicken pieces in the liquid and stir a little.

    Step 3. Add cubed butter and pepperoncini peppers on top. Secure the lid and lock it in place.

    Step 4. Set to Pressure Cook on HIGH pressure for 10 minutes.

    Step 5. Once the timer is done, allow natural pressure release for 5 minutes and then do a Quick Release.

    Step 6. Remove the chicken from the pot but keep the cooking liquid. Once the chicken is cooled, shred it into strips.

    Step 7. Make a slurry to thicken the liquid. Add 2 tablespoons of all-purpose flour or gluten-free flour to a bowl. Add 2-3 tablespoons of water and stir through, then add 2-3 more tablespoons either of water or the cooking liquid from the top. Turn the Instant Pot on Saute and let the cooking broth heat up again. Pour in and stir the thick slurry into the broth, it will thicken into a lush gravy.

    Step 8. Return the shredded chicken to the gravy and stir.

    Instant Pot Mississippi Chicken Frozen

    I really have used both dark or white meat for this, same thing goes with our crack chicken pasta dish. I used to always use breasts but really prefer the other. It has more flavor, is typically cheaper and more tender than anything elese.

    If you need to begin with frozen chicken in Instant Pot you could. I would increase the cook time by 2 minutes for that. Just note that there will be a bit more juices at the bottom if you start with frozen meat.

    • Use Chicken Thighs: You can use breasts if you are in a pinch, but if you do, be sure to add butter to the pot. I prefer the thighs because it comes out so moist and tender.
    • Trim the fat from your thighs. You are going to shred the chicken, so you dont want to be biting into fat. Trim it before shredding or before cooking.
    • Make sure your lid is sealed tight. Check the rubber ring is on properly. If steam is coming out from the sides, shut the pot off, remove the lid, adjust the ring, and replace the lid.
    • To help your pot come to pressure faster you can turn the pot on to Saute while adding the ingredients, just be sure to put your liquid in first so you dont burn anything onto the bottom of the pot.
    • Let the instant pot naturally release for a little while before quick releasing as this will give you more tender chicken.
    • Use more or less pepperoncini depending on how spicy you like it.

    To make this low-carb, use the lowest carb dry mixes you can find. Or even better, you can make your own homemade ranch dressing mix or au jus mix.

    Equipment: just your instant pot!

    Ingredients: 2-4 lbs of bone-in chicken pieces, au jus gravy mix, ranch dressing mix, butter, and a jar of pepperoncini peppers.

    Which cuts of chicken should I use?

    I prefer legs & thigh quarters, but if you like breast meat, go with that instead. Or use a combo of breast and leg quarters for a good mix of light and dark meats. Some people prefer boneless- I havent tried this particular recipe with boneless meat but give it a try if you like. I have made this with a whole chicken as well, but the results werent as flavorful as using smaller chicken cuts.

    You Need A Pressure Cooker For This Instant Pot Chicken

    I am using an 8 quart Instant pot but you can use a 6 quart. I personally have an Instant Pot and so far I am loving it. You can find the Instant pot on sale here. Its really changed dinner time around here.
