Ingredient Notes & Substitutions

In this pot roast recipe, simple ingredients come together to make a meal thats flavorful and satisfying.

  • Beef Chuck Roast: The best kind of roast to use for pot roast is a boneless beef chuck roast. The marbling in a chuck roast will make your pot roast extra tender and juicy.
  • Salt & Pepper: To season the beef roast.
  • Olive Oil: For browning the meat and sautéing the onion.
  • Onion & Garlic: A yellow onion and fresh garlic bring delicious flavor to the pot roast.
  • Tomato Paste: Adds savory flavor and thickens the gravy up just a bit.
  • Worcestershire Sauce: Adds umami flavor and brings out the beef flavor. You can substitute balsamic vinegar if you prefer.
  • Beef Broth: The broth provides the liquid needed to help the pot come to pressure. It also forms the base for the gravy. I recommend using low sodium beef broth so that you can better control the amount of salt in the finished dish.
  • Thyme: I season this pot roast with thyme because it complements the beef flavor. You can use fresh thyme or dried thyme.
  • Carrots & Potatoes: The classic vegetables for pot roast, carrots and baby potatoes make this meal hearty and comforting.
  • Cornstarch & Water: To make a cornstarch slurry, which is used to thicken the gravy after the roast cooks.

When the drippings and broth start to simmer, whisk in the cornstarch mixture a little at a time until it becomes a gravy consistency. Simmer about 3 minutes adding more beef broth to thin if needed. Generally, if your slow cooker meat, soup, or stew recipe calls for 8 hours on the low setting or about 4 hours on the high setting, it should be fully cooked in about 25 to 30 minutes in the Instant Pot. For chicken or turkey, use the 15-minute poultry button.

While volume doesn’t matter, density does. Roasts and large, thick pieces of meat will take longer, and a baking dish filled to a 3-inch depth will take longer to cook than a baking dish filled to a 2-inch depth. Cut large roasts into smaller pieces for faster cooking.

Frozen meat can be cooked in the pressure cooker as well, but you will need to add about 10 minutes to the total cooking time. If the meat doesn’t look done after the pressure is released, put the lid back on and cook it at high pressure for another 5 to 10 minutes.

Slow Cook in the Instant Pot

Everyone needs a recipe like this in their back pocket. Its a perfect Sunday dinner that brings me back to childhood. If you didnt get your slow cooker started early enough dont worry you can make pot roast in your Instant Pot. Its definitely not an instant recipe but you can have fall apart roast within about 2 hours. Thats a lot quicker than 10 hours in the slow cooker.

Lets talk about the gravy. I decided to use a flour and butter roux instead of cornstarch and it was the right choice. The gravy was creamy and delicious and I wanted to lick my plate. Just make sure to salt and pepper your gravy a little before serving. It makes the difference between an okay gravy and an amazing gravy.

For this Instant Pot pot roast I pressure cooked the roast for 60 minutes and then used a quick release so I could add in the vegetables. Then I pressure cooked for 5 more minutes and used a natural pressure release. Finishing off the roast with natural pressure release is of the utmost importance. If you quick release the roast it will be like a door stop. Give yourself plenty of time for a natural pressure release. Mine took about 30 minutes. Yes its hard to do because your house will smell so good and youll just want to eat right away but try your hardest to hold off!

Why I Love Using The Instant Pot

If you havent jumped on the Instant Pot train yet YOU NEED TO! It is one of the most convenient kitchen appliances I have ever owned. This Instant Pot pot roast recipe is just one of the MANY Instant Pot recipes that I have incorporated into my regular meal rotations. Here are our top three reasons why we love our Instant Pots:

  • Its EASY. With the instant pot, you can sear the roast and saute the onions AND cook it ALL in the same pot. You dont have to dirty 3 different pans to do it. Even a slow cooker cant do that for you. Did I mention cleanup is a snap? It is. SO easy.
  • Its FAST. Beginning to end, we are talking around 2 hours. TOTAL. That is literally a quarter of the time it takes to make.
  • Its DELICIOUS. Honestly, I think this pot roast turns out just as good, if not better, than most slow cooker pot roast recipes I have tried. It is full of flavor and perfectly tender and easy to shred.
