Many Instant Pot users almost always use manual settings. While Smart Program buttons are handy, cooking instructions can vary for different types of rice, smaller or larger beans, and soup with or without meat. With manual settings, you have more control over the time and pressure level. Here is how to use the Instant Pot with manual pressure cooker settings.

Step 1. Star the Instant Pot as mentioned above.

Step 2. Add food, seasoning and liquid to the pot. The liquid can be cold or hot hotter liquids take less time to heat up so the Instant Pot comes to pressure quicker. Stir if needed.

On the more advanced models of the Instant Pot, the vent will automatically seal when the cooking process begins. On the Duo Nova the quick release button should be popped up and not pressed down.

Dont Forget To Add Liquid Before Cooking

Since your Instant Pot works by using steam to create pressure, youll need to add at least one cup of liquid to your Instant Pot for any meal you cook.

I bought my Instant Pot a number of years ago before it gained its current popularity. We had moved back to Canada from Australia and I needed to repurchase my small kitchen appliances. I had a slow cooker on my list and somebody mentioned that I should get an Instant Pot instead. Initially, I was a little hesitant and freaked out since when I heard the term pressure cooker, I had memories of a traditional version we had received as a wedding gift that I found absolutely terrifying to use.

I am so happy that I took the plunge and bought it. I dont have too many kitchen gadgets but the Instant Pot has become one of my must-haves. My Instant Pot gets used multiple times a week and sometimes daily for either a component of a meal or to make the main course itself.

My Instant Pot Isnt Searing Very Well

Sautéing with your Instant Pot is convenient, but it can be challenging to get a decent sear on specific cuts of meat. We recommend opting for a different appliance entirely to sear most larger-cut foods, like steak, because your Instant Pot wont get hot enough to execute a deep sear. Smaller cuts of meat may prove to be successful, but we cant promise that the meat wont become chewy or soggy. Searing is not the Instant Pots strong suit, so you should leave that job up to your trusted frying pan.

How To Start The Instant Pot

Step 1. Place the Instant Pot on a sturdy countertop or a table close to a power socket. Make sure there is plenty of open space above the pot as you will have steam eject from the lid up in the air if you quick release the pressure.

Step 2. Make sure the inner pot is inside the cooker base and is clean. Plug the power cord in. Instant Pot will switch on and the OFF status symbol will appear on the control panel. This is called a standby mode.

Step 3. Decide on which cooking method you want to use from the below scenarios. This will depend on what you want to cook. Usually, recipe instructions will guide you along here.

In general, your choices will come down to whether you want to Sauté food first and then whether you want to use a manual setting or one of the smart programs.

Other Useful Buttons To Know

Instant Pot Session 6: How to do a Quick Release
  • +/- Button To adjust cook time.
  • Saute Button Used for sauteing and browning ingredients before pressure cooking. And simmering, thickening and reducing liquids after.

Never have the lid on when sauteing . It will cause the pot to pressurize eventually and is not necessary for sauteing.

  • Adjust Button Switches between Less, Normal and More to control the amount of heat during Saute mode.
  • Keep Warm/Cancel Button Once a cooking program is selected, the Auto Keep Warm function is on by default but it can be turned off by pressing this button again before you begin pressure cooking. Cancel button ends cooking program at any time.

Even if you dont need to keep food warm, it is handy to leave this function on when you are not around during cooking. So, when you come back to the kitchen you know exactly when Instant Pot has finished cooking. Display will say L and number of minutes.

  • Pressure Level Button This button switches between Low and High pressure levels that is available on all Instant Pot models except Lux.
  • Delay Start Button Set the delayed time before a cooking program starts.

How To Do A Pressure Cooker Quick Release

After the cooking cycle finished, carefully move the venting knob from Sealing Position to Venting Position to quickly release the pressure inside the pressure cooker.

Usually it takes a few minutes to release all the pressure. Wait until the Floating Valve completely drops before opening the lid.

The steam shooting out maybe intimidating at first. Using a wooden spoon or wear oven mitt/silicone glove to move the Venting Knob may help. You will get used to it

  • Not suitable for food with large liquid volume or high starch content . Food content may splatter out from the Pressure Release Valve.
  • Foamy food may clog the Pressure Release Valve.
  • Food, especially beans may break apart due to the sudden change in pressure/temperature.
  • If the recipe is designed for Natural Pressure Release, the food may come out undercooked.

Instant Pot Soup Setting

The default Instant Pot soup setting is pre-programmed to set the pot to cook at HIGH pressure for 30 minutes. The soup program brings contents of the pot to a slow simmer and results in a clear broth due to lack of boiling motion. Below is how to use the Soup/Broth setting on Instant Pot.

  • Turn the Instant Pot on, it will say OFF to indicate the Stand-By mode. Add all ingredients, seasonings and liquids to the pot and stir. Secure the lid on top. Press the Soup button. It will say Normal, 30 minutes at High Pressure. If you press the Soup button again, you can adjust the mode from Normal to Less or More .
  • Normal mode 30 minutes at High pressure recommended for soups with meat.
  • Less mode 20 minutes at High pressure recommended for soups without meat.
  • More mode 4 hours at High pressure recommended for soups that require longer cook times such as rich bone broths. Release the pressure naturally.

Use the / + buttons to further customize the time. The cooking time may be adjusted at any time during pressure cooking.

INSTANT POT SOUP COOKING TIPS

We find that most vegetables, including potatoes, dont need the full 20 minutes at High pressure and will often overcook and get too soft, so for most vegetable-based soups, 5 to 10 minutes at High pressure is usually enough.

Pressure Cooking In The Instant Pot

Before you learn about how to release pressure on the Instant Pot, its good to get an overview of how the Instant Pot works.

The Instant Pot works by creating and trapping steam in a closed environment, which allows pressure to build inside the inner pot. * This rise in pressure increases the boiling point of water from 212°F to 253°F, which in turn speeds up the time it takes to cook food.

While the food is cooking, the Instant Pots built-in sensors monitor and automatically regulate the cookers pressure & temperature.

Once pressure cooking is complete, the contents of the Instant Pot continue to be under pressure and the food continues to cook inside the Instant Pot until the heat has decreased enough to allow the pressure to drop.

This is great if youre cooking large cuts of meat or soups. But if youre cooking fish, crisp-tender vegetables, or pasta, allowing the food to continue to cook can cause overcooking. And this is why you need to release pressure.

For best results, you need to use the correct method for releasing pressure. Most recipes you follow will specify how to release the pressure.

* When the Instant Pot has built pressure, it is also referred to as being sealed or pressurized.

How To Do A 10 15 Minutes Natural Pressure Release

How to safely use the pressure valve on your Instant Pot ...

After the cooking cycle finished, wait 10 15 minutes before moving the Venting Knob from Sealing Position to Venting Position to release the remaining pressure.

Always make sure the Floating Valve completely drops before opening the lid.

Not Turning The Pressure Valve To Sealed

While this step might seem super obvious, it truly doesnt matter how long youve been using your Instant Pot, this is a simple mistake that everyone makes occasionally. And when it happens to you, youll probably realize it pretty quickly when you hear that telltale hissing noise or notice its taking forever for your Instant Pot to come to pressure. When the pressure valve isnt sealed, the cooker releases steam and wont come to pressure.

Follow this tip: Make it a habit that after you seal your Instant Pot lid, and before you do anything else, always turn the venting knob to sealed. Do it enough times and this simple step will become second nature.

Pressure Cooking Requires Liquid

Before we continue, we must mention the most important aspect of pressure cooking. It requires liquid. This is because the pressure is built by the steam accumulating inside the pot, which is produced from the liquid.

Whether youre cooking rice, chicken breasts, pot roast, carrots, stew or cheesecake, you will need at least a cup of liquid for the Instant Pot to do its job.

This is a total amount of liquid and can be in the form of water, stock, tomato sauce, juice, wine and liquids released from the food while cooking , or a combination of those. Amount of liquid required varies depending on the recipe and amount of food but as a rule of thumb, 1 cup is always a good starting point. Also, the food doesnt need to be completely covered or submerged in liquid to cook.

Instant Pot Porridge Setting

The porridge setting on the Instant Pot can be used to cook oatmeal using old-fashioned oats and steel-cut oats, rice porridge and congee or porridge-like dishes that use a mixture of grains that expand in liquid. Ideally, you should use natural release when cooking high-starch foods that expand or a combination of 5-10 minutes natural release and quick release to follow. Below is how to use the Porridge setting on Instant Pot.

  • Turn the Instant Pot on, it will say OFF to indicate the Stand-By mode. Add the grains, liquid and spices or fat if you wish. Secure and lock the lid. Press the Porridge button. The default setting is pre-programmed to set the pot to cook at High pressure for 20 minutes. If you press the Porridge button again, you can adjust the mode from Normal to Less or More.
  • Less mode 5 minutes at High pressure this is suitable for cooking rolled oats and risotto-like porridge or rice porridge with slightly firmer to bite texture.
  • Normal mode 20 minutes at High pressure use for steel-cut oat porridge or rice porridge with a slightly softer texture and for making congee.
  • More mode 30 minutes at High pressure use for a porridge/congee that contains a mixture of beans or tougher grains.

If desired, use the / + buttons to further customize the time. The cooking time may be adjusted at any time during pressure cooking.

How to Use Instant Pot: Pressure Release – Natural Release vs. Quick Release

One of the joys of the Instant Pot is its ability to cook an array of foods straight from the freezer, including meat. It has your back on those night you forgot to thaw that pack of chicken or ground beef for dinner. Heres the catch, though while this will work with any recipe, youll need to plan on a little extra time, both for the Instant Pot to reach pressure and for cooking.

Follow this tip: As a rule of thumb, any time youre cooking frozen meat in your Instant Pot, increase the cook time by at least 50 percent. For example, bone-in chicken pieces that typically require 10 minutes of pressure cooking will need about 15 minutes of pressure cooking when frozen.
