What Is The Best Cut Of Beef For A Rare Roast

A Top Loin roast is my favorite cut of beef for this method. It has lots of flavor. Slice it thin for amazing roast beef sandwiches! The roast pictured is an Eye of Round roast, which is a little less expensive, and still produces excellent results. You could also try a Bottom Round roast, and have a wonderful, sliceable beef roast.

You will get the best results from a thicker roast. This roast is about 2.5 pounds, and just 3 inches thick. I wont cook this one as long as a larger, thicker roast.

Here are the steps to make a nice rare or medium rare beef roast in the Instant Pot:

When you trim the fat, dont take all of it off. Leave some for flavor!

When you add the roast back into the pot to pressure cook it, use the metal trivet/rack and set the roast on it.

You dont HAVE to do this, but I like the results a little better as the sear stays a little crisper.

Sometimes I forget the trivet, as I did below, and the results are still awesome!

If you are making the roast to have slices for roast beef sandwiches, you can skip the gravy making steps.

Maybe save the juices and make some French Dip sandwiches? Strain the au jus before serving so it is nice and clear of bits.

If you dont want your roast to be rare, but you still want it to be sliceable, just let it cook an extra minute or two. Then let it Naturally release a little longer.

How To Make Pot Roast In A Pressure Cooker

Instant Pot Roast Beef with Creamy Gravy &  Steamed Vegetables

In our photos, we are using a 6-quart Instant Pot, which is an electric pressure cooker.

Other brands make electric pressure cookers, too. If you own one of them, you should be able to use this recipe without any problems .

Step 1, Season the beef and bring it to room temperature. Ive already touched on this above, but Ill quickly do it again, here.

After testing, we found that when we left the beef out on the counter to come closer to room temperature before cooking it, the pot roast was much more tender at the end of the cooking time.

I also love that the beef gets a chance to sit with the salt for about an hour before cooking. In this time, the salt seeps into the meat and helps to season and tenderize it.

Step 2, Brown the beef on all sides. By browning the beef on all sides before cooking at high pressure, we add color to the meat and add lots of flavor to the pot.

For a one-pot meal, brown the beef right in the pressure cooker using the Saute function. If your pressure cooker does not have this function, simply brown the beef in a heavy pan on the stove.

After browning, I remove the beef so I can move on to the veggies.

Step 3, Lightly brown vegetables. For extra flavor, we add onions, carrots, and celery to our pot roast, but I like to cook them in the bottom of the pot a bit first.

Step 4, Deglaze the pot and place the beef and vegetables back in. By deglaze, I mean to add liquid and scrape the bottom of the pot until it is clean.

How To Roast Beef In The Oven

You dont need any fancy equipment to roast beef perfectly in the oven. Just a sturdy roasting pan with a rack to catch the drippings .

  • Make an Herb Rub Combine rosemary, garlic, thyme, salt, and pepper with olive oil. I recommend leaving the mixture for 5 minutes to let the flavors meld.
  • Prepare the Roast Meanwhile, pat the beef dry, and truss it up with kitchen twine so that it cooks through evenly. Give the beef a good rub all over with the herb oil before moving it to the rack set inside your roasting pan.
  • Cook Insert an oven-safe thermometer into the thickest part of the beef. Roast at 450ºF for the first 15 minutes, and then lower the oven temperature to 250ºF and continue baking for 28-30 minutes per pound of beef. See below for a helpful guide to knowing when your roast is ready.
  • Rest When your roast is cooked to your liking, take it out of the oven and tent the pan with aluminum foil. Allow the roast to rest for at least 15 minutes while the juices redistribute and the beef reaches its final resting temperature.
  • Serve See further down for instructions on how to prepare your pan gravy while the beef is resting. Once everything is ready, carve your beef, pour on the gravy, and serve. Ive also included my carving and serving tips below.
  • How To Make My Mississippi Pot Roast Recipe:

    • Heat up a large skillet on high and brown the roast for around 30 seconds each side.
    • Place the roast into the crockpot.
    • Sprinkle au jus & ranch on top of the roast.
    • Place several pepperoncini peppers on top of the roast.
    • Cover and cook on low for 6-8 hours until the meat is soft.
    • Once cooked, remove from the Crockpot & shred with a fork.

    What Cut Do You Make Pot Roast Beef With

    Pot roasts are traditionally made with slow braising cuts like chuck, brisket or round roast. These cuts are really flavorful and are a lot cheaper than a traditional roasting joint.

    These joints work well as the slower braising time allows the fat and connective tissue in the beef to break down and become tender.

    For this recipe post we speed up the cooking time by using the pressure function of the Instant Pot. However, the results are the same deliciously moist and flavorful meat.

    Tips For Making Instant Pot Roast Beef

    Easy Instant Pot Pot Roast (Tender and Juicy)

    Chicken stock is wonderful in this recipe, but you can also use beef or even vegetable stock.

    Cuts of beef with lots of connective tissue like a chuck roast don’t work as well with this particular recipe.

    Don’t be afraid to check on your roast as it’s cooking.

    Enjoy instant pot roast beef sliced thin, like you might get out of a deli, or cut thick like a steak.

    Saute Onion And Garlic

    *Note: Your Instant Pots inner pot should look quite brown. Dont worry! Your pot didnt burn, those caramelized brown bits add yummy flavors to your roast beef.

    Add in one more tbsp olive oil. Add in sliced onions, then saute for 3 minutes.

    Add in 2 bay leaves, ¼ tsp dried rosemary, and minced garlic in Instant Pot. Saute for another 30 seconds until fragrant.

    Should A Roast Be Sliced Or Shredded

    Short answerwhich way do you like best? Then thats how you should cook it!

    Longer answerI prefer my roasts fork-tender, so I generally cook them a little longer. However, the roast in this recipe cooks up fork tender, but it held together well enough to be sliced!

    If youre firmly in the fall-apart-tender camp, Id recommend adding a 5 to 10 minutes to the cook time and 5 minutes to the natural pressure release.

    When cooking marbled meats like pot roast, you ideally want to make sure it reaches an internal temperature of at least 200°F so that the collagen softens and breaks down, resulting in a tender, flavorful meat.

    Use an instant-read thermometer to verify the pot roast is at least 200°F in the thickest part after cooking.

    If you do like a sliceable roast, be sure to cut the meat against the grain. Cutting against the grain will give you more tender, less chewy bites.

    How To Cook Eye Of Round Roast In The Instant Pot

    First off let me say cooking this roast in the pressure cooker is easy to do. The cut of beef that I used in this recipe was Eye of Round Roast Beef. It is lean enough and priced right and perfect for making sandwiches. You can also use Top Round Roast Beef or Bottom Round Roast Beef but I have found that this is my favorite cut of meat for making deli-style roast beef in the Instant Pot.

    Since this dish is really a beef stew at its core, what you want to get a cut that works well being cooked slow and low . That being said, I like to use chuck beef, but the shoulder, shin, or any braising cut will work. If youre not sure, ask the butcher at your grocery store meat counter or go to an actual butcher who specializes in knowing which cuts of meat work best for every kind of dish.

    If You Want To Make Gravy:

    When the roast is done cooking, use a baster to remove the liquid from the slow cooker. To make gravy, you will want to get at least 3 cups of drippings from the Instant Pot.

    If you dont have quite enough drippings, you can supplement with a can of beef broth or beef stock .

    Place a small saucepan on the stovetop over medium heat.

    Add butter to the saucepan and let it melt.

    Add flour and use a whisk to whisk flour and melted butter together until it makes a paste .

    Pour in the drippings, whisking the entire time.

    Cook for about 4-5 minutes minutes or until the gravy reaches the thickness you prefer.

    Serve roast with gravy on top and on top of mashed potatoes.

    What Can I Do With Leftover Pot Roast

    As I hinted to above, youll love the leftovers almost as much as youll love eating the dish the first time. My favorite ways to eat leftover pot roast, in no particular order:

    • On sandwiches. Boring, maybe. But add some banana peppers and a little mayo on top of that roast, slap it between two pieces of bread any bread will do and thats one amazing sandwich!
    • Add shredded pot roast to a simple pasta dish.
    • Beef empanadas!
    • Add leftovers to a beef-based soup.
    • Lettuce wraps are a great, low-carb way to serve up this protein.

    How long does it take to cook roast beef in an Instant Pot?

    You will need to cook for 20 minutes per pound. Depending on the size of your roast, you can adjust accordingly! For this recipe, I use a 3 pound roast and recommend cooking it for 60 minutes.

    Can I use frozen chuck roast in an Instant Pot?

    You can use a frozen chuck roast to make Instant Pot Pot Roast. Simply add about 20-30 minutes to your pressure cooking time if cooking a frozen roast. There is no need to sear it first just rub the seasoning on the frozen roast and pressure cook as instructed. You can reverse sear the roast after it’s done following the same instructions as our Instant Pot Prime Rib.

    Can you overcook roast beef in an Instant Pot?

    If you follow the recipe directions and use your Instant Pot correctly, you should have a tender roast each time. Make sure to cook for approximately 20 minutes per pound, and if you aren’t certain whether your roast is done or not, check it with a meat thermometer before you take it out of the Instant Pot.

When the drippings and broth start to simmer, whisk in the cornstarch mixture a little at a time until it becomes a gravy consistency. Simmer about 3 minutes adding more beef broth to thin if needed. Add salt, black pepper, and a little garlic powder to taste.

    Tips For Making The Best Instant Pot Pot Roast:

    • Like I mentioned before, please do not add the veggies for the first cook time. You do not want your veggies cooking an extra 60+ minutes under high pressure! 3 minutes and they are perfectly tender and fluffy.
    • You can skip searing the meat if you need to cut out some prep time, but it does add significant flavor to the dish overall. If you dont sear, youll find that your juices will be more beefy and you will taste less of the other flavors.
    • If you need to save some time, cut the roast into 2-3 chunks and pressure cook for 40-50 minutes, or save even more time by using pre-cut stewing beef.
