Why Do You Qpr When Cooking The Roast Won’t That Make It Tough

  • Multiple Cook Times. Since we are cooking the beef pot roast a second time when we add the veggies to the Instant Pot, it will still come out super tender.
  • Overcooking. I use QPR for the first cooking cycle because NPR allows the ingredients to cook for longer in the residual heat. If I were to use NPR for both cooking cycles, the meat would get overcooked from all the residual heat.
  • Hybrid Release. I like to use both QPR and NPR for recipes that are cooked in multiple cycles so that meats don’t get overcooked. You simply use QPR after the first cycle where you cook the meat and then NPR after cooking the meat with the veggies. I use this same technique with my Pressure Cooker Beef Stew.

What Beef To Use For Pot Roast:

Most commonly used cut of beef for the pot roast is beef chuck. Its best to use tougher meats that are lean and have a lot of connective tissue because the cooking method transforms this tough cut into delicious, tender, meat that fall apart as you touch it.

Beef chuck roast: chuck is a large cut of beef that comes from the shoulder, neck, and some rib area. This cut is very lean and has a lot of connective tissue and muscle that gets exercised a lot. Its a tough cut but very flavorful and perfect for braising.

Bottom round or rump roast: this cut comes from the rear area, towards the bottom. Bottom round is generally divided into rump roast and bottom round roast cuts. These two cuts are tougher than the top round and better to use in stews and slower cooking. Bottom round is quite flavorful though and would be my second choice for pot roast.

Brisket: this cut comes from chest area and is another lean and tough cut. it is essentially two muscles that overlap and you can buy a whole brisket or just the flat. Either way, slow cooking is the way to go with this meat. If using a brisket for pot roast, make sure to NOT pull cooked meat but slice against the grain instead.

Is Pot Roast Low Carb

On it’s own, pot roast is a low carb meal, since it’s just a slow cooked beef roast. This recipe includes potatoes and a thick and silky gravy, which makes the recipe a bit high in carbs due to the starch needed to thicken it.

If you’d like to reduce the amount of carbs in this Instant Pot Pot Roast, you should not include the potatoes. You can also either skip the gravy, use keto gravy, or enjoy the broth without thickening it, like an au jus.

Ingredients For Pot Roast

Beef Chuck roast is our first choice for flavor and becoming really tender. Other good choices include sirloin or even a shoulder round.

If youd prefer, pork butt roast can be substituted .

Potatoes Baby potatoes work the best in this recipe, they are creamy and their skins help them hold together. Red or yellow potatoes can be chopped as well.l Russet potatoes will work but tend to fall apart a bit .

Gravy A tasty gravy is made from the juices. Thicken with either cornstarch or flour and serve over the beef for an elegant presentation .

You can add additional seasonings like onion powder, garlic powder, a dash of Worcestershire sauce, or herbs like fresh thyme or bay leaf to the mixture before cooking.

Instant Pot Tips

  • Be sure to cut the beef into large chunks. This allows it to cook evenly to tender perfection.
  • After cooking the onions, scrape any brown bits off the bottom of the pot to avoid the burn notice.

How To Cook A Roast In The Instant Pot

  • Cut your boneless chuck roast in half. Season one side of each half generously with salt. Set your Instant Pot to saute mode and add vegetable oil. Once hot, add one-half of the roast to the pot salted side down. Sear for 4 minutes, then flip and sear the opposite side for another 4 minutes. Remove, set aside, and repeat with the other half of the roast.
  • Add more vegetable oil to the pot along with minced garlic and onion. Saute for 3 to 4 minutes, stirring often, until soft and fragrant. Then, add red wine. Saute for another 5 minutes, stirring frequently, until the liquid of the wine reduces by half. Return both halves of the roast to the pot along with beef broth, tomato sauce, rosemary, thyme, and salt and pepper.
  • Stir together and submerge the roast in the liquid. Add the lid back to the pot and set the timer for 60 minutes. Then, let it naturally release the pressure for 20 minutes. After 20 minutes, you can release the vent to get rid of any excess steam before removing the lid. Remove the meat from the pot and set aside.
  • Skim the top of the liquid with a ladle to remove any excess fat, and discard. Then, add cornstarch to beef broth and stir until combined. Slowly add the cornstarch slurry to the Instant Pot and stir until the mixture thickens. Pour the sauce into a serving dish to use as gravy over your roast.

    How To Make A Pot Roast In Your Pressure Cooker

    • Cut. Cut the beef chuck roast into several pieces, each the size of your palm. Place the beef into the Instant Pot.
    • Add. Mix together the beef broth, tomato paste, Worcestershire Sauce, dried Rosemary, dried thyme, salt and pepper. Then add the onions to the mixture.
    • Cook. Pour sauce on chuck roast. Close the lid and pressure cook on HIGH pressure for 15 minutes. Immediately release all pressure.
    • Veggies. Add potatoes, cut up carrots or baby carrots, onions, celery, and mushrooms.
    • Finish. Close the lid and cook on high pressure 4 minutes. Allow the pot to rest undisturbed for 10 minutes. Then, release all remaining pressure. Remove beef chuck and shred.
    • Serve. Place on a serving dish. Arrange all the vegetables around the meat. Serve the pot liquid as a sauce or au jus gravy on the side.
    • Optional: You can make a cornstarch slurry to thicken the sauce, but you may not need to.

    What If My Pot Roast Is Tough

    If after cooking the pot roast, it is still tough, all you need to do is cook it longer. If the beef is still tough, it just needs more time for the braise to do its magic and break down the connective tissues in the beef.

    Since we are using a pressure cooker, if after our suggested cook time, the beef is not as tender as youd like, you will need to place the lid back onto the pot, seal it, and then cook at high pressure for additional time .

    • After removing the pot roast and vegetables from the Instant Pot, set it to sauté and add ½ cup of water to the concentrated cooking liquid in the bottom of the pot. Taste and if needed, add additional water to dilute as desired.
    • In a small bowl, whisk together the water and cornstarch and whisk the slurry into the cooking liquid. Then, simmer the gravy for about 5 minutes, or until it is thickened to your liking.

    If the gravy is not as thick as youd like after simmering, mix together an additional 1 tablespoon water with 1 tablespoon cornstarch and whisk it in to the gravy to thicken it further.

Be generous with the seasonings, as they will also flavor the gravy. Then sear the beef in olive oil using the Instant Pot sauté setting. Browning the meat adds so much flavor.
