What Does Instant Pot Burn Message Mean
If you ever used an Instant Pot, chances are you have encountered a Burn, Food Burn or Overheat message at least once. So, what is Instant Pot Food Burn? Lets quickly look at how Instant Pot works. Instant Pot is a pressure cooker with a heating element located at the bottom of the pot. It is an electronic device controlled my many mini computer elements inside.
Issue #: Steam Is Escaping Your Instant Pot Via The Knob Or Your Sealing Ring
If your instant pot knob is turned to venting instead of sealing, it will release the steam instead of building the pressure it needs to build. This can dry out the water in your pot necessary for proper pressure cooking, as well cause the bottom of the pot to get too hot, triggering the burn notice.
Also, if your sealing ring is not properly in place, or if its damaged or has food stuck on it, this could also trigger a burn warning for the same reason as the knob.
Mistake: You’re Using Too Much Oil
Adding oil to your dishes can definitely take the taste, texture and consistency to the next level. The problem is when you add too much, you run into the same problem as using sauces to cook your food instead of water: There’s simply not enough water content to make sure your pressure cooker can do its job. To make sure the machine is able to come to pressure properly, never use more than 1/4 cup of oil or fat content.

However, if theres a lot of burning, the flavors may have gotten into the remaining food. You may also need to soak and scrub the pot.
How Do I Know The Food Is Ready And Done
The Instant Pot beeps once the pot comes to pressure and then starts counting down cooking time. When there is no time left, it will beep once again . Then the pot will automatically switch to its Keep Warm setting.
We like to cancel the Keep Warm setting immediately because we have found it can overcook some delicate recipes. After that, you can allow the pressure to release naturally or set the valve to quick release, which will start letting out all the steam, um, quickly.

If a lot of liquid or foam starts to rise up, close the steam release valve again, wait a minute, then try another quick pressure release. Repeat as needed until the float valve drops.
IMPORTANT: Before removing the lid when cooking high fat or ingredients with thickeners, pick your pressure cooker up about an inch off the counter and put it down firmly.

Tips For Instant Pot Saut Mode
- After you press the Sauté button, wait for the pot to get hot before adding your food. The display on most models will show Hot when the pot is hot.
- Add cooking oil before adding meats or vegetables to the pot. The exception is that you do not need to add oil if you are browning ground beef or another meat that will release its own fat as it cooks.
- When browning pieces of meat, such as chicken thighs, do not move the meat until it has formed a browned crust on the bottom. This usually takes a few minutes. Trying to move the meat too soon can cause it to stick to the bottom of the pot. Its also important to use enough oil, as I have found that delicate meats such as chicken tend to stick easily to the bottom of the pot.
- Always deglaze the pot after sautéing. This means that you pour in a some of your cooking liquid, such as broth or water, and scrape up any bits that are stuck to the bottom of the pot. If you do not do this, you are much more likely to get a burn message while pressure cooking. Learn more about how to prevent the Instant Pot burn message here.

Deglaze Inner Pot After Sauteing
After sauteing and before pressure cooking you need to deglaze the inner pot. Deglazing involves adding a thin liquid like wine, water or broth to the hot surface and scraping the bottom with a silicone scraper or wooden spatula to remove the caramelized and brown bits that are stuck.
Deglazing adds wonderful flavor to your dish, but more importantly, it cleans the inner pot. So any liquid that you add will make full contact with the bottom of the inner pot and that allows the sensor in the Instant Pot to properly register temperature and pressure.
How To Finish Cooking After The Burn Notice
Finishing your meal after a burn notice will depend on where you were in the cooking process and the ingredients.
TIP: If you get the burn notice while cooking any ingredients that contain thickeners , you will likely get the burn notice again if you try to pressure cook it. In these instances, I recommend using Sauté mode to finish your meal. Stir constantly like you would when cooking on the stove. It will take longer to finish but will be much quicker than getting the burn notice multiple times.

Mistake: You’re Using Sauce Instead Of Liquids
If there’s only one thing you should know it’s that liquid is crucial when cooking with the Instant Pot. It’s what enables it to work and make your food taste so gosh darn good. That’s why pouring in some sauce instead of liquid is a major no-no. “We recommend you always use liquidwater, broth, anything like that. Not sauce,” Di Meglio says. “If you’re using sauce, you have to dilute it. That’s really critical because if you’re using a thicker sauce, you’re going to get the Burn message. There’s not enough liquid in it, and the unit is going to say something is wrong because it can’t build pressure.” Depending on the type of Instant Pot you have, there’s usually a minimum requirement of around 1.5 to 2 cups of liquid.

How Do You Deglaze A Pan
After sautéing or roasting a piece of meat in a pan, remove it and pour off any extra fat . There will be little bits of food stuck to the bottom usually quite cooked. These are the caramelized droppings from the juices of the meat. These little bits are packed with flavor, and only need a liquid, such as wine, stock, or juice to release their flavors.
Pour in a few tablespoons or so , with the heat still under the pan, and scrape the bottom with a wooden spatula vigorously as the liquid comes to a boil. Do not let it boil for more than a few seconds and you make sure youve released all the particles from the pan. You have deglazed the pan and can now use the resulting liquid to make a sauce or gravy.
Pressure Cooking Requires Liquid
Before we continue, we must mention the most important aspect of pressure cooking. It requires liquid. This is because the pressure is built by the steam accumulating inside the pot, which is produced from the liquid.
Whether youre cooking rice, chicken breasts, pot roast, carrots, stew or cheesecake, you will need at least a cup of liquid for the Instant Pot to do its job.
This is a total amount of liquid and can be in the form of water, stock, tomato sauce, juice, wine and liquids released from the food while cooking , or a combination of those. Amount of liquid required varies depending on the recipe and amount of food but as a rule of thumb, 1 cup is always a good starting point. Also, the food doesnt need to be completely covered or submerged in liquid to cook.

Place your pork tenderloin on a plate and then let it rest.

This resting is an important step for all meats, and this pork tenderloin is no exception to the rule. Let the meat rest on a plate while you make the gravy.
