Issue #: Steam Is Escaping Your Instant Pot Via The Knob Or Your Sealing Ring

We like to cancel the Keep Warm setting immediately because we have found it can overcook some delicate recipes. After that, you can allow the pressure to release naturally or set the valve to quick release, which will start letting out all the steam, um, quickly.

What To Do When The Instant Pot Says Burn

DONT PANIC! In many cases, you can still save your meal, even after the burn notice appears.

As soon as you see the burn notice, press Cancel, and immediately use a quick pressure release.

If a lot of liquid or foam starts to rise up, close the steam release valve again, wait a minute, then try another quick pressure release. Repeat as needed until the float valve drops.

IMPORTANT: Before removing the lid when cooking high fat or ingredients with thickeners, pick your pressure cooker up about an inch off the counter and put it down firmly.

Then carefully remove the lid and remove the cooking pot from the housing.

  • Always deglaze the pot after sautéing. This means that you pour in a some of your cooking liquid, such as broth or water, and scrape up any bits that are stuck to the bottom of the pot. Deglaze Inner Pot After Sauteing

After sauteing and before pressure cooking you need to deglaze the inner pot. Deglazing involves adding a thin liquid like wine, water or broth to the hot surface and scraping the bottom with a silicone scraper or wooden spatula to remove the caramelized and brown bits that are stuck.

Deglazing adds wonderful flavor to your dish, but more importantly, it cleans the inner pot. So any liquid that you add will make full contact with the bottom of the inner pot and that allows the sensor in the Instant Pot to properly register temperature and pressure.

If there’s only one thing you should know it’s that liquid is crucial when cooking with the Instant Pot. It’s what enables it to work and make your food taste so gosh darn good. That’s why pouring in some sauce instead of liquid is a major no-no. “We recommend you always use liquidwater, broth, anything like that. Not sauce,” Di Meglio says. “If you’re using sauce, you have to dilute it. That’s really critical because if you’re using a thicker sauce, you’re going to get the Burn message. There’s not enough liquid in it, and the unit is going to say something is wrong because it can’t build pressure.” Depending on the type of Instant Pot you have, there’s usually a minimum requirement of around 1.5 to 2 cups of liquid.

These are the caramelized droppings from the juices of the meat. These little bits are packed with flavor, and only need a liquid, such as wine, stock, or juice to release their flavors.

Pour in a few tablespoons or so , with the heat still under the pan, and scrape the bottom with a wooden spatula vigorously as the liquid comes to a boil.
