The short answer: The Instant Pot is a convenient multi-cooking machine that lets you cook fast or slow.

The longer answer: Because the Instant Pot is a countertop electric pressure cooker and slow cooker wrapped up in one , its designed to help you remove the guesswork of figuring out the ideal amount of heat, pressure, and time your food needs. Its great for beginner cooking and simple meals, like stews and oatmeal. But once you get more comfortable with the machine, its excellent for tougher cuts of meat like baby back ribs or proteins that usually require a long cook time. With a willingness for some trial and error, many recipes can be adapted for the Instant Pot. Generally speaking, when adapting for pressure cooking, the liquid and cook time will need to be cut and adjusted from those of a manual pressure cooker. For slow-cooking, youll need to adjust for less liquid and more time.

Basic Differences In Instant Pot Sizes

The basic Instant Pot guidelines say that the 3-quart is good for 1 or 2 people, the 6-quart is for up to 6 people, and the 8-quart is for large families or big batches. I think this is a good starting point, but there are exceptions.

Most recipes online are written for 6-quart pressure cookers. You may need to add more liquid for some recipes with 8-quarts and larger. So if you feel really nervous about going off recipe, Id recommend using a 6-quart.

Instant Pot accessories will also be easier to find in a 6-quart or 8-quart size.

The Duo Plus is an upgraded version of the Duo series . But the differences are so minor that we dont think the price hike is warranted . The only real changes in the Duo Plus are a sous vide setting and the display . But compared with the Duos design, the Duo Pluss screen is smaller, and the control panel isnt nearly as streamlined. Also, the Duo Plus lacks features that make the Pro special, namely the improved inner pot, the additional temperature-control options, and a quieter steam-release valve.

The Instant Pot Max offers a higher pressure setting than other Instant Pot models have, as well as stirring and sous vide features. In theory, such features should increase the overall functionality of the cooker and speed up cooking times. Unfortunately, during testing, we found that the Max took longer to come up to pressure, the sous vide feature never reached its target temperature, and the stirring function left much to be desired.
