To make the gravy, drain the pan drippings through a sieve to catch the onions and garlic. You can also press them through it to get all the flavor into the gravy. Measure out two cups of the liquid and place back in the Instant Pot insert. Add a mixture of 2 tablespoons or cornstarch with 1/4 cup of cold water and whisk well. Saute until thickens. You can use the rest of the liquid from cooking the turkey for soups later. I simply place it in ziploc bag once it completely cools. Its a very flavorful broth and perfect for making soups during winter.

Tips Tricks And Notes For Pressure Cooker Turkey Breast

Instant Pot Recipes Turkey
  • Broil after cooking. This is optional, but its the best way to give the turkey that golden-brown, slightly crispy finish.
  • Let it rest. After the turkey is done cooking, let it rest for 10 minutes before slicing to give the juices time to redistribute throughout the meat. If you slice into it too soon, the moisture will just seep out and the turkey will be dry.
  • Check the temperature. Use a meat thermometer to check that the turkey is a minimum of 170ºF in the thickest part of the breast before serving.
  • Dont discard the cooking liquid. You can use it to make the homemade gravy!
  • You can place the turkey breast in the instant pot skin up or skin down. This depends on what you prefer. Skin down results in juicier meat, but if youre searing or browning after you may not want the skin sitting in the liquid. Either way, the instant pot makes the turkey breast super moist so both options work great.
  • I use an 8 quart instant pot, but a 6 quart will work as well if thats what you have.

Helpful Hints For The Paprika Turkey Recipe

The sauté function on the Instant Pot heats up fast and is great for searing or browning meat and vegetables. After browning your turkey meat, remove it from the pot and make sure you deglaze your pot, so any caramelized and browned bits on the bottom dont block the heat sensor and trick the unit into thinking that something is burning. From this point, its easy to follow the recipe to complete the dish.

After pressure-cooking meat, let the pot vent naturally for some time. Many recipes call for the addition of vegetables as a second cooking step, so manually venting, in this case, prevents the vegetables from getting too mushy. As in this turkey recipe, we are cooking the meat first and adding vegetables in the second stage. When the turkey is cooked, we let it depressurize naturally for 20 minutes, however when the vegetables were added, we manually vented the unit at the end of the cooking time to ensure the veggies are cooked to the correct consistency.

How Many People Will This Serve

The general rule of thumb for a boneless turkey breast is to plan ½ pound per person . However the real amount will depend on what else is being served. For Thanksgiving for instance when with multiple side dishes ½ pound of turkey seems like alot.

We used the guideline of 4-ounce servings. A third pound may be more likely but for the nutrition calculations and WW points they are based on 4-ounces.

How Long To Cook The Turkey

We recommend cooking your turkey for about 6 minutes per pound. So, if your turkey is 7 pounds, pressure cook it for no more than 42 minutes. Insert an instant-read thermometer into the thickest part of the meat youre cooking, and it should register at least 165°F .

You have to be careful and do your math correctly depending on the weight of the turkey youre cooking, as theres nothing worse than an overcooked and dry turkey.

Finishing The Turkey Drumstick Sandwich

While the gravy cooks, you can begin to pull the turkey meat off of the bone of the turkey leg. I found it easiest to wait until it cooled enough then I pulled it with my hands and then I shredded the pieces with two forks. Season it with balsamic and brown sugar and pour cooked gravy over it, reserving some gravy for later.

This sandwich is served open face onto toasted bread. You then put the meat on top of the bread and garnish it with green onions, pepper, and cayenne. Serve it as is, add more or less gravy or even add some hot sauce! The meat is great reheated too so dont worry if you have extra.

Tips For The Most Tender Turkey

    • Dont Overcook: Its better to cook your turkey for less time and then check it, because you can always cook it a little bit more if need be. The internal temperature should register at around 163°F when done, because it will rise a couple degrees as the turkey rests.
    • Use Coarse Salt: Avoid using regular table salt for your turkey. You want to use either coarse sea salt or Kosher salt, because the salt particles are larger and will better lock the moisture into your turkey.
    • Release Pressure from Instant Pot: You have to do a natural release for 10 minutes before you move the steam valve to the venting position. Release all of the pressure from your Instant Pot before taking out your turkey. This is super important because you dont want your instant pot exploding.
    • Baste Skin Before Broiling: Before you broil your cooked turkey in the oven, drizzle it with olive oil or the leftover liquid from your instant pot. This will keep your turkey nice and juicy while the skin gets crisp.
