Cook Millets perfectly in a pressure cooker without presoaking, as a substitute for rice, and in other recipes using millets.

I love millets and enjoy eating them for lunch as a rice substitute, as adai and my most favorite pongal.

Usually, I presoak it for 20 to 30 mins before cooking which I always manage to forget as I’m the only one who eats millets for lunch.

I came to know of this hack from my husbands aunt when she visited us. She is a diabetic and doesnt take rice.

Normally Proso Millet is my preferred choice to replace rice in lunch. But I had only foxtail millet at hand and I was surprised when she cooked it for both of us within few minutes without bothering to presoak it.

But it was open cooking and I prefer my cooking to be supervision-free. I especially hate having to open the lid and taking a sneak peek to check if the food is cooked or not and dislike looking at the clock to check on time.

How To Prepare This Recipe

I always flinch a little at the use of the word “dump” to describe anything relating to food but “dump-and-start” and “dump-and-go” really are good descriptors for this kind of Instant Pot recipe.

The only work involved in making this millet recipe is chopping the onion, garlic, peppers, and carrots. There is no sautéing or babysitting a pot involved.

  • Rehydrate the soy curls in water mixed with my homemade chicken flavored broth powder, or use any salty broth you have on hand.

    Add the liquid and a pinch of salt.Add the millet, coating it well with the cooking oil, then the water and salt.Add the rinsed millet and stir until the grains are coated in oil.Add water, salt , mix well, close the lid and cook over medium flame.

    After 6 hours drain the water and rinse millets.After boiling, simmer on medium and cook at least 30 minutes.After the cooking time, quick release.Allow the pressure to release naturally.

    There are two ways to make millet in a pressure cooker – like pilaf or like porridge. The recipe card at the bottom of this post includes instructions for both.

    Pilaf Method: This means adding just enough water so that the cooked millet has a fluffy texture, similar to the texture you’d want for rice. Although regular pilafs use aromatics and broth to add flavor, both are optional here. You can make Instant Pot millet with just water, millet and salt. Or, you can saute onion, garlic and spices in the pot and use broth instead of water.

    When cooked like a pilaf, millet can be served as a replacement for rice or other grains. It can also be turned into cold salads or added to soup for texture, and it can be baked into squares that are cut and served like firm polenta.

    For sweet porridge, add milk, cream, nut milk, oat milk or coconut milk. Add toppings like cinnamon, maple syrup or jam, dried fruit, or fresh fruit like berries, mango, papaya, peaches or figs.

    The Instant Pot Makes Short Work Of The Cooking

    Combine the millet and the oil in the Instant Pot along with a quarter of a teaspoon of salt and one and a half cups of water. Be sure to measure the water instead of just estimating too much or too little water can ruin your millet. Set the Instant Pot to high pressure and cook the millet for 10 minutes. When the 10 minutes have elapsed, let the Instant Pot release pressure naturally for 5 minutes. After that’s done, follow up with a manual pressure release. Once the Instant Pot is completely de-pressurized, open up the lid, scoop out the millet, and serve it up.

    Yield And Serving Suggestion And Dietary Specifications

    Instant Pot Millet (Fast, Fluffy, Perfect!)

    Millets are gluten-free and vegan by nature. One cup of uncooked millet yields 4 to 5 cups of cooked millet, but it depends upon the brand. You can store the cooked millet in the refrigerator for 4 to 5 days and reheat the required amount as needed.

    You can serve millet with sambar, kuzhambu, rasam varieties or use them instead of rice for variety-rice dishes like lemon rice, tomato rice, tamarind rice, etc. Or you can also serve it with dal, chole, etc. Alternatively, you can use it in salads, soups, and stews.

    Note: For the pot-in-pot method, I used a half cup of millet and ¾ cup of water.

    Last but not least, lets cover the basics of rice pudding. Like with risotto, youre going for a very specific texture here while cooking your rice with things besides water, so its important to note a few distinctions between techniques. Remember to be mindful of what type of rice you buy. Please note you can use dairy milk in place of the almond milk and coconut milk recommendation.

    • Begin with short-grain white rice, which is sometimes also sold as pudding rice. No doubt you know what to make with it!
    • Youre going to want a lot of liquid. You can choose a blend of milk or milk substitutes and water that works for you. For a dairy-free version, one cup of almond milk, one cup of coconut milk, and 1.5 cups of water work well.
    • You can add in additional ingredients now or later. Its good to toss some warming spices in the pot while cooking so it really infused the flavour cardamom pods, cinnamon sticks, etc.
    • Cook on HIGH pressure for 5-6 minutes and let the steam manually release for 10 minutes before doing a quick release.
