This is my go to recipe for beef ribs. Just as good as the restaurants and cheaper! My family loves it and it’s so easy.I used beef short ribs one time and the meat was not tender since they are thicker. I know now to buy the other kind which can be found at Costco. Great to see the other options if out of ACV. Thanks for sharing!

The cooking time was way too long in my instant pot. The ribs basically lifted out of the meat and a large amount of the meat slipped into the cooking fluid and was no longer anything that resembled ribs. It basically became barbecue flavoured soup with a lot of vinegar in it ???

The goal for this recipe is to have the ribs tender enough to fall off the bone. However, it is important to keep them out of the liquid. In Step 6 of the recipe card, the directions are to place the trivet into the inner liner before placing the ribs into the pressure cooker. The trivet keeps the ribs out of the liquid and must be used. If you do not have a trivet, balled-up aluminum foil added to the liner works great. I am curious if this step was skipped and is why the meat slipped off the bones and into the liquid.

What Are Short Ribs

Many ask if short ribs are beef or pork?; Short ribs are a beef rib usually meatier and larger than pork spare ribs. Short ribs can be either boneless or bone-in. Boneless short ribs are cut from the chuck or plate. Bone-in short ribs consist of a short portion of the rib bones near the short plate, last 7 ribs of a cow.

Both are ideal for braising and either will work wonderfully for this recipe. For this instant pot recipe, I used boneless short ribs that I got at Costco.; The time does not need to be adjusted, each takes the same amount of time to cook; therefore, follow the recipe just as is no matter which cut you have.

Apply Sauce & Broil In Oven/air Fryer

First, carefully set the spare ribs on an oven tray or chopping board, then generously apply your favorite BBQ sauce all over the ribs on all sides.

*Note: You can use an oven, toaster oven, Instant Pot Duo Crisps Air Fry function or Instant Pot Air Fryer Lid for this finishing caramelization step.

*Pro Tip: If you have a large oven, you can finish the spare ribs in one batch. If youre using the Duo Crisp lid or Air Fryer lid, youll need to cut the spare ribs into halves, then finish them in 2 batches.

*Pro Tip: Its best to broil the spare ribs before cutting it into serving size to retain more moisture.

What Kind Of Meat To Use

Bone-in beef short ribs are marbled and meaty, which make them perfect for the pressure cooker!

I prefer English-style beef short ribs, where each rib has only one bone and theres at least 1 inch of meat above the bone.;;

You can use boneless short ribs, if you prefer. If the short ribs are wide and thick , keep the same cook time. If theyre skinnier, Id cut the cook time by half and add extra time if needed.

How To Save Money On Boneless Beef Short Ribs

You can sometimes find a great deal on boneless beef short ribs, I know Costco often has them for a great price.

You can also save a good deal of money by making your own country style short rib from a chuck roast or chuck steak. Simply cut the beef into pieces about 2 inches long and 1.25-1.5 inches thick.

Pressure Cooker Beef Short Ribs

This Pressure Cooker Beef Short Ribs recipe is a spin off my traditional slower cooker Savory Beef Short Ribs. The instant pot beef short ribs are just as tender and flavorful as when you cook them in a slow cooker.

The Instant Pot has several settings, depending on which model you have. I used the “Pressure Cook” setting, also known as the manual setting to make these.

Some people have a “slow cooker” setting. That setting is to make the instant pot act like a slow cooker.

You’ll want to use the pressure cooker setting for these instant pot beef short ribs. The setting is what makes these beef short ribs tender.

How To Cook Short Ribs In The Instant Pot

To begin, season both sides of the short ribs with the first 5 ingredients. Select the Saute setting on the Instant Pot / electric pressure cooker and adjust it to High. Once it reads HOT, add olive oil.; ;By letting the pot come to high heat, the meat will cook faster and also not stick to the bottom.;

Add 3-4 short ribs to hot oil, you want to sear the short ribs in batches, in one layer in the Instant Pot.; When they come away from the pot easily, they are ready.; About 2 minutes on each side will brown them and add flavor.;;

Transfer browned short ribs to a plate and cover with foil. Repeat cooking with remaining short ribs.; Saute onions until brown, about one minute.; Hit the Cancel Button.; ;The first stage is done in about 15 minutes.;

Once all done, add remaining ingredients to the insert and whisk to come together. Add meat back into the pot. Put the lid onto the Instant Pot and seal it, making sure the vent on top is in the correct position. Cook on MANUAL high pressure for 50 minutes.; It took mine about 15 minutes to come to pressure.

When its done cooking, let it release naturally for 20 minutes and then use the quick release on top to depressurize the Instant Pot. Be careful when moving the valve to release the pressure, the steam will be very hot! DO NOT use the quick release without letting it release naturally. You want the meat to retain the natural juices and letting it come down slowly ensures the meat rests versus seizing up.

Cooking short ribs until tender can take up to 2 ½ hours in the oven.;

With an instant pot, you only need to cook it for 30 minutes and an additional 2 minutes to cook the vegetable .

How To Cook Bbq Beef Ribs In An Instant Pot

Step 1. Dry Brine

In a large bowl, add beef short ribs and sprinkle with kosher salt. Stir to combine and cover the bowl with plastic wrap. Dry brine for at least 1-2 hours or up to overnight.

Step 2. Season the Beef Short Ribs with Dry Rub

In a medium bowl, add paprika, chili powder, ground cumin, brown sugar, salt, cayenne pepper, garlic powder, and black pepper. Stir to combine.

Rub the beef ribs with the seasoning.

Step 3. Pressure Cookthe Ribs

  • Add about a cup of water or broth into the Instant Pot. Place the ribs onto the basket.
  • Secure the lid and select the “Manual” setting. Cook the ribs for 40 minutes at high pressure. Once the cooking cycle is completed, let the pressure release naturally for 10 minutes.

Step 4. Prepare the BBQ Sauce

  • In a medium bowl, add brown sugar, apple cider vinegar, Worcestershire sauce, dry mustard, water, paprika, salt, and ketchup. Stir to combine.

Spare ribs are usually cheaper than St. Louis Style Ribs. You can easily trim the spare ribs into St. Louis ribs by following these simple steps.

With a sharp knife, remove the flap at the end of the spare ribs.

*Pro Tip: The skirt is the strip of meat that runs diagonally on the backside.;

Try to fold the ribs lengthwise and you should find where the breastbone and cartilage are connected.;

Then, separate the rib tips by making a horizontal cut.

What Are Beef Short Ribs

What kind of meat is short ribs? Its not what you might think!

Surprisingly, boneless beef short ribs are not actually rib meat. They are cut from the chuck, or shoulder, but can be harder to find.

Bone-in short ribs come from the belly and are a much fattier cut of meat. Many butchers will actually remove the bones from bone-in short ribs for you, which is what I did for this boneless short rib recipe.

TIP: If youre using bone-in short ribs, you will need to increase the pressure cook time to 50 minutes. Short rib meat takes a bit longer to cook with the bones than without.

Easy Recipe For Pressure Cooker Short Ribs

Hopefully you now know everything you ever wanted to know about beef short ribs, and are ready to cook them!

I love making pressure cooker short ribs in my Instant Pot, because the saute setting adds extra flavor by letting me get those browned bits of caramelization on the meat. Then I add all the marinade ingredients and cook it on high pressure.

The sauce for these pressure cooker short ribs is very tangy, thanks to the red wine vinegar, with a bit of sweet from syrupy molasses.

The meat will give off a lot of liquid while it cooks under pressure, so the sauce ends up pretty thin by the end of cooking. If you would like the sauce to be thicker, just remove the meat, and turn your Instant Pot back onto the saute setting. Boil the sauce while stirring until it is reduced by half.

How To Make These Beef Short Ribs In The Instant Pot:

  • Sear the short ribs. We frequently get asked if you can make short ribs without browning them first. If you really, truly dont have 10 minutes to sear your short ribs, you can skip this step in a pinch. But you will get SO much more flavor out of your short ribs if you sear them first! For best results, make sure your short ribs are very dry before you sear them
  • Sauté up some garlic, onion, and portobello mushrooms.
  • Stir in some tomato paste and a hearty red wine
  • Pressure cooking time! Cook on high pressure for 50 minutes for boneless short ribs . Naturally release pressure for 15 minutes.
  • Remove the short ribs and whisk a cornstarch slurry into the remaining gravy to thicken it up. Then serve!
