Ingredients In Instant Pot Beef Stew
- Olive oil. For beef stew, I like to cook the meat in a light olive oil canola oil also works.
- Beef. You can use a chuck roast and cut it yourself, but I find its easiest to just buy stew meat already cut up and trimmed at the butcher counter.
- Veggies. For our version of Instant Pot Beef Stew, we use the classics carrot, onion, celery, potatoes, and peas . You could also throw in some parsnips, green beans, or pearl onions if you want to up the veggie ratio.
- Garlic. Not much to explain here! Garlic. Always lots of garlic.
- Tomato paste. We love to use tomato paste in our beef stew because it helps to thicken the stew. It also has a really concentrated tomato flavor, so it adds a ton of flavor.
- Tomato puree. You could use tomato puree or canned tomatoes here. My kiddos dont really like whole tomatoes, so I sneak them in this way. If you have canned diced tomatoes on hand, that works too!
- Seasoning. You don need much in terms of seasoning we use LOTS of salt, a few bay leaves, a little bit of Worcestershire sauce, and just a pinch of sugar.
- Broth. Youll want low-sodium beef stock or broth. We always use low-sodium so we can control the amount of salt that goes into our dish.

I’m such a sucker for sales. This three-pound pork shoulder was on sale at the store, and I justhadto buy it. That pretty much meant that me, my husband, and my two-year-old would each need to eat a pound of pork.
Sounds reasonable, right? Luckily, you can freeze leftovers. But first, the ingredients for this recipe:
Start With A Good Rub
Our pulled pork will be getting its flavor start by applying a rub. We use simple ingredients that include brown sugar, onion powder, garlic powder, paprika, ground mustard, salt, pepper and a dash of cayenne. Whisk the dry ingredients together in a large bowl and add the pieces of pork. Use your hands and toss it all together for a couple of minutes. Make sure that seasoning mixture is well incorporated into the meat.

How To Make Instant Pot Beef Stew
Start by seasoning the meat with salt and pepper. Then add the butter to your Instant Pot, press the saute button, let the butter melt, and add the meat. Brown the meat all the way around. When its done browning, plate it.
Then add the carrots, onions, and seasonings to the Instant Pot. Saute until the onion is softened, about 3-4 minutes remember to keep on mixing, so it doesnt stick.
Then mix in the flour, and coat the vegetables.
Then add the beef broth and potatoes and add back the meat. NOTE: This is important
Set the manual high pressure for 35 minutes. When the timer beeps, do a natural release.
Then when all of the pressure is released, take your lid off and then mix and ladle and serve.
This Instant Pot Chicken Stew Is Frugal
With the recipe only calling for 2 chicken breasts, this meal is very easy on the budget. The potatoes carrots and other ingredients really help to stretch this delicious meal.
You can also easily substitute chicken thighs for the chicken breasts. We have even used a mix of the two and it was delicious.

Butchers In colonial New England used to pack in inexpensive pork cuts of meat into large barrels as its easier for them either for storage or transportation, and these used to be called butts.These meats of the shoulder are packed into these barrels and became known as pork butt, and over time the name stuck.
How Do You Make Instant Pot Pulled Pork
Start by cutting a piece of pork shoulder into 3-4 large chunks. Mix together a homemade spice blend to use on the pork. Heat a little oil in the Instant Pot, then brown the meat on all sides. You may need to work in batches. Coat the browned meat in the spice rub. Place chicken broth and BBQ sauce in the bottom of the pressure cooker, then whisk to combine the two. Place the pork back in the pot, then seal the pot. Cook the pork, then let the pressure release naturally for 15 minutes. Manually release any pressure thats left, then open the pot. Shred the meat with two forks. Add more BBQ sauce until you reach the desired flavor and consistency, then serve.

How Long Do You Cook Pork Shoulder In Instant Pot
Start The Instant Pot. Close the lid and make sure it is properly latched with the vent in the sealed position. Select the Manual setting,and press adjust to select a cooking time for 90 minutes. Regardless if the pork shoulder is over 2.5 lb or bone in,or frozen select 90 minutesof cooking time and the Instant Pot will do the rest.

How Do You Thicken Beef Stew
There are a few ways to thicken a stew. I chose to use a slurry made from some of the broth in the stew, and corn starch. You whisk it together, then add it back into the stew bowl, and let it cook for a few more minutes to cook down and thicken. You have to give it some time to thicken.
Another option is to add additional potatoes, and then scoop some of them out, and blend them up into a paste, then add them back in and let them act as a natural thickener. This is a great option if you dont or cant use corn starch as a thickener.

Have you ever had a pork butt or pork shoulder that was smoked or slow-cooked all day? Its absolutely delicious! But lets face it, we dont always have time to wait that long for dinner to be cooked.
While slow roasting is great for special parties and gatherings, its not realistic for a weeknight meal. Which is why I decided to throw a pork butt in the Instant Pot to see what would happen.
I must say, the results were fantastic juicy, tender meat in an hour! Its possible I may never cook pulled pork any other way.
Not only is the cooking time much faster, but the flavors are amazing. You dont have to worry about standing outside with the smoker. And making it ahead of time is a breeze.

Tip : Allow Extra Time For Coming To Pressure And For Cooking Freezer Meals In The Instant Pot
Weve found that freezer meals take almost twice as long to come to pressure than a thawed meal does. Make sure you allow for that time when prepping or youll have a hangry family. I wish there was a one size fits all pattern to freezer meal cooking times in the Instant Pot but there just isnt.
One trend we see is that the longer it takes a meal to come to pressure, the less additional time you need to add to cook a frozen meal. It seems counterintuitive, I know. Youll just have to trust us on this one. So for example, in our recipes for a large batch of soup, we dont add any additional cooking time when cooking from frozen. On the flip side, we add 10+ minutes to a small chicken recipe.
How Do You Know When Your Pork Is Done
Anyone that has ever spent multiple hours fraught with anxiety over accidentally overcooking your pork shoulder knows the pain of trying to perfectly cook a pork dinner.
While a handy instant read thermometer like a Thermapen is super useful, an Instant Pot makes the whole thing a breeze. Assuming your pork shoulder is around 3 pounds , then it should come out perfectly cooked after an hour in the Instant Pot.
Using a thermometer, a pork roast is done when it hits 145 Fahrenheit. Keep in mind, though, that this will produce medium rare pork that is a little bit pink inside. While this is perfectly safe to eat, some people get a bit squeamish about pink pork, so if you want to take it all the way to 155 Fahrenheit and serve it medium well, thats totally fine as well.
The Instant Pot is going to cook this roast well past any of those temperatures, and thankfully the moisture in the pot is going to prevent it from drying out like it would in a conventional oven!
What Is Pork Shoulder
Pork Shoulder is the cut from a pigs shoulder, though sometimes labeled as Pork Butt or Boston Butt.
Youll usually see pork shoulder being sold as a big slab of meat with fat or fat cap. This fat adds flavor and keeps the meat tender as it cooks. It can also be sold bone-in, or boneless.
Pork Shoulder is a great cut of pork to cook in Instant Pot Pressure Cooker because its a tough cut of meat thats fatty and full of connective tissues.
So its super easy to cook as a whole or in chunks with a variety of recipes, and itll come out tender, juicy, and flavorful.
*Shopping Tip: Pork Shoulder is usually quite a bit cheaper in Asian markets . So if youre able to shop at an Asian market that sells fresh meat, you might want to check them out first.
Preparing The Pork Roast
Pork roasts generally come tied up or covered with a string netting. This is to keep the meat together in one piece while it cooks. I usually remove all of that, so I can remove the skin and fat cap. Then if the meat isnt in one solid piece, Ill tie it a couple of times with string to keep it together.
I find that pork shoulder is the one that needs to be tied up. Pork leg generally stays in one piece.
In most cases, the roast will come with a large fat cap and the skin left on. I like to remove those when cooking in the Instant Pot. If you were to cook this roast in the oven, it would have time for the fat to render and the skin to crisp up, but that doesnt happen in the Instant Pot.
So grab a large knife and carefully cut the skin and fat away from the meat, trying not to cut into the meat. Its better to leave on a little extra fat, which will help with moistness and flavor.
