Finally Using My Instant Pot
Fast-forward to December when I was doing a little pre-Christmas decluttering and I came across the Instant Pot under the counter. I made up my mind then and there that I was going to use it or sell it.
I wasn’t willing to continue to sacrifice the storage space for something I wasn’t going to use. So I ordered an Instant Pot cookbook online and when I had spare time, I started browsing the books.
The first recipe I made was a Beef Stroganoff . I was blown away by the fact that the roast went from raw to falling-apart tender and delicious in under an hour. Next, I saw someone on Facebook talking about “boiling” eggs in the Instant Pot. So I tried that. It was crazy easy.
Then I tried pasta. So, so easy. And it took 4 minutes after pressurizing. 4 MINUTES. Next, I cooked chicken breasts… from FROZEN to DONE in 18 minutes. I.WAS.HOOKED. Where in the world has this appliance been all of my life?!
Oh and about that storage space? I made a place for it on the countertop… I don’t foresee actually putting it away at all. I might use it every day!

What Types Of Beans Can You Cook In An Instant Pot

Thats a great question! And the answer is most. Theres really only one type of bean I wouldnt bother cooking in the Instant Pot and thats red lentils. Red lentils are super delicate, cook very quickly on the stove already and youll end up spending more time cooking them in your pressure cooker.
All other beans are fair game!

I prefer to soak beans overnight. It reduces the cooking time and some studies suggest that soaking makes them easier to digest. Heres how I cook pre-soaked beans in the Instant Pot. This recipe will work with any electric pressure cooker.
- Rinse and soak beans overnight, or for 8 hours. Alternatively, use the no-soak method.
- Turn on the Instant Pot. Heat oil on Saute mode . Ad crushed garlic, followed by chopped onions. Saute for 1 minute, or until the onions turns translucent.
- Add rinsed and drained beans, seasoning and water. Cancel Saute. Pressure cook on Bean/Chili Mode or Pressure cook mode for 30 minutes. Reduce time to 25 minutes for a more firm texture.
- Let the pressure release naturally for 15 mins . After that, release pressure manually. You can do that by turning the pressure knob to venting position in DUO model, or, push down the pressure valve in ULTRA model.
- Open the lid after the pin drops. Using a potato masher, mash a few beans for a creamy texture. Garnish with cilantro and Cojita cheese crumbles and serve warm!

Controlling The Spice Levels
Jalapenos are an essential part of this dish as it brings just the right kick of heat. However, if you have a different heat tolerance, you can change the type of pepper youre going to use. If you want a hotter experience, I suggest using a scotch bonnet pepper. Want to tone it down a bit? Try using poblano or ancho peppers instead.

Three Keys To Southern
The three keys to delicious Southern-style peas are 1) sauteeing the meat/bone/fat, 2) adding rich broth, and 3) cooking low and slow or with pressure. For tender peas, a long slow stovetop simmer or a pressure cooking can yield the same or similar results. In the short video below, I do a tutorial using frozen zipper peas.

What Is The Ratio Of Beans To Water In Instant Pot
All you need to do to cook beans in the instant pot is add them into your pot, followed by 2 3x that amount of water. So if youre using 1 cup of dried beans , youd follow that with about 2 3 cups of water. Basically, you want the beans to be fully submerged or else they wont cook evenly.
Do You Have To Soak Black
No, you do not, its not required for this recipe and in general, dried black-eyed peas dont need to be soaked as long as other types of dried legumes BUT I do soak them because it makes them extra soft, creamy almost, which I like .
I will soak them overnight in a bowl, covered with a plate in the refrigerator.
I put them in the water at night and then the next day I make them.
I give the cooking times for dry vs. soaked black-eyed peas in the recipe card at the end of the post.
How much water do I add to the Instant Pot for this Black Eyed Peas recipe?
I add 4 cups of water for 1 pound of pre-soaked black-eyed peas.
I always use Better than Bouillon Chicken or Vegetable stock base.
If you want to use stock, just do 2 cups water and 2 cups stock of your choice.
If you are just rinsing the black-eyed peas and not soaking them, add 6 cups water .
If you just want them to taste very plain, perhaps to be apart of another recipe, you can just do water only.

Can I Use Natural Release
You can use Natural Release where pressure subsides on its own. You can pre-program this recipe and dinner can wait for you on the counter when you get home. Since Instant Pot keeps cooking while releasing pressure slowly, consistency might be a bit more soft. Which is not a big deal. Its a hearty recipe anyways.
Can You Use Old Dried Beans
Yes, you sure can. The biggest thing about dried beans if they are older, you will have to add a bit of time to your method.
Dried beans after they sit for so long, you will find they just need additional cook time to ensure they are fully cooked and tender. While I recommend fresh dried beans, you can use old if that is all you have.

Do Legumes Need To Be Soaked
This is a matter of personal choice. Although soaking aids in the cooking of the beans by making them softer beforehand, the real reason for soaking legumes is to get rid of the indigestible sugars that cause gas in humans. Most cooks soak their beans overnight, rinsing the beans well before cooking, while others choose to soak them for four hours, and some don’t soak them at all. It all comes down to how much time you have and if you have noticed digestive discomfort from eating unsoaked beans.
