    First, turn your pressure cooker on to Saute because you want to sear the pork on all 4 sides.

    Browning your pork will add another layer of flavor, giving it more depth by caramelizing the surface.

    Next, you want to add the broth and scrape any brown bits left behind from the pork. If you skip this step, you may trigger a Burn error.

    Then add the vegetables and rosemary around the pork. Cover and lock the lid in place then select Meat/Stew to begin the pressure cooking process.

    Your timer wont start right away; this stage is equivalent to preheating your oven. Itll take about 10-15 minutes to come to pressure, depending on how cold your ingredients are.

    For example, using room temperature broth means itll heat faster than cold broth straight from the fridge.

    Once the timer is done, let it sit untouched for 10 minutes for a natural release then move the valve to finish releasing pressure.

    Transfer the meat to a cutting board to rest then strain the vegetables. Now you can make gravy with the leftover broth.

    • You really do need to cook a blade or chuck roast for 120 minutes. Blade and chuck roasts are very tough and have fibers that absolutely need to be broken down by cooking, and cooking for a long time. Theses roasts take 8-10 hours in the crockpot, so 2 hours in the Instant Pot is definitely the way to go!
    • You need liquid and not just liquid you need DELICIOUS liquid. Food can be a bit bland when pressure cooking so you need to spice up!
    • If you have a roast that is from a quality butcher, you can try cooking it at 90 minutes. Grocery store roasts are generally lower quality. Play it by ear based on the meat quality of the roast you are cooking.
    • Thick roasts may need to be cooked a little longer as its thickness that determines how those fibers are going to break down inside.

    Just writing this post up makes me want to make this roast again. Its similar to that Mississippi roast in the fact that I use a package of dry Ranch dressing in it, but theres no peppers. Trust me, the dry Ranch dressing makes this delicious!

    In general, tougher cuts of meat work best for making a Instant Pot pot roast.

    These are the cuts of meat that contain a decent amount of fat throughout and connective tissue, so if they were grilled, fried, or cooked quickly in some other way they would be as tough as old boots!

    When cooked with a slow cook time, over a low heat, the collagen will eventually break down and melt, creating a fork tender piece of meat.

    My favorite, no fail, piece of beef for my Instant Pot Pot Roast is the boneless chuck roast, it works for me every time.

    How To Buy 1 Pound Pork Loin Roast

    The hardest part about cooking for two is buying a small quantity of meat.

    Due to cost saving, most grocery stores sell pork roasts in 2-3 pound packages. This is too much meat for one dinner, so you have two options:

    1 If your store has a butcher counter, ask them to cut a 1 pound piece.

    2 If your store doesnt have a butcher counter, buy the smallest roast you can then portion and freeze. This is where a digital food scale comes in handy so you can divide the meat into equal pieces.

    My pork loin weighed about 2.25 pounds. I cut the meat into two equal pieces weighing slightly over 1 pound. Although they arent perfect 1 pound pieces, they are close enough to make pork roast for two.

    Wrap the extra meat in plastic wrap then place in a freezer bag. Freeze for up to 6 months.

    Instant Pots have become a bit of a craze and theres a lot of different information online. No wonder some people are confused. Different blogs will give you different times.

    Were here to clear up the confusion and give you a couple of very simple principles to work with.

    Cooking time depends on 3 things

    The time youll need to cook a roast in your Instant Pot depends on 3 things: ;

    • the size of your piece of meat,
    • what type of meat it is ,
    • and whether it is;frozen or thawed.

    We recommend never cooking meat from frozenthaw it first for tenderest and juiciest results. It can be done, however, and weve provided times for that method too.

    Dont overdo it

    Remember, once you have overcooked a piece of meat, you cannot undo it. If overcooked, it will be dry, grainy, and sometimes inedible. You can always cook an undercooked piece a few minutes longer though.

    So, principle number one is this: no matter how ridiculously short the cooking time in the instructions sounds, try it. You can always add a little more time after checking.

    If youre unsure, use a meat thermometer to check. The internal temperature of the meat should be 145F/63C when done.

    If youre roasting a chicken, you will need just 6 min per pound. So, for a 34-pound chicken, you should cook it for 18-25 minutes. If frozen, add another 3 min for each pound.

    These calves arent fattened on GMO grain, which makes it a little leaner. But, when cooking it this way, its not the least bit tough! Its just as tender as the store-bought beef.

    How To Serve And Store Pot Roast

    Serving: Instant Pot pot roast gravy and meat are best served after you let cooked dish sit for 30 minutes to an hour. Flavors marry each other and have less of a sharp taste. Its just better that way but of course its hard to wait that long sometimes.

    I would serve this pot roast with a simple leafy green salad like spinach salad or lemon kale salad. Sign me up.

    Storing and reheating: Leftovers keep well for 3 days. If you have enough space in the fridge, you can store roast in inner pot with silicone lid. Then reheat right on the stove or in Instant Pot by pressing Saute.

    Freezing: I would freeze the roast itself but not the potatoes in an airtight container for up to 3 months.

    This recipe is truly a throw it in recipe.; My only preparation is cutting the roast into chunks and quickly mixing up the soup mix with some water.

    I use a wire trivet to avoid anything sticking to the bottom.; I add a 1 1/2 to 2 lb bag of baby carrots and then place the roast chunks on top of the carrots.; Lastly, I pour in the soup mix all over everything.;

    My kids prefer mashed potatoes with their roast, so I make them separately.; But you can skip those and use quartered small red potatoes or tiny potatoes with the carrots.; If you do this, I recommend just adding 1 lb of baby carrots so everything will fit into the Instant Pot.;

    My family likes their roast with gravy. When the roast is done, I take out the carrots and roast and turn the soup into a gravy.; I turn the Instant Pot to saute and let the soup mix reach a boil.; Then, I mix up cold water with corn starch and add it to the soup and stir.; It takes just a couple minutes to thicken into a delicious savory gravy that is perfect for the roast and mashed potatoes.;

    How Long Does It Take To Cook A 26 Pound Roast

    Roast for about 13-15 minutes per pound for rare, 17-19 minutes for medium, and 22-25 for cooked through. Check the meat with a thermometer to make sure it is the temperature you want it145°F for medium rare, 160°F for medium. (Baste the roast a couple times while cooking, and keep an eye on the vegetables.

    Tips For Making Pot Roast

    • Pot roasts can be made using many different cooking methods. If you dont have an Instant Pot, you can try our recipes for making pot roast in the slow cooker or in the oven .
    • To avoid mushy vegetables just add them later! 10 minutes before your cooking time is up, release the pressure and add the carrots and potatoes. Press cancel and then re-set to high pressure for 8 minutes. If you have bigger potatoes or potato dices, cook for 10 minutes.
    • If you have leftovers, roast can easily be shredded and frozen to eat at a later date. Just remove any vegetables and place in a Ziplock bag to freeze. When ready to re-heat thaw in the refrigerator overnight and reheat or add to your favorite shredded beef recipes.

    Chuck roast is cut from the shoulder just above the short rib. Its a tougher piece of meat, but has significant connective tissue marbling. When you cook the chuck roast low and slow, the tissues soften and become tender.;Because chuck roasts are tougher, they are often cheaper pieces of meat. Not to mention, chuck roasts are easily found in most grocery stores nation-wide.

    You might be able to use a beef brisket or beef bottom roast using this recipe, I just havenât personally tried it myself. Either may need a few more minutes of cooking to achieve the same super-tender consistency.

    How To Make Instant Pot Gravy

    While the pork roast is resting, you can make gravy in the Instant Pot with the leftover broth and meat drippings.

    After straining the vegetables, pour the liquid back into the pot. Stir together the cornstarch and water then stir into the broth.

    Select Saute then bring to a boil. Cook until thickened then taste for salt.
