When it was first launched, there was just one classic model called Instant Pot Duo 7-in-1. It came with an outer pot with button controls and a display screen on the front, the 6-quart stainless steel inner pot and the special lid with steam release handle and the pressure valve.

In the last few years, the Instant Pot company has released multiple new versions and sizes. We have Duo Plus, Nova, Viva, Ultra, and Max to name a few and most of them come in 3 popular sizes 6-quart , 3-quart and 8-quart . Each new model came with more functions and buttons, more sophisticated display screens and finer adjustment possibilities. The makers have also made some improvements to the lid, so the steam-release handle changed to a simple knob button on later versions.

However, as confusing as all these new models may seem, they all do exactly the same thing cook food under pressure in a controlled, safe environment. In our opinion, the newer models like Ultra and Max seem much more intimidating and overwhelming with bright digits and hi-fi buttons, so we prefer to stick with the classic models. The Instant Pot Duo gets a major upgrade in this latest iteration. Not only do you get a sleek, stainless steel finish, you get 25 smart programs. One significant difference between this version and the original is that the Instant Pot Duo Plus with Whisper Quiet Steam Release trades sous vide cooking capability for a cake making feature.

Now let’s get into the obvious difference between this model and the regular Duo Plus: the steam release. Instant Pot’s latest technology and design allow the machine to diffuse steam more quietly than ever. It also gives you the option to use a remote button so you can open the cooking pot at a distance for extra safety. But is it worth buying this one over the original Duo Plus? There’s actually just a $20 difference between the two models, so we’d say the advanced steam release technology and aesthetics of this version make it worth itbut if you’re really into sous vide-cooking, we’d stick with the original Duo Plus.

Other Instant Pot models that weve reviewed but arent mentioned here include:

  • Instant Pot Pro Plus: This model connects to your phone so that you can read more about whats going on inside the pot. While this is convenient, I dont love the full touch-screen display. But if you are shopping for a tech lover or see it for a great price, it could be a good choice for you.
  • Instant Pot Max: This model can go up to 15psi, which can be used for canning under very strict conditions. However, I dont love the pressure release system in this model, especially for cooking pasta.
  • Instant Pot Duo Evo Plus: This model has been discontinued and replaced with the Pro. I dont love it because it can be a little buggy and can overheat in saute mode, and we had a problem with the float valve breaking.
  • Instant Pot Ultra: This is an older model, and I dont love the all-dial control. The Pro model, which uses a combination dial and button system, is much more user-friendly, in my opinion.

The Best Instant Pot: Instant Pot Pro

What we liked: This model pressurized the quickest and offered the best searing and sautéing experience, with a stable, non-spinning pot. The ability to use the stainless steel inner pot on an electric, induction, or ceramic stovetops was welcome, as it gives the user greater flexibility and control. Releasing the steam feels straightforward and safe because of its separate push-button release and the plastic cover around the steam valve. The control panel is easy to navigate with a mixture of buttons and a dial. We also liked the handles on its cooking pot, which made it easier to lift the pot up and out of the Instant Pot’s base.

What we didn’t like: Its pretty expensive, and while the sous vide function works, although it isn’t nearly as reliable as an immersion circulator.

Why Arent The Other Instant Pot Models Wirecutter Picks

The Duo Plus is an upgraded version of the Duo series . But the differences are so minor that we dont think the price hike is warranted . The only real changes in the Duo Plus are a sous vide setting and the display . But compared with the Duos design, the Duo Pluss screen is smaller, and the control panel isnt nearly as streamlined. Also, the Duo Plus lacks features that make the Pro special, namely the improved inner pot, the additional temperature-control options, and a quieter steam-release valve.

The Instant Pot Max offers a higher pressure setting than other Instant Pot models have, as well as stirring and sous vide features. In theory, such features should increase the overall functionality of the cooker and speed up cooking times. Unfortunately, during testing, we found that the Max took longer to come up to pressure, the sous vide feature never reached its target temperature, and the stirring function left much to be desired. Ostensibly, the Maxs higher pressure setting makes it a better option for those whod like to use their Instant Pot for canning. But we havent tested it for that use specifically, so we cant address those claims.
