Instant Pot Venison Tips In Mushroom Gravy

Did you get one? On Black Friday? An Instant Pot? I got an email saying they were only $68.95 and I about broke my neck racing to the computer to get my order in before midnight.

Just so you know, I am so not an appliance person. I really try to keep it minimal in my kitchen, although, yes, I have some appliances I could not live with out. But I had heard so many good things about the Instant Pot, and it was such a good price, I just had to.

So Im not going to scream I AM SO IN LOVE WITH THIS APPLIANCE I WANT TO MARRY IT because I want to be real here and completely truthful, but I am definitely in like. And in its defense, Ive only used it about three or four times, so I feel like I havent really had time to bond. I may fall in love one day. That is not out of the question. But for now I am firmly grounded in liking it with a strong desire to get to know it better.

Some things I like about it:

Somethings I dont like or some things to think about:

Im sure I will have many more Instant Pot recipes to come, but for now Ill start with this. Were in the middle of deer season in Mississippi, and deer is like, free.

So this simple recipe is one Ive made in my slow cooker many times, but since the Instant Pot is all the rage, I thought I would adapt it.

I loved the way it turned out. I serve it over rice, but read my notes for some more ideas.

My notes:

I serve this over rice, but mashed potatoes or pasta would be good too.

Health Benefits Of Venison:

Venison is considered to be the perfect choice for individuals who are either health conscious or watching their weight. With an abundant supply of proteins and nutrients, venison contains little fat and fewer calories than many leading types of meats found in stores today. Venison also contains no additives or antibiotics that nearly all other store bought meats contain.

  • Venison is high in protein and iron and low in saturated fat. For those who have an iron deficiency, eating venison can be a great way to help add much needed iron to your diet.
  • B vitamins for energy and cardiovascular health: Vitamins B12, B6, and riboflavin are all found in venison. Not only do they increase cardiovascular health, but these vitamins help prevent against colon cancer, strokes, migraines, heart disease, and osteoporosis.
  • Improves energy metabolism
  • Helps with menstruation and pregnant woman
  • Supports skin, hair, nail, and muscle health: I can attest to this health benefit. I have been eating venison my entire life, and my hair is thick and grows just as fast as my nails. I’m constantly having to cut them both.

Venison is described to have a gamey and deep woody flavor, yet berryâlike red wine. Venison is supple and tender and is a highly prized meat that has wonderful flavor. Although the diet of the deer is going to alter the flavor of the meat slightly each piece of venison can be associated with these flavor.

Substitutions For This Instant Pot Venison Stew Recipe

  • Avocado oil Any high heat oil will work here such as grapeseed.
  • Venison Backstrap You can also use venison tenderloin or venison stew meat in this recipe.
  • Coconut aminos There really is no true substitute for coconut aminos. This is one of my favorite ingredients that adds depth of flavor and some sweetness to this dish that balances out the acid of the tomatoes. In some recipes soy sauce or tamari are suitable substitutions for coconut aminos but not in this recipe so if you really need a substitution you can either omit the ingredient all together or substitute 1 Tablespoon sugar or honey in its place.
  • Apple cider vinegar Red wine vinegar would work here as well.
  • Molasses Molasses helps us build the depth of flavor for this recipe however if you dont have it you can omit it.
  • Cinnamon You likely have cinnamon on hand and if you due youre just going to have to trust me on this one. It might seem like an odd stew ingredient but its truly the magic maker!

Instant Pot Frozen Pot Roast

Instant Pot Pork Loin

You can easily prepare a pot roast using a frozen chuck roast when cooking in the Instant Pot. Unlike slow cookers, the Instant Pot will get hot enough in a short amount of time to safely cook frozen meat.

  • Skip searing the meat, as you can not sear a frozen cut of meat.
  • Place the frozen beef roast, salt, pepper, garlic, and onion powder inside the pressure cooker.
  • Pour in beef stock around the roast, then top the roast with horseradish.
  • Cook on high pressure for 30 minutes per pound For a 3 pound roast that would be 90 minutes.

Venison Roast Gets Fall

So, you guys went BONKERS for my Instant Pot Venison Stew which was the inspiration for this Instant Pot Red Wine Venison Roast. And, I mean, for good reason because its tah -die- foorhh , honey. Its the most popular recipe on the site by a landslide now. It even beat out the forever favorite Roasted Bone-In Chicken Thighs this winter.

Anywho, I begged Jared to get us some roasts this November when he harvested his Ohio buck. We just moved into our first home, so up until now, weve been relying on butchers to process our deer for us after J quarters them in the field. Processing a deer isnt really too possible in a second story apartment, lol.

Back to the Instant Pot Red Wine Venison Roast. My stew recipe taught me that the Instant Pot is a one way ticket to tender venison town. It creates fall apart meat like no other.

What I do to make this happen with a roast, is start by searing it as hard as I can on the saute cycle for 10 minutes.

Then I add my braising liquid which is a good bit of red wine some balsamic, and herbs dProvence with a healthy amount of salt and pepper. The braising liquid combined with the pressure cooking powers of the IP are the magic here.

The trick is to cook the meat on its own for an hour. You then release the pressure, add the veggies and cook for 10 more minutes. Thats how you get fall-apart meat and not soggy veggies, friends. Youre going to LOVE this Instant Pot Red Wine Venison Roast.

Stick with me, kid. Ill learn ya .

Why Use The Instant Pot For Venison

This single kitchen appliance can replace several of the gadgets that are probably taking up space in your kitchen right now. Its best feature is that it is a very user-friendly pressure cooker.

But it also works as a slow cooker and a steamer. In addition, you can use it to sauté, to make soups, and to make yogurt. Thats just a quick overview of what this little beast can do. Its ideal for all kinds of game meat.

I used to use my slow cooker on a regular basis, but I dont think Ive used it even once since getting my Instant Pot. Youll find that RV and tiny house dwellers often tout the benefits of owning an Instant Pot, and for good reason: it packs so many uses into one little package.

Before I had my Instant Pot, I never used pressure cookers. I found them slightly intimidating and complicated.

I remember my mom using a pressure cooker frequently when I was a kid to cook game meat and to can vegetables from our garden. But I also remember one particular time when the lid exploded off of it and it sprayed boiling hot food all over the kitchen. Luckily, nobody was in the room at the time, or it could have been an epic disaster. Instead, we just had food stuck all over the ceiling and walls. Perhaps that has something to do with my aversion to pressure cookers?

How To Add More Spice To The Recipe

How to Cook Pork Tenderloin in Instant Pot

I looove experimenting with my Instant Pot recipes. To spice this one up a bit, try adding some gravy, red wine, and aromatic vegetables.

  • To make your venison au jus, take the pot juices left after the cooking and thicken them with 1 tablespoon of corn starch.
  • To make sure the gravy isnt lumpy, mix the corn starch with a bit of the meat juice you set aside before adding it to your gravy saucepan.
  • Cook the gravy for 5-10 minutes.
  • The addition of red wine will add deep flavor to your gravy, while 2 teaspoon of Worcestershire sauce will give it a piquant punch.

If you want less saturated fat per serving, go without the gravy. The original recipe includes 2 tablespoon olive oil, so this is the only fat you really need.

How To Make Venison Stew Instant Pot

The Instant Pot truly makes this stew recipe a breeze. Its one of the easiest venison backstrap recipes and comes out tender, flavorful and delicious every time!

First, turn the Instant Pot to Sauté mode and add the avocado oil, venison and a pinch of salt and pepper and sauté to brown the meat for 5 minutes. Now add in the onions and garlic and sauté for another 3-5 minutes until the onions begin to become translucent.

We want to scrap up any bits stuck onto the bottom of the pot so we dont get the burn notice while pressure cooking so deglaze the pot with the beef broth and use a wooden spoon to scrap the bottom of the pot. After deglazing, add all remaining ingredients and stir to combine. Place the lid on the Instant Pot, lock, set the steamer valve to sealing and select high pressure or manual and select 30 minutes.

Once the cooking time has finished, allow the Instant Pot to naturally decompress for 10 minutes before quick releasing any remaining pressure. After all the pressure has released, remove the lid, stir and taste. Add more salt if desired then serve and enjoy!

Backstrap And Broccoli In The Instant Pot

If you forgot to get dinner in the slow cooker, dont despair! You can also make this recipe in a pressure cooker.

The results are about the same, but you can have it done in under an hour instead of letting it cook all day. Just cook the meat in the flavorful sauce, then add the broccoli and steam until just tender.

Then all you have to do is add the cornstarch slurry to thicken it up and serve it over rice. Both methods are absolute winners!

We love this just the way it is. My husband also loves it with sriracha. He likes everything a bit hotter! I think it is really good both ways.

    Pressure Cook With Chicken Broth

Chicken broth is the perfect liquid for pressure cooking pork. It adds flavor that you simply cannot get with water. To round out the flavors, well be adding some Worcestershire sauce and liquid smoke. These flavors work together to bring about a boldness and savory aspect that youd normally get from the smoking/slow roasting methods of traditional BBQ. Naturally were going to emulate those flavors and the combination of Worcestershire and Liquid Smoke in the pressure cooker works wonders.

After youve deglazed the pot, add the rest of the wet ingredients and place the chunks of pork directly into the liquid. Dont stack it, spread it out as best possible. Secure the lid, close the vent and pressure cook on high for 1 hour. After the hour is up, let the pressure release naturally for 20 minutes. After 20 minutes you can quick release any remaining pressure.

    Instant Pot Venison Pot Roast

Venison pot roast used to be a weekend only thing for me due to the 10 hours of slow cooking it took to get it tender. Then there was the guess work of when to add the veggies. If you added them in the beginning, they became mush. If you waited too long to add them, they were underdone and to get them done, the venison got overdone. Instant Pot® to the rescue! The end result is perfectly tender venison roast and perfectly crisp-tender veggies, all in 3 hours.

    What Is Pot Roast

Pot roast is more of a method than a specific cut of meat. To make it, sear a large cut of beef until browned on all sides, and then cook it with aromatics like herbs, onions, carrots, and broth until its melt-in-your-mouth tender.

You can make this in a Dutch oven on the stove-top, in the oven, in a slow cooker, and in a pressure cooker. In this recipe, we are using a pressure cooker to make the pot roast. A pressure cooker takes the cook time down dramatically.
