My recipe has these incredibly easy, homemade egg noodles. You can definitely use dried noodles, but just promise me youll make these at least once sometime, okay?

The ingredients are super simple- just flour, eggs, water, white pepper, and baking powder.

The trick to the noodles is to flour generously and let them rest between stages. Mix up the initial dough, REST. Roll out once, REST. Roll out again, REST. Enjoy the most satisfying bowl of soup ever, REST.

When youre ready to roll them out, you need to dust with a little flour with every step- rolling, flipping, cutting, tossing. The noodles expand while they cook, so youll need to keep that in mind when youre choosing how big to cut them!

I add the noodles to the soup after pressure cooking on the saute feature. They take only a couple of minutes to cook up. Youll know theyre done when they float to the top! Make sure you taste one to make sure its done!

What Cut Of Chicken To Use

Whole Chicken I prefer to use a whole organic chicken for this soup. It produces a thick, rich broth that is delicious and nourishing in your soup.

Whole Cut Chicken You can also have your butcher go ahead and cut up the whole chicken for you to use in your chicken noodle soup, if you prefer. I would still recommend using organic chicken if at all possible.

Chicken Thighs and Breasts my third choice for my soup recipe is to use a mixture of chicken thighs and breasts. I still look for bone in and skin on as they produce the best broth, in my opinion.

Chicken Breasts my last choice for my chicken noodle soup is to use a boneless, skinless chicken breast. While this is still delicious, the chicken broth isnt as thick and rich as it is if using the other cuts of chicken.

How Do You Add Flavor To Chicken Noodle Soup

Adding flavor to chicken noodle soup is quite simple. Here are some of our favorite ways to do so.

  • Citrus: adding a little fresh lemon juice to your soup after its done cooking will really brighten things up.

We tried this chicken noodle soup recipe with both stocks. Its definitely best to use homemade chicken stock for a boost in flavor. If youre using store-bought chicken stock, be sure to use an unsalted or low sodium version.

Can I use a whole chicken breast?

Yes! To kick our chicken noodle soup up a notch, we used a whole chicken breast. We cut the breast in half and removed the bones, then added the bones for even more chicken flavors! Or you can throw in a few chicken bones you have in the freezer

Can I cook the noodles on stovetop?

Yes! You can reduce ~12 minutes overall cooking time by cooking the wide egg noodles on the stovetop instead of the Instant Pot. First, bring 4 5 cups of unsalted chicken stock to a boil, then cook the noodles in boiling chicken stock. You can cook the noodles while the chicken is pressure cooking in the Instant Pot.

Pressure Cooker Chicken Soup In Less Time

My Moms chicken soup recipe isnt exactly an all-day affair like most chicken soup recipes. There are shortcuts, mainly store-bought broth and diced boneless, skinless chicken breast.

About half the time, I make this shortcut version of chicken soup, because its so easy, fast and delicious! The rest of the time, I make the all-day verison, where I start with aromatics and a whole chicken in water and let it slowly simmer on the stove all day.

I will admit, I love both versions, but opt for the easier one most of the time.

Absolutely, you can freeze this chicken noodle soup Instant Pot recipe. You can always use a glass or plastic container, but when it comes to soup, I prefer freezer bags. The reason is that you can place the soup in the bag, lay it flat in the freezer until its frozen, then you can move it to make for more room in the freezer. Saving space is a massive win in my book.

Not to mention, that soup in a freezer bag defrosts so much faster than in any other type of container. When I want to defrost a bag of soup, I will fill my sink or a large bowl with cool water. Then set the bag inside of it. Within a few minutes, the soup will begin thawing out beautifully.

Type Of Noodles To Use

You can use any type of pasta for chicken noodle soup. However, wide egg noodles are a popular choice because theyre thin and have more surface area, so it cooks quickly in the simmering chicken stock.

What Is The Best Pasta To Use In Chicken Noodle Soup

I love to use fettuccini noodles, my Grandmother loved to use egg noodles and when Sam was a little fella I would use thin spaghetti noodles that I would break into 1-inch pieces so they were easier for him. Egg Noodles Egg noodles have a higher amount of egg than traditional pasta. Thick egg noodles are delicious in chicken noodle soup. I prefer to use the short, dried twisted variety in this soup as it doesnt seem to fall apart as easily as the fresh pasta in the refrigerated section when using the Instant Pot.

Fettuccini Thick fettuccini noodles make a great pasta to use in this soup and are my go-to pasta of choice when I make my recipe. They are wide enough to allow for a bite.

Spaghetti Noodles Another great pasta to use is spaghetti. This is generally the pantry staple pasta and makes for a quick go-to addition to chicken noodle soup in a hurry. You can use your favorite thickness of spaghetti noodles from thin to thicker to find the one you love!

Saut Mushrooms Onions & Garlic

Instant Pot Chicken Noodle Soup

First, heat up Instant Pot , then wait until Instant Pots indicator says HOT.

Then, pour 1 tbsp olive oil in Instant Pot Pressure Cooker.

Add chopped white mushrooms, a pinch of kosher salt and ground black pepper in Instant Pot, then stir to evenly coat the mushrooms with olive oil.

Now, let the mushrooms moisture evaporate as you occasionally stir until mushrooms are slightly crisp and browned.

Add diced onions & minced garlic in Instant Pot, then cook until onions soften and fragrant .

Add bay leaf, chopped carrots and celery in Instant Pot, then stir and season with kosher salt and ground black pepper if you like.

ONION I prefer yellow onion, as it has mild flavor as compared to red onion.

GARLIC adds a ton of flavor to the soup. Fresh garlic or garlic powder, both work fine.

GINGER hot and zesty, peppery ginger, adds spiciness and warmth to the soup

CELERY adds a nice texture to the soup.

CARROTS carrots add an extra flavor to this soup, you can chop the carrots or shred it.

CHICKEN I am using boneless, skinless chicken breast for this recipe. However, bone-in chicken may also be substituted instead of chicken breast. If using bone-in chicken, make sure you have enough chicken meat to add to the soup after you shred the chicken.

I sometimes even use the leftover rotisserie to make this soup and it tastes delicious.

NOODLES I am using egg noddles, however noodles of choice may be used.

HERBS herbs that go well with this soup and some of my family favorites include thyme, rosemary, parsley. I use one or combination of herbs to add more depth and flavor to this soup. You can use any herb of your choice.

SPICES love the herbal, minty flavor of bay leaf

BROTH low sodium broth adds an additional layer of flavor. Low sodium broth helps control the sodium intake. You can also use a bouillon, mix it with water as per package instructions and use it.

How To Make Homemade Chicken Noodle Soup

This chicken noodle soup is ready in just half an hour, and below are the detailed steps that anyone can follow .

Step 1.

Open the Instant Pot, make sure that the metal bowl is inserted. Click on Saute, choose 5 minutes and keep the lid open.

Add olive oil, and saute a diced onion, crushed garlic, and a chopped carrot.

Step 2.

Place the rest of the ingredients in the Instant Pot bowl .

This includes 2 chicken breasts , bay leaves, peppercorns, spice, herbs, and salt.

Step 3.

Add 8 cups of chicken stock. It can be either cold or warm, it wont make a difference. You can use homemade chicken stock, store-bought liquid chicken stock, or just use hot water and add 1 cube of stock to it.

Step 4.

Close the lid, make sure that the valve is in sealing position.

Choose the Pressure Cook program, set it on high for a total of 10 minutes. Leave the IP do its magic and come back once its done.

Step 5.

When the cooking is finishing, quickly do a quick release. Open the lid, and using metal tongs take out the chicken breasts.

Step 6.

Using 2 forks shred the chicken, and set aside.

Step 7.

Back to the Instant Pot, set the program on saute again and choose 10 minutes. Add the dried egg noodles to the soup and leave them to cook. I usually use a lid to let the noodles cook quicker. If you open the lid, youll see that the soup is boiling, a lot, and thats okay.

Step 8.

When the noodles are soft enough for you, dump in the shredded chicken in the soup and serve.

Pressure Cooker Chicken Noodle Soup: The Chicken

I grew up eating Campbells chicken noodle soup which, if memory serves, was made up mostly of mushy noodles and salt. Gosh. I loved that stuff. Even as a kid, I remember thinking there wasnt enough chicken in the Chicken Noodle Soup. My favorite spoonfuls involved bite-sized pieces of tender chicken. And it always seemed like those cans of soup had one, maybe, of those bits in them.

Not this recipe! This recipe makes a soup thats loaded with pieces of tender chicken. And I wouldnt have it any other way.

As I mentioned in the recipe for pressure cooker burrito bowls, boneless, skinless chicken thighs are my favorite cut of chicken to use in a pressure cooker. Theres enough fat to keep the chicken moist and tender under pressure. Chicken breasts tend to get rubbery cooked in a pressure cooker. So youll rarely see me call for boneless chicken breasts on this site.

However, if you want to use chicken breasts, this is a great recipe for them. The chicken gets cut so small that texture isnt really an issue. That said, I encourage you to try chicken thighs at least once. The flavor tastes so much better than chicken breasts that I bet youll love it!

Cook Fast, Eat Well Tip: Cut the Chicken Before You Begin

Most recipes for chicken soup call for you to cook the chicken breasts or thighs whole and then cut it up after the soup has cooked. I dont do this. To save time, I cut my chicken thighs into bite-size pieces before they go into the pot.
