How to Make Instant Pot Beef Bone Broth

This was actually the way I have made our bone broth for years. I have prepared it all and let it simmer for 12-24 hours, sometimes even 2 days. One disadvantage for us was, that our stove is programmed for safety to switch off after a certain time. So I used to wake up some days with my bone broth being switched off, but still pretty warm. In that way, I just switched it back on and continued simmering for as long as needed.

Whats The Difference Between Chicken Broth Chicken Bone Broth And Chicken Stock

Each consists of a liquid made from chicken parts but they are not the same although related. They are often referred to as synonyms but they are different things.

Chicken Broth a light and flavorful liquid made from chicken meat and vegetables simmered or cooked in water for a shorter period of time . After cooking, the liquid is strained and the solids discarded. Because it not as thick or gelatinous as stock, it is more suitable for drinking although you can also use it to cook soups and stews. When chilled, it stays fluid. ;

Chicken bone broth it is a hybrid between broth and stock and so it uses a combination of meat and bones, having a solid chicken base. The reason why I used chicken bones from the carcass and added chicken necks which are bony meat. But you can add wings, wing tips, or backbones instead. I used the Instant Pot to shorten its time but you can simmer on the stovetop for about 24 hours. The goal is to extract the gelatin and other nutritious compounds and minerals such as glucosamine, amino acids, electrolytes, and calcium. It is thicker than broth but not as thick as stock.

As you can see, they differ in some ingredients, cooking time, and thickness.;

How To Make Instant Pot Chicken Bone Broth

You can make bone broth with any kind of bones, but I want to share the one I make most often chicken bone broth.

Iâve made making fresh bone broth in the Instant Pot part of my weekly routine. Just like I wouldnât skip taking my garbage out or packing my kidâs lunches, I donât miss making my broth. Hereâs how

Step 1: The Bones

Now that weâre making bone broth in the Instant Pot, we always have a whole roast chicken one night per week. .

Logistically, this usually means eating an early Sunday-evening roast chicken dinner with my family. After dinner, I throw everything in the pot and start it. Then, I do the kidsâ bedtime routines and my own Sunday-evening stuff. When the timer goes off on the Instant Pot, I strain and package it up, clean up the kitchen, and Iâm ready to start the week.

After we eat, the bones go one of two places: into a bag in the freezer or straight into the Instant Pot. Along with the bones goes anything else we didnât eat . Any extra meat goes into the fridge to eat in the next few days.

Sometimes I add in chicken feet if I have them .

If your bones are frozen, you donât need to thaw them just put them in the Instant Pot straight from the freezer.

Step 2: The Extras

You can make great-tasting bone broth with just bones, water, and a little salt. But I usually like to add a few other things. These are some common extras I throw in the Instant Pot:

  • Onions
  • Herbs
  • High-quality natural salt and pepper

Step 3: Add The Water

Many sites recommend the addition of vinegar to help draw the minerals out of the bones. I did this religiously for many years. Since I was struggling with my bone broth and it didnt gel properly, I decided to experiment and noticed there was no correlation between adding vinegar and my bone broth gelling. My observation was confirmed by the book The Bone Broth Diet by Dr. Kellyann.

Do I Have To Blanch The Bones

No. But if you have a little extra time, its highly recommended. Why should you blanch your bones? Blanching removes impurities from the bones. While these impurities wont hurt you, theyre not pleasant and, even after straining, will leave your broth looking murky. If you dont blanch your bones, be sure to strain your cooked broth through a fine-mesh cheesecloth. Will blanching remove a significant amount of gelatin and nutrients? No. I promise youll have plenty leftover.

I talked in this post about how youll almost always find a mysterious bag of bones in my freezer. Theres also probably some onion peels, carrot nubs, parsley ends and celery leaves in there its my bag of bone broth making goodies. All that stuff that youd typically throw away in the garbage is perfect for making bone broth, or stock as its otherwise known.

I also use this technique for my homemade seafood stock recipe.;

So, whenever Im chopping up some veggies for dinner, Ill pull out that ziploc freezer bag and just load those peels, ends and leaves in there. And, when Im making something like this Easy Roasted Chicken or these Short Ribs, those bones will find their way in there too. When the bag is full, I just empty it into my Instant Pot, add a good glug of apple cider vinegar and add water to 1-inch below the fill line. Then, I just set it to cook on high pressure for 120 minutes.

Once the 2 hours is up, I let the pressure release naturally and voila! Strain the broth and discard the bones and veggies and youre left with the most beautiful, golden broth!

I do not recommend using plastic bags because in my experience they ALWAYS LEAK when you thaw to use them. It is a huge pain in the patoot to have to find something big enough to fit them in in the fridge while they thaw to catch the leakage.;

To make adding the broth to the jars super quick and easy, I also use a wide mouth funnel and a small fine mesh strainer BUT just today I ordered a new product I saw, that is a strainer BUILT-IN to the funnel!! I can’t wait to start using it. And, of course, you need a ladle!;

    How to Make Bone Broth in an Instant Pot

    Here are some of the questions I asked myself when I first started making bone broth and get asked by others:

    What if my bone broth doesnât gel?The collagen in the bones is what makes bone broth turn into a semi-solid gel when cooled. If your bone broth isnât gelling, it just means the ratio of collagen to water isnât quite high enough. But actually, that is OK your broth is still full of powerful nutrients. If you really want your broth to gel, you may need to use more bones or add in some more collagen-rich parts, like a few chicken feet.

    Can I use other bones or a mixture of bones?Absolutely! You can use chicken, turkey, duck, lamb, pork, and beef bones and Iâm sure a few others I forgot to mention here. If youâre using raw bones, I recommend roasting them in the oven at about 425? until they are golden brown. This helps deepen the flavor of the broth.

    How can I use my bone broth?I drink it straight out of a mug, use it in cooking, to moisten leftovers, as a base for soups and stews, to make rice, and just about anywhere else Iâd use water in cooking.
