You can cook extra beans in your pressure cooker to have on hand for recipes.

  • Store leftover cooked beans in the refrigerator for 5 days. I keep the beans with a bit of the cooking liquid Just drain before serving.
  • Or freeze prepared beans in 1 to 2 cup portions in freezer safe bags/containers in the freezer for up to 3 months. You can add a bit of cooking liquid to the beans you plan to freeze as well.

Do You Need To Soak Beans Before Pressure Cooking

You dont need to soak beans before cooking them in an Instant Pot. Unsoaked beans will cook evenly and fairly quickly in a pressure cooker. In my experience, unsoaked beans split apart less during pressure cooking. So if you forget to soak your dried beans or you just dont want to soak them, you can still make delicious pinto beans in your Instant Pot.

However, soaking beans for 8 to 12 hours before cooking may make them easier to digest. Soaking helps to remove some of the gas-causing sugars from the beans. Soaked beans will also cook faster.

When I remember to plan ahead, I soak my beans because its hardly any more effort. You can decide what works best for you and your schedule.

This white bean ragout is full of healthy ingredients. This white bean and pancetta ragout is inspired by classic French white bean stews that are simmered for hours.

Using an Instant Pot to cook white beans cuts down on the cooking time, letting the stew build layers of flavors highlighting the pancetta and creamy texture of the white beans.

The term ragout, which is French for a slow-cooked stew made with meat or fish and vegetables can easily be confused with ragu, which is an Italian term used for a hearty sauce served with pasta. What we love about ragouts is how they can feel comforting and refined at the same time.

The addition of a little pancetta helps the stew taste rich and flavorful while letting it stay healthy. This recipe is an excellent example of how a little pancetta can add an enormous amount of flavor and complexity to a dish.

A helpful tip when youâre cooking beans in an Instant Pot is to cook the beans until their almost tender, before adding the other ingredients. The reason for this is the beans need a lot more cooking time than carrots, onions, etc. and if theyâre added when the beans first start cooking, they end up as mush.

This Instant Pot White Bean And Kale Recipe Is Good To The Last Drop Of Herby Earthy Broth

This dish is proof that things that dont pan out initially can sometimes unexpectedly end up better than what you originally had planned.

I dont even remember what I had intended to cook one night recently in my Instant Pot, but whatever it was, the main ingredient was not to be found at the farmers market. I knew I had to use the kale and shiitakes I had collected for the original recipe, so as is often the answer in my house, I turned to beans specifically, small white beans.

I wanted to make this a dish I could eat broth and all, because I know how much flavor the beans impart to their cooking liquid. To supplement that rich base, I built a foundation with onions, garlic and those umami-packed mushrooms. Taking a little inspiration from a favorite white bean dip recipe, I tipped in some dried rosemary and thyme. To avoid diluting the broth and to give it a chance to take on silky body from the beans, I borrowed an idea from one of Melissa Clarks cookbooks and cut way back the amount of water I cooked the beans in just 7 cups. Then it was time to let the Instant Pot work its magic . After half an hour, the beans had just about reached my creamy ideal, so I popped open the lid, packed in the kale and pressure-cooked it until it was barely wilted.

Instant Pot White Beans Recipe

Black, white and green weve collected our favorite Instant Pot bean recipes, as well as other legumes like chickpeas and lentils, to satisfy that legume craving. Beans are part of most cultures around the world for they are inexpensive, simple to prepare, and healthy.

This Instant Pot mac and cheese recipe uses a mixture of mild white cheddar, parmesan, mozzarella, and cream cheese. When you add the cheeses, make sure to stir continuously so that it all melts in really well and you arent left with any clumps.

Instant Pot Braised White Beans And Kale

I always have canned beans in my pantry, but if you want beans with the most flavor, you want to cook them yourself. Making beans from scratch requires a little more time and prep work, but thanks to the instant pot they will cook in minutes instead of hours with maximum flavor. I like to serve these instant pot braised beans with kale alongside some crusty bread for the perfect simple meal, but theyre also a great side dish. For my kids I wrap the beans into a tortilla and add some cheese for a little bean burrito. Ive learned that my kids will eat just about anything wrapped in a tortilla with cheese!

How to Make Beans in the Instant Pot:

  • The first step is that youll need to soak your beans for 8 hours or overnight. I know this requires a little bit of prior planning, but its worth it!
  • Add your aromatics to the instant pot. Since youre cooking your beans from scratch, this is the perfect opportunity to infuse them with flavor. Shallots and garlic are sautéed in olive oil or butter before adding thyme, rosemary, lemon zestand bay leaves for maximum flavor
  • Let your instant pot do the work! Beans normally have to simmer for at least an hour on the stove, but in the instant pot they are ready in just 12 minutes.
  • After cooking, switch to the sauté function and add kale and a squeeze of lemon juice.
  • Serve with some crusty bread or as a side dish for a larger meal. For me, I like these braised beans all by themselves!

What If Rice Came Out Mushy Or Crunchy

When it comes to rice cooked in a pressure cooker, its a little bit of trial and error method for everyone. Sometimes different varieties of brown rice cook differently. Also rice could be old. I always use long grain brown rice and buy one brand. Last time my husband bought different brand and it needed maybe 1 more minute cooking. Once you find your rice you will know how long it cooks and you can add extra minutes.

If your rice comes out crunchy: stir, close the lid and let it sit for 20 minutes. It will get there. Also, next time cook for 25 minutes and let pressure come down on its own. It could be the altitude or rice and beans brand. Unfortunately, you cant re-close the lid, cook for extra 2 minutes and say that your new cooking time. You have to try recipe from scratch again to find your rice cooking time.

If your rice comes out mushy: cook a few minutes less next time. Easy-peasy.

How To Make A Freezer Meal

In a gallon size Ziplock bag, add all ingredients except water finishing with tomatoes on top. Let as much air out as possible, seal and freeze for up to 3 months. Pressure cook on High from frozen for 22 minutes with Quick Release.

In cooking these beans, I only used water too.

No broth. No salt or other seasonings. Just good ‘ol plain water.

Why no broth? I wanted cooked beans with no additional flavors, so they are ready to use in any recipe.

Cooking them with just water makes them ideal to use in vegan or vegetarian instant pot recipes too!

However, feel free to substitute broth for the water or add your favorite seasoning to the dried beans before cooking, if you wish.

I make these white beans all the time to use them in my healthy chili recipe, White Chicken Chili.

Pro Tips And Recipe Variations

Add tomato paste – Tomato paste gives the white bean soup umami and depth of flavor. Add it together with the stock/broth, before you pressure the ingredients.

Add dairy/cheese or coconut milk: Increase the richness of the soup by making it creamier. If you are not vegan, you can also add some half and half or grated Parmesan or Gruyere or Cheddar cheese at the very end. For a vegan alternative, use coconut milk or cashew milk instead.

Use fresh herbs: I used dried Italian herbs, but you can also use fresh thyme or rosemary to give it a lovely boost of flavor.

How To Use And Store Beans

One 15-ounce can of beans holds about 1 3/4 cups cooked beans, so substitute accordingly in your recipes. For reference, one pound of dried beans makes about five cups of cooked beans.

Let beans cool completely, then store in their liquid in the refrigerator for up to 5 days. Beans also freeze beautifully. I usually freeze them in their liquid in ziplock bags , which take up less space in the freezer and thaw more quickly. Freeze for up to three months.
