Now that your masa dough and pork filling are finished, its time to fill your tamales.

Start by removing two corn husks from the soaking liquid. Lay them flat on a work surface and spread 1/4 cup of masa down the center of the husks. Press the masa into a 4-inch square with a 2 to 3-inch border on the bottom.

Make Your Masa Tamale Dough

I use Maseca masa harina for all my tamales. It comes in a regular corn masa version and a tamal masa version. You can use either for tamales. We buy whichever is available.

If you want to try out your own corn tortillas too, you can buy the regular Maseca masa harina and use it for both tamales and tortillas.

For Fathers Day, Christmas, or any special occasion, you have to try these insanely delicious tamales.

  • Add raw chicken, salt, pepper, bay leaf, onion, and garlic to a large stock pot.
  • Cover with water. Cook for 45 minutes.
  • Let cool before shredding.

Discard the onion, garlic, and bay leaf. Reserve the chicken broth for another day.

You can very easily use rotisserie chicken. Just remove the skin.

We are basically following the same recipe as traditional Chicken Salsa Verde Tamales but cooked faster.

Have you thought about this but just werent sure if it was possible? It totally is and so easy too. If you have a Crockpot Express or Ninja Foodi those pressure cooker brands will work just as well. They all have the high pressure or steam function and you could use either one really.

For me this is too time consuming to make homemade, but you could. The meat inside would be precooked so youd just be steaming the masa. If you can find them frozen they are pretty killer, and no work on your part.

Lets start with a few basic tips:

    If your tamales are smaller, you will likely be able to get by with less timeyou could try a steam time of 10 minutes.

    You only need two things if yours are already made and youre only heating them up. If youd like to try and make homemade tamales you could do that too. I would suggest making them about the same size you see below so the cook time remains the same.

  • Bag of tamales frozen and not defrosted
  • Water or beef / chicken broth
  • Use a trivet with a small ramekin in the middle or better yet this vegetable steamer basket
  • Yes you could do this same thing on the stovetop in a deep pot but that would take longer. The whole idea is to just steam them until the masa dough is cooked and fork tender.

    Can you eat corn masa raw?

    No. It isnt safe to consume flour or eggs that havent been cooked yet. When cooking frozen tamales this isnt a concern as almost all of these are precooked and safe. Youd just need to defrost and warm them, steaming is the best method to get the entire thing tender and moist.

    Dont worry about going out and buying this basket. It is nice to have so they stay upright nicely but any trivet or steam rack will keep them out of the water. Setting something in the middle will help them sit up and not fall over. With a steamer basket there is already a handle there so a small ramekin isnt needed.

    Make sure you carefully remove the lid away from you because it is hot inside.

    • 3 pieces of equal sized aluminum foil.
    • Heat-proof plate.
    • Large pot with lid.
    • Tongs.

    You can also try baking your tamales however steaming has become the cooking method of choice by many because it keeps the dough as soft and tender as possible. And since you have no steamer on hand, you are given two options for steaming tamalespan colander and plate method.

    I have chosen to go for the plate method for two reasons. First of all, a plate is more readily available than a colander. Second, the plate technique is perfect for flat-laying items like asparagus, eggplants and in this case, tamales.

  • Fill the bottom of a large steamer pot with water until it reaches the bottom of the steamer insert without going over it – you don’t want your tamales to touch the water!
