HOW TO MAKE POT ROAST IN THE INSTANT POT!

Ive experimented with three different size chuck roasts one of 1.5 lbs, two of 1.5 lbs at the same time and a big single piece 4 lbs. They ALL cooked in 60 minutes on high plus natural pressure release.

It seems like the size doesnt really play that big of a role but rather the thickness. Regardless of that, however, Im confident your roast will be perfect and fall-apart tender within 60 minutes no matter how big or thick it is.

You may want to add another 20 minutes if you are cooking a gigantic chuck roast of 6 lbs or something like that.

What Part Of The Pig Should I Use

When we were testing this recipe, we knew we wanted to make a pretty traditional pork roast recipe. We were going between two cuts of meat: a pork loin roast or pork shoulder roast.

  • Pork Loin Roast: A pork loin roast comes from the back of the pig. It is usually a very lean piece of meat, so if you are slow roasting, you have to be careful you dont overcook it. In this recipe, you can use a pork loin roast if you are looking for more pork chop or pieces of pork rather than shredded pork.
  • Pork Shoulder Roast: A pork shoulder/butt comes from the shoulder of a pig. It generally has more fat and is great for slow roasting. We use this cut of meat when we want to use carnitas or if we want a juicy piece of meat.

It is all about how you want your pork roast to turn out. We tested both cuts of meat for this recipe and though we prefer the pork shoulder, both cuts are delicious! How Long Does A Small Roast Take To Cook

Roast for about 13-15 minutes per pound for rare, 17-19 minutes for medium, and 22-25 for cooked through. Check the meat with a thermometer to make sure it is the temperature you want it145°F for medium rare, 160°F for medium. Substitutions For This Instant Pot Chuck Roast Recipe

  • Chuck roast- You might be able to use a beef brisket or a round bottom roast, but I havenât personally tried them in this recipe. If you try either, instead of a chuck roast, you may need to add a few more minutes of cooking to achieve the same tenderness.
  • Water- Many readers asked if they can use beef broth as a substitute for the water. You absolutely can, you just might need to pull back on the salt used, depending on how salty your broth is.
  • Red wine If you abstain from alcohol, you can most definitely use a non-alcoholic red wine, or substitute with beef broth.
  • Fresh herbs Iâve been enjoying all the fresh herbs this summer, and how easily accessible they are. However, come the harsh winter in Alaska, fresh rosemary and thyme will become harder to find. You can definitely substitute with dried herbs .
  • Gluten-Free Worcestershire Sauce Worcestershire sauce imparts a deep-bodied umami flavor in this gluten-free pot roast recipe. There really are no substitutes however, if I had to recommend one, Iâd probably pick beef broth.

After seasoning the meat, we put together a mixture of cooked onions, garlic, tomato paste, and spices. Thats poured over the pork, and were ready to cook.

When I said the slow cooker shines in this recipe, I meant it. Its pretty tricky to overcook pork shoulder. Its because of this that we happily cook the pork on low for many hours.

In our recipe below we call for at least 8, but you really can go beyond that. The pork should be so tender that a spoon can cut through it. Doing all of this in a slow cooker makes it easy. Do it overnight or while you are away from the house.

What Is The Advice For A Cooked Perfectly Frozen Roast

A few helpful tips for successfully cooking a frozen chuck roast include:

  • Use cookware with stainless steel, aluminum, or cast iron materials. They are excellent heat conductors and distributors.
  • Use a pan that is just the right size for your roast meat. A large skillet leaves a lot of free space, which evaporates the water from the beef very quickly.
  • Small pots make for less efficient air circulation, which leads to undercooked meat.
  • Shallow pans will yield the best results.
  • Let the cooked meat sit for at least three minutes after taking it out from the oven. It will help the meat become more delicious and lower the temperature.

How Long To Cook Pork Roast In The Instant Pot

When you roast a pork butt in the oven, it takes about 40 minutes per pound. The Instant Pot is MUCH quicker.

In the Instant Pot, you should cook a pork butt for 15 minutes per pound. What does that mean? That means that you set the Instant Pot to pressure cook for 15 minutes per pound. If the roast is 3 pounds, you set it to pressure cook for 45 minutes.

The roast ends up being in the Instant Pot for longer than just those 45 minutes though. Before the pressure cooking starts, the Instant Pot spends time coming up to temperature. That can take as long as 10-15 minutes.

Then, after the pressure cooking time is up, the pressure needs to be released. I do what is called a natural release for 10 minutes. A natural release happens if, when your pressure cooking time has reached zero, you do nothing. Basically, the heater of your Instant Pot stops heating at that point, and then the pressure inside slowly dissipates.

I do the natural release for 10 minutes whenever cooking meat in the Instant Pot because a quicker release results in a drastic change of temperature that can make meat seize up and get tough.

So do the natural release for 10 minutes and then switch the valve to Venting and let the remaining pressure escape. You then open up the Instant Pot and take out the roast.

Should You Cook Frozen Roast With A Slow Cooker

Frozen meat contains bacteria

Cooking roast beef from frozen meat by slow cooker sounds like an attractive proposition, but its pretty risky. Its rapid and easy to prepare, almost in no time at all.

The main problem is that this way of cooking will bring foodborne illnesses to the table, and I dont think you want that at all.

The U.S. The Department of Agriculture has recommended maximum slow cooker temperatures. It can only be achieved between 170 and 280°F. You can read more in the article.

At first glance, this temperature seems to be perfectly suitable for cooking ground beef in the frozen solid state. But the real problem lies in the process of reaching that temperature.

It takes too long for the slow cooker to heat up from 0°F to the standard safe temperature to kill bacteria . Usually up to 2 hours to prevent bacteria from multiplying.

How to make Pot Roast in your Instant Pot

First, you might be wondering what kind of roast to use for pot roast. I recommend using a boneless beef chuck roast for this recipe. The marbling in a chuck roast will make your pot roast extra tender and juicy.

Season and Sear the Beef: To make this Instant Pot pot roast, youll start by cutting your chuck roast in half. Then youll season all sides both sides of the beef with salt and pepper. Be generous with your seasoning.

Next you will sear the beef using your Instant Pots sauté setting. Browning the beef adds so much flavor. Youll heat a little bit of olive oil in the pot and add the meat once the pot is hot. While the beef sears, you can chop your onion.

Sauté the Onion and Garlic: Once you have browned the roast on both sides, transfer it to a clean plate and set it aside for a few minutes. Add the onion to the pot and sauté until the onion softens and begins to brown. You can use a spatula or wooden spoon to scrape up any browned bits from the bottom of the pot. Stir in some minced garlic and turn off the Instant Pot.

Deglaze the Pot: Now you are going to add tomato paste, Worcestershire sauce and beef broth to the pot. Stir everything together and make sure that there are no browned bits stuck to the bottom of the pot. This step of deglazing the pan will ensure that you do not get a burn warning during the pressure cooking process.

How To Make This Roast Ahead Of Time In The Instant Pot

Going to be out all afternoon and need a good meal when you get back in? Roast is the perfect solution for that!

Follow the steps above, but skip the releasing the pressure part. Instead, just allow the Instant Pot to naturally release and automatically go to warm. It can slow cook and the warm setting for several hours.

When you are finally ready to eat, the pressure will already be released. The Instant Pot will slowly let it out, as it sits on the warm setting.

If you are doing it this way, there is no need to let the meat rest. Just dig in!

Other Ingredients For Instant Pot Roast

  • Onions and mushrooms: Yellow or white onions. Brown or portobello mushrooms yield more flavor than white mushrooms. You can use red onion as well, if thats all you have.
  • Red wine: Any medium priced red wine like Pinot Noir. Do no use the cheapest one though, flavor not the same.
  • Seasonings: Dried rosemary, thyme, onion and garlic. Paprika , salt and pepper.
  • Broth: Best one would be low sodium beef broth. But chicken or vegetable broth, or even water, would be fine too. If your broth is not low sodium, reduce salt by 1/2 tsp.
  • Vinegar: You can use red wine, balsamic or apple cider vinegar on their own or in any combination. Also part or all can be replaced with Worcestershire sauce. I used 1 tbsp apple cider + 1 tbsp balsamic vinegar.
  • Potatoes and carrots: Please note vegetables fit to cook at same time with the roast only in 8 or 10 quart Instant Pot.

Best Cut Of Beef For Pot Roast

Chuck roast is cut from the shoulder just above the short rib. Its a tougher piece of meat, but has significant connective tissue marbling. When you cook the chuck roast low and slow, the tissues soften and become tender. Because chuck roasts are tougher, they are often cheaper pieces of meat. Not to mention, chuck roasts are easily found in most grocery stores nation-wide.

You might be able to use a beef brisket or beef bottom roast using this recipe, I just havenât personally tried it myself. Either may need a few more minutes of cooking to achieve the same super-tender consistency.

Can I Pressure Cook More Than One Pot Roast At A Time

Yes! I have a 6qt machine and Ive frequently cooked two pot roasts in one go. The trick is to not lay them on the bottom like Ive done in this recipe, if you put them one on top of the other like that they may take much longer to cook. What I do is simply stand them up sideways on opposite sides of the pot, the cook time then is exactly the same as it would be for one pot roast, win win!

    Why I Love My Instant Pot For Pork Roast

    The first is the sauté function. Using it creates a lovely, caramel-colored layer on the pork. Which means I dont have to pull out another pan and get it dirty. Love it!

    After searing the roast, I remove it from the Instant Pot and put the trivet that was included to get the roast up out of the cooking liquid and off the bottom of the pot. I think it helps to maintain the color from the searing as well as ensuring that the bottom doesnt burn.

    The second thing that I love is the fact that once the lid is locked on and cooking time is set, Im free to focus on something else.

    Finally, the result is like a slow-braised, tender pork roast, but in the Instant Pot, it cooks in much less time.

    Instant Pot Pot Roast Vs Slow

    Re taste: both are the same. FOR REAL!

    Re time: One takes 8 hours the other takes 1 hour so whats better will depends on your schedule, your personality, what else youre cooking with it.

    So here is the thing. Since both versions taste equally delicious it basically just comes down to how you want to plan your day and dinner.

    Are you a morning person and totally drenched after work not wanting to do absolutely anything at all? Do you have dinner guests at night and dont want to mess up your kitchen shortly before they arrive? Do you want to cook everything in the same pot with the roast because you want less dishes and less time spent in the kitchen?

    Well then use the slow-cooker and make everything in the morning before going to work. The advantage of the slow-cooker is that you can add the veggies with the meat and they wont become mush.
