Instant Pot Pot Roast With Potatoes

A quick note about adding potatoes, using baby potatoes are totally the way to go. They are the perfect size and they dont get mushy. Potatoes that are peeled and cut tend to get mushy in the Instant Pot when they cook for a longer amount of time. By keeping the skin on and not cutting them, the potatoes cook thoroughly while remaining firm. If you must use peeled diced potatoes and carrots, you will definitely want to release the pressure a few minutes before the regular cooking time, then add the potatoes and cook on high pressure an additional 8 minutes. 30+ minutes is too long to pressure cook diced potatoes.

The Instant Pot is an incredible tool in the kitchen for making dishes that usually take a long time. In the pressure cooker, you can drastically cut down the cooking time for dishes like this tender pork roast.

The best thing about this pork roast is that it goes with just about any side dish you want to serve, so you dont have to put a lot of thought into what to make for dinner.

I am a huge fan of mashed potatoes, so I usually serve pork roast with mashed potatoes and gravy, but it also goes really well with roasted cauliflower, green beans, or crispy roast potatoes.

Why I Love My Instant Pot For Pork Roast

There are three things that I really love about cooking a pork roast in my Instant Pot .

The first is the sauté function. Using it creates a lovely, caramel-colored layer on the pork. Which means I dont have to pull out another pan and get it dirty. Love it!

After searing the roast, I remove it from the Instant Pot and put the trivet that was included to get the roast up out of the cooking liquid and off the bottom of the pot. I think it helps to maintain the color from the searing as well as ensuring that the bottom doesnt burn.

The second thing that I love is the fact that once the lid is locked on and cooking time is set, Im free to focus on something else.

Finally, the result is like a slow-braised, tender pork roast, but in the Instant Pot, it cooks in much less time.

What Vegetables To Serve This With

Instant Pot Pot Roast

My personal favorite is to serve this with some sauteed Brussels sprouts, but I know potatoes and carrots are a much more popular option.

I think the potatoes and carrots will taste best if you roast them separately in the oven, or you could try making my popular Honey Glazed Carrots!

If you want to cook the potatoes and carrots in the Instant Pot with the roast, youll need to decrease the cooking time by 15 minutes and do a quick release. Then add in halved potatoes and carrots. Cook everything for the remaining 15 minutes and then proceed with the natural release for 30 minutes.

Instant Pot Roast Gravy

Making gravy in the Instant Pot is a breeze. The easiest method is to remove the pot roast and vegetables when they are done cooking then switch the cook setting to saute. If there arent enough beef drippings to make a gravy, add some beef broth. Combine a little water and some corn starch in a liquid measuring cup to form a slurry. When the drippings and broth start to simmer, whisk in the cornstarch mixture a little at a time until it becomes a gravy consistency. Simmer about 3 minutes adding more beef broth to thin if needed. Add salt and pepper to taste.

Add Veggies To The Pot

Cooking vegetables in the pot with the meat will result in extremely over cooked vegetables. Instead, after your roast has cooked and the natural release is complete, set your roast aside, place desired vegetables in a steamer basket, then lower them into the pot to cook in the flavorful juices. The juices will be hot so the pot will come up to pressure quickly. For quartered potatoes, carrots, and celery, I cook them for 4 minutes with a quick release of the pressure once the cooking time is complete.

Why I Love Using The Instant Pot

  • Its EASY. With the instant pot, you can sear the roast and saute the onions AND cook it ALL in the same pot. You dont have to dirty 3 different pans to do it. Even a slow cooker cant do that for you. Did I mention cleanup is a snap? It is. SO easy.
  • Its FAST. Beginning to end, we are talking around 2 hours. TOTAL. That is literally a quarter of the time it takes to make.
  • Its DELICIOUS. Honestly, I think this pot roast turns out just as good, if not better, than most slow cooker pot roast recipes I have tried. It is full of flavor and perfectly tender and easy to shred.

    How to make Pot Roast in your Instant Pot

    If you can add ingredients to a pot and close a lid, you can make this chicken! As you can see from the steps above, cooking chicken in an Instant Pot is EASY.

    You could just use water or broth for the liquid in the bottom of the pot, but for the best, most flavorful Instant Pot chicken, use salsa verde .

    Step 1, Start by cooking some garlic in a little olive oil since the Instant Pot has a Sauté button, this happens right in the cooker. No other pans are needed.

    Step 2, Add salsa verde. When the garlic is lightly toasted, pour in salsa verde. Place chicken into the salsa use chicken breasts or thighs then secure the lid and switch to the Pressure Cooker mode. Depending on the type of chicken you are using , the cook time will vary.

    Step 3, Release the pressure and shred the chicken. When the cook time is done, let the Instant Pot naturally release for 5 minutes then release the remaining pressure with the quick release button/toggle.     The best cuts of beef for pot roast are tougher cuts of meat like chuck, brisket, and round. Traditionally, the beef cooks at a low temperature for a long time. Its because of this that tougher cuts of beef work so well. When I say tougher cuts of meat, Im talking about the leaner cuts with lots of connective tissue.

    How To Cook A Roast In The Instant Pot Tips & Tricks

    • You really do need to cook a blade or chuck roast for 120 minutes. Blade and chuck roasts are very tough and have fibers that absolutely need to be broken down by cooking, and cooking for a long time. Theses roasts take 8-10 hours in the crockpot, so 2 hours in the Instant Pot is definitely the way to go!
    • You need liquid and not just liquid you need DELICIOUS liquid. Food can be a bit bland when pressure cooking so you need to spice up!
    • If you have a roast that is from a quality butcher, you can try cooking it at 90 minutes. Grocery store roasts are generally lower quality. Play it by ear based on the meat quality of the roast you are cooking.
    • Thick roasts may need to be cooked a little longer as its thickness that determines how those fibers are going to break down inside.

    Just writing this post up makes me want to make this roast again. Its similar to that Mississippi roast in the fact that I use a package of dry Ranch dressing in it, but theres no peppers. Trust me, the dry Ranch dressing makes this delicious!

    In our photos, we are using a 6-quart Instant Pot, which is an electric pressure cooker. Other brands make electric pressure cookers, too. If you own one of them, you should be able to use this recipe without any problems .

    Step 1, Season the beef and bring to room temperature. Ive already touched on this above, but Ill quickly do it again, here. After testing, we found that when we left the beef out on the counter to come closer to room temperature before cooking it, the pot roast was much more tender at the end of the cook time. I also love that the beef gets a chance to sit with the salt for about an hour before cooking. In this time, the salt seeps into the meat and helps to season and tenderize it.

    Step 2, Brown the beef on all sides. By browning the beef on all sides before cooking at high pressure, we add color to the meat and add lots of flavor to the pot. For a one pot meal, brown the beef right in the pressure cooker using the Saute function. If your pressure cooker does not have this function, simply brown the beef in a heavy pan on the stove. After browning, I remove the beef so I can move onto the veggies.

    Step 5, Pressure cook until the beef is tender. As I mentioned above, the time you need to cook will vary depending on how large the piece of beef is that you are cooking. We have found that a 3-pound roast takes 60 minutes at high pressure before it is tender.

    • Season and sear the meat on all sides: Dip roast in a large shallow plate with homemade dry rub making sure all edges are covered well. On Instant Pot, Press Saute and wait until display says Hot. Only then add oil and sear for 3-4 minutes per side. I would not recommend skipping this step like you can with Instant Pot pulled pork because it adds a lot of flavor to a pot roast.
    • Cook onions and deglaze the pot: Add 2 large onions and saute for 5 minutes or until fragrant. Then add beef stock, red wine and vinegar to deglaze the pot from brown bits on the bottom that may cause Burn.
    • If you have 8 quart Instant Pot You can add vegetables too: Wrap potatoes and carrots separately into unbleached parchment paper and place on the sides of the roast. This way veggies wont fall apart cooking in broth and come out whole. 6 quart Instant Pot is not big enough to accommodate vegetables and leave enough room for pressure to build up. I tried and had to remove half of vegetables.

    Best Roasts For Making Pot Roast

    Tough cuts with lots of connective tissue that would be like chewing shoe leather if you cooked it quickly in a pan are the perfect cuts to use.

    • Chuck Roast: tender, falls apart and easy to shred.
    • Brisket: has a lot of connective tissue making it fattier cut that gets super tender while cooking slow, but can still be sliced for serving
    • Round: a lean and easy to slice cut.

    Slow cooking these cuts breaks the collagen down, tenderising the meat. The beef releases its juices into the broth, providing your roast with incredible flavour. Adding flour or cornstarch turns that liquid gold into a delicious, thick gravy.

    How Long Do You Cook A Roast In The Pressure Cooker

    The big question!

    The short answer? About 1 hour.

    The long answer:

    How long a roast will need to be pressure cooked depends mostly on how large the roast or the pieces are that you cut it into.

    I prefer to cut my roasts into chunks that are approximately 1 lb in size . However, the cook time also depends on the thickness of the pieces, so there has to be some wiggle room.

    To be on the safe side, you can always allow for a little extra time pressure cooking the meat I opt for about 1 hour pressure cooking on high for smaller pieces. If your roast is frozen, or it is in one large piece, you will want to add a significant amount of time to ensure that your meat is fall apart tender.
