The quick and easy Instant Pot potato recipe requires two simple ingredients:
- Potatoes: Purchase 1 pound of russet, red, gold or baby, the choice is up to you.
- Water: The addition of water helps create steam and facilitate even cooking.
- Salt: I recommend adding salt to the liquid for baby potatoes only since they cook directly in the water. You ‘can’ add 1 teaspoon salt to the water for medium and large potatoes, but it is not necessary.
Why Cook Instant Pot Baby Potatoes
First of all, potatoes are nutritious and very satiating. Baby potatoes are slightly less starchy than more mature, larger potatoes and thus have a slightly firmer texture when cooked. They work really well in potato salads but can also be served as a side dish with pretty much anything.
Cooking baby potatoes in the Instant Pot is really quick and the pressure cooking steaming technique locks in more nutrients than say boiling the potatoes on the stovetop.
How To Make 8 Minute Instant Pot Baby Potatoes
You can not get a quick side dish when you are making a family dinner. You can use the wire rack that came with your Instant Pot, but removal is so much easier with the Instant Pot accessory basket that you can get budget-friendly by going here.
After you wash off the potatoes and make sure to remove any discolored spots, just add 1 cup of water to the inner pot. You can leave the potatoes whole at this point as you add them to the basket or you can cut them in half. I usually leave them whole and take my fork when they are done and separate them in half.
Place the lid on, set the top valve to Seal, and set for high pressure for 8 minutes. As you know it may take 5 minutes to get to pressure for the time to start counting down.
Allow for a natural release of 10 minutes and release any remaining pressure and open the lid. With pot holders remove the basket. Transfer the potatoes to your favorite bowl. Add the butter and parsley and toss. Done! While the potatoes are in the Instant Pot you can be grilling outside burgers or chicken. Or you can make the potatoes first, put them in an oven-safe bowl and keep them warm while you make your main dish in the Instant Pot.

What Are Baby Potatoes
Baby potatoes are just that. Babies. Also called new potatoes, they are potatoes that are harvested before they are fully grown/developed. They come in red, gold, and purple.
Baby potatoes have a sweeter flavor and a nice thin skin. Because they are so small, measuring about 1 1/2-2, they are best cooked whole.
These little potatoes are best when steamed, boiled, or roasted, as they have less starch than russets . They come out with a creamier texture that is wonderful!
After pressure cooking them, you will sauté the cooked potatoes in some butter and seasonings. The potatoes will usually crisp up just a little on the outsides, leaving the insides soft and creamy!
The seasoning I used for this recipe is just about 1/2 of a packet of zesty Italian salad dressing mix. You can use a little more for a stronger flavor.
You could also use ranch dressing mix, or some Italian seasoning, garlic powder, onion powder, salt & pepper.

Can I Steam Potatoes Without A Trivet
If you want to boil potatoes while cooking something else in the main pot, then I suggest to use the mode needed for what you are cooking in the main pot. The Steam function works best when food is being steamed on a trivet. It increases the temperature inside the pot very fast, as it does not expect to have any food directly in contact with the bottom of the pot.

Pressure Cook Baby Potatoes
Pour 1 cup cold water, then place a Stainless Steel Steamer Basket in Instant Pot Pressure Cooker.
Place 1.5 lb baby potatoes in the steamer basket.
Close lid and turn Venting Knob to Sealing position.
- Pressure Cooking Method: Pressure Cook at High Pressure for 15 minutes, then Quick Release.
*Pro Tip: This will produce creamy and soft baby potatoes. If you prefer a firmer texture, reduce the pressure cooking time by a few minutes.
Once the pressure cooking cycle ends, carefully turn the Venting Knob to Venting position to release all the pressure.
Open the lid immediately once the Floating Valve has dropped.
Set aside the pressure cooked Instant Pot baby potatoes.
Discard water in the inner pot & towel dry inner pot.
Then, heat up the Instant Pot using the Saute function.
Press Cancel button, then Saute button.
Once the indicator says HOT, add 2 tbsp unsalted butter and 1 tbsp olive oil in Instant Pot.
Add pressure cooked baby potatoes in Instant Pot Pressure Cooker.
With a wooden spoon, gently stir the baby potatoes in Instant Pot to coat them with butter.
Sprinkle 1 tsp garlic powder and 1 tsp onion powder on the baby potatoes. Gentle mix the baby potatoes, then allow the powder to darken & harden a little.
Taste & season Instant Pot Roasted Potatoes with salt and black pepper .

How Long To Cook Baby Red Potatoes In Instant Pot
We are making soft boiled baby red potatoes which are perfect to make simply seasoned or buttered potatoes or mashed baby red potatoes with skin on.
Since the aim is to have soft mashing consistency, we cook the baby red potatoes for about 12 minutes in the instant pot in high pressure followed by a natural pressure release for at lease fifteen minutes.
If you want to make mashed potatoes, it is a good idea to wait for a complete natural release of pressure if you are not in a hurry.

How Long To Boil Whole Potatoes In The Instant Pot For Making Mashed Potatoes
If you wonder how long should you boil potatoes in the instant pot so that they will be soft enough to make yummy mashed potatoes, here is the answer for your question.
In this recipe for boiled or steamed potatoes in the instant pot without trivet, we cook the whole potatoes for about 30 minutes in high pressure to make soft & creamy potatoes.
These perfectly cooked creamy yellow potatoes are perfect for making easy and delicious mashed potatoes.
Notice that the 30 minutes cooking time is for whole potatoes & not diced ones.
So basically, the process is so much more easier with the instant pot, because without even peeling or cutting the potatoes, you need just thirty minutes time to boil the whole potatoes.
The potatoes that we use here are yellow potatoes or yukon gold potatoes, which are perfect for making mashed potatoes.
