This is one of our favorite meals to serve on busy weeknights. The pressure cooker makes it all so easy and dinner can be ready in no time at all. In fact, it is so easy that you only need 30 minutes to have a wonderful dinner sure to impress.

My kids go crazy over this dish and they love when I make it. Since it is so simple, I dont mind making this meal frequently. It can be hard to find something we all enjoy and this meal was gobbled up by everyone.

Creamy, cheesy and garlicky, this Instant Pot chicken and rice is one of the most requested dinners in my house right now. Its flavor and texture is similar to white wine and parmesan risotto, but its SO MUCH easier to make.

Also, though Im not anti-carb, I decided to lighten up this dish by replacing some of the rice with cauliflower rice. Ive found that it allows me to eat more of the delicious sauce without the meal feeling too heavy, and Im not really one to pass up an opportunity to incorporate extra veggies whenever possible.   • I typically use larger chicken breasts for this recipe since I am working with the cook time for brown rice. If the pieces of chicken are on the smaller size, they may end up being overcooked and drier. I try to find 2 lbs. worth of chicken in 3 pieces. That seems to work well.
  • I opt for lower sodium or no sodium chicken broth. Then I salt to taste.

My husband loves this Instant Pot Chicken and Rice recipe EXTRA spicy. I typically will also add a decent amount of hot sauce while cooking. Then I add a few extra shakes to his when I serve it up.

  • Always check the pressure indicator on your machine to ensure that the pressure has fully released prior to opening the lid.
  • Follow timing instructions precisely and set timers. With pressure cooking it easy to over-cook something if you forget about your pot.

Can I use fresh vegetables?

Sure! Depending on what type of vegetable, you might want to precook them or cut them different to ensure even cooking. So frozen mixed vegetables are easier and will give you a more predictable result, but that doesnt mean you cant use up fresh veggies for this recipe if you have them.

Can I cut the recipe in half?

Yes if you have a smaller Instant Pot or youre just looking to make a small batch, you can cut all of the amounts in half for a half batch. The cook time will stay the same.

If you are looking for a yes or no answer, yes, you CAN cook broccoli with chicken in the Instant Pot. However, I am not sure that I would suggest cooking fresh broccoli with chicken.

When you cook the broccoli for the amount of time needed for chicken to be cooked all the way though, it tends to get fairly mushy or over done, and will break down a bit. So, if you want to keep more of the integrity of the broccoli I would suggest either using frozen broccoli or cooking the broccoli separately from the chicken.

To make this cheesy chicken and rice, I started by cutting some boneless skinless chicken breasts into one inch cubes.

Then I set my Instant Pot to Saute Less for 7 minutes.

I dropped a dab of margarine into the bottom of the pot.

Then I dumped the chicken breast chunks into the pot.

I left the chicken to cook, stirring occasionally, until the Instant Pot turned off.

When the Instant Pot turned off the chicken was still slightly pink.

I poured some condensed chicken broth and water into the pot.

Then I added some long grain white rice to the pot.

I gently pushed the rice around until it was all submerged in the liquid but did not stir.

Then I added some salt, pepper, garlic powder and onion powder to the pot.

I stirred the contents well.

  • Set the Instant Pot to sauté mode. Add the butter and let it melt before adding onion and garlic. Sauté for 3-4 minutes.

    We knew exactly what we wanted when we set out to make this recipe: cheesy rice, with perfectly seasoned chicken and broccoli that was not overcooked. But this last bit proved to be the most difficult. Cooking broccoli in the Instant Pot usually results in overcooked broccoli. While for some dishes, that fall apart broccoli mess works, for this we were looking for crisp tender broccoli that stayed whole. Cooking it fully in the Instant Pot by adding it with the rice resulted in broccoli that fell apart. Cooking it in the Instant Pot after the rice had finished cooking for 0 minutes made the rice burn.

    What we turned to was frozen broccoli florets that had been mostly thawed by rinsing under lukewarm water. Good quality frozen broccoli has already been blanched before freezing. Once thawed, the florets are much quicker to cook than fresh broccoli. So for this recipe, we added the thawed broccoli florets to the Instant Pot right after the rice finished cooking. Then closed the lid and allowed the broccoli to steam with the residual heat. This resulted in crisp-tender broccoli.
