Instant Pot Chicken Noodle Soup | Frugal Food | Homemade broth

Prep Time: 10 minutes

1/2 pound boneless skinless chicken breasts

1 carrot peeled and chopped

1 stalk celery sliced

2 ounces uncooked extra wide egg noodles

4 cups Swanson® Chicken Broth

Instructions:

  • Season the chicken with salt and pepper. Add the carrot, celery, chicken, noodles and broth to a 6 quart Instant Pot®.

  • Lock the lid and close the pressure release valve. Pressure cook on High pressure, setting the timer to 5 minutes . When done, press Cancel and use the quick release method to release the pressure.

  • Remove the chicken from the pot. Shred the chicken and return to the pot. Season to taste.

    Tips For Cooking Chicken In An Instant Pot

    We have the Instant Pot Duo Plus 9-in-1. It has a six-quart capacity, which is more than enough to cook for two people or for a small group. There is also an 8-quart option for families. For this recipe, use the sautee function and the pressure cook function.

    We started by cooking the entire five-pound chicken in the Instant Pot the day before. By cooking the chicken in the electric pressure cooker, the meat was super juicy.

    The day after, I took about a cup of leftover white meat from the whole chicken to add to the soup. By using white beans as well, we were able to spread the single chicken into four meals for two people. We served the whole chicken with vegetables and stuffing, leftover chicken wings with stuffing, and the soup for two meals.

    Swanson Chicken Noodle Soup

    Swanson chicken noodle soup is a quick-to-make soup with the Swanson chicken broth-a popular product which now owned by the Campbells company. The rich broth could bring to the soup a rich flavor too. Within half an hour, you will get a delicious and healthy soup for the whole family.

    Season the chicken with a pinch of salt and pepper and set aside.

    In a soup pot, heat the oil over medium heat then add the celery, carrots and onion, season with salt and pepper, stir and cook for 10 minutes until softened.

    • Water about six cups of water or chicken stock. You can also use low-sodium chicken broth.
    • Chicken breasts I like to use boneless, skinless breasts, but you can use chicken thighs or bone-in chicken breasts. Just make sure to remove the bones after the chicken is cooked and before you add the other ingredients.
    • Salt at least one teaspoon, and more to taste
    • Onion one large yellow onion, diced
    • Carrots about one cup of thinly sliced carrots
    • Chicken bouillon granules or two cubes of bouillon

    When making quick soups like this one where youre not really simmering anything, its important to use a broth that has a lot of flavor to begin with. Its what lets you get away with such a quick preparation that still tastes delicious. I suggest buying a handful of brands from the store and doing your own taste test. I have found that brands vary hugely in terms of richness and flavor. I tend to like Swanson and Imagine.

    Using The Pressure Cook Function

    Add the pasta and the rest of chicken broth. Ensure the pasta is completely submerged in the broth to make sure it doesnt dry out during cooking. Add the chicken and do the same.

    Add the bay leaves and white beans . Its okay if the white beans sit on the top. The beans dont need to be submerged within the broth.

    Close the lid and seal the Instant Pot. Be sure the pressure valve is closed. Set the Instant Pot on pressure cook and set the time for 5 minutes.

    When the time is up use an oven mitt or a towel to manually release the pressure. If you allow the ingredients to sit too long once the 5 minutes is over, the pasta will get too soft.

    Mash the remaining white beans with a fork until smooth. Once the pressure is released carefully open the lid away from your face. Add the heavy cream and mashed white beans. Stir to warm.
