Test : Searing And Pressure Cooking

The test: To test how well the Instant Pots could sear and pressure cook, we made five batches of this recipe for chunky beef chili. We documented the sear on the beef from each model and timed how long each machine took to pressurize. We tasted each sample to evaluate the tenderness of the meat and overall flavor of each chili. One Instant Pot model, the Duo Pro, has a special inner pot that can be used on the stovetop, so we used this pot directly on the burner over medium-high heat to sear the beef. With the other four models, we used their sauté modes.

Heres what happened: The big reveal isno big reveal. Each chili tasted pretty much identical, which may be more of a testament to the quality of the testing of that recipe than the machines we used to make it. None of the five chili samples had bitter notes or off flavors. All of the meat was tender the meat cooked in the Ultra was almost too tender, losing its cube form and shredding a bit too much. There was, however, a clear winner for pressurizing timethe Duo Pro was remarkably fast, taking just over 5 minutes. The Duo Plus was the next quickest, taking about 6 minutes, and since it has a slightly larger inner pot, there was more surface area available for searing. The Duo 7-in-1, Ultra, and Max each took about 8 minutes.

8 Quart Instant Pot

If you have a large family, have a family of big eaters, or like to meal prep big batches of food, I recommend getting an 8 quart Instant Pot. The 8 quart is also great for cooking for a crowd if you like to entertain.

The 8 quart Instant Pot is bigger than the 6 quart, so you will need to plan for more storage space. Its a little bit taller and a little bit wider. Heres a photo of my 6 quart and 8 quart side by side.

3 Quart Instant Pot

I dont recommend getting the 3 quart Instant Pot, unless you are very comfortable adapting recipes and are always cooking for just one or two. Since most recipes that you will find are designed for the 6 quart, you would need to scale them down to fit in the 3 quart mini Instant Pot.

With a strong and sturdy stainless steel pot and a lid that easily locks into place, we were big fans of the Vitaquick. For one, its large blue pressure indicator is easy to see, with two white ring markings: one ring means its at low pressure, two means its at high pressure. Other great features: a removable handle that makes cleaning a snap , clear measuring markings on the inside of the pot that mean you dont need to dirty extra dishes, and a handy helper handle to carry it without fear of dropping the thing. The materials are high quality and we appreciated the added safety feature of a lid with a button that turns green and clicks when its locked into place. Which Model Of Instant Pot Should You Buy

Before I go into specifics about each Instant Pot model, let me say that most of the fancy stuff is stuff you probably dont need. For example, you may have noticed that Instant Pot models vary in the number of pre-set program buttons. All of those program buttons are just a combination of a cook time and pressure setting .

So, whether or not your Instant Pot has a poultry or cake button is not important, because you can cook pretty much anything in your Instant Pot using the Pressure Cook function and manually setting the cook time. In fact, most of the recipes that you find are going to tell you to use the Manual/Pressure Cook function, not one of the other program buttons. And pretty much every recipe will be cooked at high pressure.

Ninja Foodi XL Pressure Cooker: The Ninja Foodi air fries and pressure cooks. And, in our tests, it did a great job of searing, slow cooking, and pressure cooking delicious meals but took longer than most units to build pressure. Instant Pot Duo Evo Plus 80: The Duo Evo Plus’s stay-cool handles set it apart from other multicookers since you usually need to grab potholders to lift a multicooker’s pot out. It didn’t make our guide because it didn’t do better than average at any cooking task and was one of the worst at rice and slow-cooker pork.
