This vegan Instant Pot pasta e fagioli is warm, comforting and full of flavour. A mix of veggies, tomatoes, herbs, beans and pasta are cooked together in the pressure cooker to create a quick and nutritious meal the entire family will love.

Pasta e fagioli is the ultimate Italian comfort food. After all, “When the stars make you drool just like a pasta e fasul, that’s amore.”

I’m pretty sure Dean Martin wasn’t crooning about an Instant Pot version, but this doesn’t mean this vegan Instant Pot pasta e fagioli isn’t just like a love letter to your belly.

Making pasta e fagioli in the Instant Pot means that you can have a delicious bowl of soup in your hands much faster.

It’s very easy to make pasta fagioli vegan because the base of this classic recipe is naturally plant-based.

My version includes two kinds of beans, borlotti and cannellini. I’m all about recipes that can be on the table in 30 minutes or so, and that’s why I make this vegan pasta fagioli soup with canned beans.

If you’re good at planning ahead, you can use dried beans that you’ve soaked overnight or for at least 6-8 hours.

Avoiding The Burn Notice

I have not had any issues with the Food burn message but its possible for some people to get the Burn message when making this recipe. Do the following to avoid the issue:

  • After sauteing onions and garlic, deglaze really well. There should be nothing stuck to the bottom of the inner pot.
  • Turn off the Instant Pot for a few minutes after sauteing.
  • Add water first, then remaining ingredients.
  • Add tomatoes and pasta last, and dont stir. Just push down to submerge in the water.
  • You may need up to an extra half cup of water if the above steps dont help.

Making The Pesto Cashew Cream

This recipe is a spin on my Garlic Cashew Cream Sauce, and it brings both the creaminess and a lot of the flavor to your pot of pasta.

Start by soaking your cashews in hot water for 10-15 minutes. You do not need raw cashews for this recipe! Roasted is fine. Just soak roasted for the full 15 minutes, and they’ll soften right up.

I like to start the cashews soaking before I start the pasta. That way, you have plenty of time to make the cashew cream while the pasta cooks.

Once the cashews finish soaking, drain them and discard that soaking water. You can use it to water a plant, if you want, but please do not use it in the sauce!

Transfer the drained cashews to your blender. Then, add a few cloves of fresh garlic, and some sweet balsamic vinegar to the blender. Throw in a splash of water, and blend this mix until it’s completely smooth.

Stir in plenty of fresh basil, and your pesto cream is ready!

Turn on the Sauté function on the Instant Pot. Heat the olive oil, then add the diced onion and sauté until softened, about 3 minutes. Add the minced garlic, then turn off the Sauté function. Sauté the garlic in the residual heat for about a minute.

If you notice any food stuck to the bottom of the insert, add a bit of broth and use a spatula to scrape off any food stuck to the bottom. This is called deglazing and will help prevent a burn warning.

What Kind Of Noodles Should I Use

I use San Giorgio spaghetti because I find they have the best overall taste and texture. Use regular noodles in this recipe as I find whole wheat spaghetti often create a tougher texture and thicker sauce consistency.

I also use regular size spaghetti noodles. You can vary the noodles size, but I would stick with a long noodle, not penne or rotini.

Be aware if you choose a different thickness of noodles you will have to adjust the cook time. For example, angel hair pasta will only need to pressure cook for 2-3 minutes instead of 5. Thicker fettuccine noodles should cook for 6-7 minutes instead.

Making The Tomato Pesto Cream Sauce

The cool thing about making pasta in the pressure cooker is that you can cook the sauce and the pasta at the same time, in the same pot!

To make the sauce, you just throw all of the ingredients into the pot with the pasta and water, then stir to combine.

This tomato sauce has two parts. First, you cook a pretty basic tomato sauce in the pressure cooker with the pasta. It’s truly just canned tomatoes, Italian seasoning, and balsamic vinegar.

Cook at high pressure for 5 minutes, then do a quick release.

You make part two of your creamy tomato sauce in your blender while the pasta is cooking. The Pesto Cashew Cream brings rich garlic and basil to the mix when you stir it in at the end of cooking.

Putting It All Together

When the Instant Pot finishes cooking, do a quick release.

Helpful Tip: Instant Pot pasta spurts a LOT when you toggle that release valve! Throw a kitchen towel over the top of the pot before you release the pressure to catch the spray, and save yourself from a big mess!

Now, open your pot, and add plenty of baby spinach or your favorite quick-wilting green. Chances are, the pasta and sauce will be hot enough to wilt those greens. If they aren’t wilting, though, you can hit the Saute button to warm them up more.

After the spinach is cooked down, stir in the Pesto Cashew Cream, and it’s time to EAT!

Can I Make This Recipe On The Stovetop

Simple vegan TVP pasta in your Instant Pot!

Yes! This method will be fairly similar to the instant pot method, just with a few tweaks to ensure the pasta cooks probably.

First step is to finely chop the onion and garlic and add to a large pot with the olive oil. Saute over medium/low heat until the onion looks translucent and the garlic is slightly golden.

Add all remaining ingredients plus 1 extra cup of veggie broth and stir well. Bring to a boil. Reduce heat to low, cover, and let simmer for about 12-15 minutes or until the liquid is absorbed and pasta is cooked. Stir halfway to avoid burning.

If the heat is too high, the liquid will cook off faster without actually cooking the pasta, so keep it low and covered and add more vegetable broth and cook for longer if you find the pasta isnt cooked all the way through.

On the other hand, if you find that the pasta is done cooking but the liquid hasnt cooked off yet, stir in 1 tablespoon of flour to help absorb the extra sauce. Taste and adjust seasonings as desired.

Which Pasta To Use

As a rule of thumb, shorter varieties like penne, farfalle, rotini or shells are better compared to longer ones like spaghetti or linguine they are harder to submerge and also tend to clump together.

If you do want to use spaghetti, break them into halves and stir them for a bit before cooking to minimize clumping.

Delicate pasta like alphabet pasta will overcook easily, and stuffed or homemade pasta can fall apart. These varieties can be added to the veggies and sauce once they are done, and just let the mixture simmer for a few extra minutes to cook the pasta!

If you want to use gluten-free pasta, the cooking time will increase on the other hand, white pasta needs less cooking time compared to our recipe.

Why Cook Spaghetti In The Instant Pot

Unlike on the stove top, you only need one pot when you make spaghetti noodles in the Instant Pot. You add the spaghetti, seasonings, sauce and water all into the inner pot, set the pressure, and walk away. You dont need to touch it again until its done cooking.

Ingredients: What Is In Pasta E Fagioli Soup

The traditional Italian recipe is usually made with beans and pasta, flavored with olive oil, garlic, onion and tomatoes. However, there are many regional versions of pasta e fagioli and some use greens like Tuscan kale , while others might include sausage, ground beef or bacon. The main difference between pasta fagioli vs minestrone is that the latter uses more vegetables and is soupier.

  • Beans: White beans such as cannellini or navy beans or larger white beans are typically used but some versions feature borlotti beans. Canned beans are used and we opted for two different sizes.
  • Pasta: Use a small variety of pasta such as elbow macaroni, ditalini, or ziti.
  • Vegetables: A traditional soup base of onions, carrots, celery and garlic gives this version plenty of flavor and also adds extra nutrients. Tuscan kale or cavolo nero is a great nutritious addition and can be replaced with regular curly kale, collard greens or Swiss chard.
  • Flavors: You can use any Italian/Mediterranean herbs here such as oregano, rosemary or thyme we used an Italian herb mix. Salt, pepper and a little chili, lemon juice and good olive oil also add a lot of flavor. Our little addition is roasted pickled red peppers, which are optional but add a little tang and sweetness these are not in the traditional version! Plus, a good handful of fresh parsley to finish the dish.
  • Liquids: All you need is vegetable stock , canned crushed tomatoes and extra water.
