  • 4Chicken Breastsraw, cubed
  • 4clovesGarlic,pressed or minced
  • 1 canDiced Green Chiles
  • 1 canDiced Tomatoes
  • 1 1/2cupsSalsa Verde
  • 3 cansWhite Beans,*drained and rinsed
  • 4cupsChicken Broth**
  • 1/2cupCilantro,rinsed and chopped
  • 1TbspFresh Lime Juice
  • 5White Corn Tortillas,sliced in strips
  • Turn pot on to Sauté. When display reads “Hot”, add oil.

  • Add onion and celery and stir. Cook until starting to get translucent.
  • Add chicken and stir. Cook, stirring occasionally, until white. Dont cook until completely done. If using pre-cooked chicken, just add it and move forward.

  • Add the garlic and spices. Stir.

  • Add the can of chiles, diced tomatoes, salsa verde, and beans. Stir.

  • Add the chicken broth, cilantro, and lime juice. Stir.
  • Place the lid on the Instant Pot and lock into position, setting the steam release knob to the Sealing position.
  • Press the Cancel/Keep Warm button to turn off the sauté function.
  • Stir, taste, and adjust salt, if desired.

    Instant Pot White Chicken Chili is the perfect homemade meal for busy weeknights. With the help of the pressure cooker, you end up with a warm bowl of delicious chili in no time.     We have made this recipe many times over the years, and recommend using fresh and quality products for the best results. Try using organic meat, and for your beans, go with non-BPA lined cans.

    We use fresh chicken breasts, but thighs will work just as fine. However, if you prefer to go with thighs, we recommend using skinless and boneless thighs for this recipe.

    Ingredients For White Bean Chicken Chili

    This chili recipe is highly versatile and customizable. Make it less or more spicy for your crew, add more cream cheese, or make Instant Pot chicken chili with canned or dried beans. Not to mention all ingredients are very forgiving.

    • Chicken: Boneless and skinless chicken breasts or thighs. You can even use separated frozen chicken breasts. Same cook time.
    • White beans: Use low sodium or no salt added canned beans like cannellini, navy or great Northern beans. For dried, use 1 cup rinsed dried white beans with 2 cups of stock , and cook chili for 35 minutes.
    • Corn: Fresh, cooked, frozen , or canned corn works.
    • Veggies and fruit: Onion , fresh cilantro and fresh lime juice .
    • Broth: Low sodium chicken broth, chicken stock, or vegetable broth. I like to use organic bouillon cubes or paste diluted in water.
    • Diced green chiles: In a 4 oz can found in Mexican food aisle or shelf. You could use a minced jalapeno with seeds removed or salsa verde instead.
    • Spices: Chili powder, garlic powder, cumin, salt, pepper.
    • Dairy: Greek yogurt and cream cheese.

    How To Make Instant Pot White Chicken Chili

    Absolutely everyone loves a hot bowl of this white creamy and hearty chili. Especially, kids love to add their own toppings. You can also double the recipe in large Instant Pot.

    Step 1: Add meat, veggies and spices to Instant Pot.

    We will make chili creamy and add fresh herbs after it is cooked. Dairy scorches under pressure, thats why we dont add it before.

    Step 2: Cook on high pressure for 20 minutes and allow 10 minutes natural release. Then turn pressure cooker valve to Venting.

    If you vent right away, stew will splatter all over your counters. Shred chicken, I like to do so right in Instant Pot with 2 forks.

    Step 3: Add yogurt, cream cheese and herbs. You can use all yogurt, cream cheese or heavy cream. I like my proportions for balance of health and creaminess.

    How To Store Leftover Chili:

    * For the fridge: Let the chili cool down, then transfer it to a container with a lid and keep in the refrigerator for up to 5 days.

    * For the freezer: Let the cooked chili cool down and then pack it up in a ziptop freezer bag or a freezer safe container. It will keep for 4-6 months.

    * Dont forget to label it before it goes in the freezer! I also like to keep a list of food I have in the freezer in my desk, so I can see what we need to use up without having to dig through the freezer.

    • In the instant pot insert, add the white beans, pinto beans, green chiles, frozen corn, diced onion, minced garlic, diced tomatoes, tomato sauce, and taco seasoning. Pour in the chicken stock, then nestle the chicken breasts on top.

    Tips On Avoiding The Burn Notice On Newer Instant Pot Models

    I know some of you are having issues with getting the burn notice on your Instant Pot, after doing some research, I learned the newer IP models have a more sensitive trigger burn sensor that cant tell the difference between a slight caramelized residue and totally burnt. To avoid this here are some tips I hope can help:

    • After you sauté your ingredients, press cancel to shut off the heat so it doesnt continue heating up.
    • When using the sauté button always deglaze the pot after sautéing with some water or broth before adding your other ingredients and use a wooden spoon or spatula to remove any food that may be stuck to the bottom.
    • Make sure the sealing ring is installed properly, if not steam will escape and scorch the food on the bottom of the pan.
    • Make sure your steam release button is set to sealing, not venting so steam does not escape.
    • Recipes containing tomato sauce or puree, tend to scorch on the bottom while the Instant Pot is coming to pressure since they are not thin enough to build steam. The best solution is to layer the ingredients so the tomatoes are last, on top. Also, not stirring may help avoiding the burn notice.

    I hope these tips help, please let me know if you are still getting the burn notice, this didnt happen with my older model so I am trying to figure this out!

    How To Pressure Cook Chicken Chili

    The first step to pressure cooking this Instant Pot Chipotle Chicken Chili is to saute the diced onions, garlic, and chipotle peppers in adobo sauce.

    It is always important to deglaze the pot before pressure cooking as any stuck-on bits will cause a burn notice.

    To deglaze the pot, add the chicken broth to the pot and scrape the bottom to remove any pieces that stuck to the liner.

    Add the boneless skinless chicken breasts next and then layer the seasonings, kidney beans, pinto beans, and black beans. Top with the diced tomatoes and the lime juice.

    You can use frozen chicken breasts when making this Instant Pot Chicken Chili but it will increase the time that it takes the Instant Pot to get to pressure.

    The lid is then placed on the pot and the vent is closed. The Instant Pot chicken chili is then pressure cooked on the high setting for 15 minutes.

    As with any meat, allow the pot to naturally release pressure for 10 minutes before removing the lid. Quick releasing the pressure in a pressure cooker will result in dry or rubbery meat. Be patient, its worth the wait!

    I make my chili using an Instant Pot electric pressure cooker. If you use another brand of electric pressure cooker you should be able to make it work just fine. There may be some adjustments required for a stove top pressure cooker.

    How To Make Instant Pot Chicken Chili#

    Set Instant Pot to sauté mode and add the oil, then add onion and pepper and sauté for 5 minutes, until softened.Stir in the garlic, then the chicken, and cook until nicely browned, making sure to break up the chicken while browning.Next, add chicken stock and quickly deglaze the Instant Pot insert by scraping the bottom with a wooden spoon in case anything is stuck.Then layer in the remaining ingredients, ending with chopped tomatoes and beans on top, making sure NOT to mix.Place the lid on the Instant Pot, turn the valve to the sealing position, select manual pressure / high pressure, and set the timer to 15 minutes.When cook time is complete, allow for a full natural pressure release . Open the lid, stir thoroughly, then garnish and serve.
