Best Bones For Bone Broth

How to Make Bone Broth in the Instant Pot or Slow Cooker
  • The best beef bones to use are knuckles, joints, feet, and marrow bones.
  • For added flavor incorporate meaty bones like oxtail, shank, and short ribs.
  • Chicken feet contain loads of gelatin and are less expensive than other gelatin-rich bones.
  • The bones of younger animals contain a lot of cartilage, as it is this cartilage that will eventually turn to bone as the animal ages. For this reason, veal bones are particularly prized for making stock.
  • If you cant get your hands on any marrow bones, 1-2 whole roasted chicken carcasses will also work. Keep in mind, however, that your broth will contain less collagen.

What bones did I use in this recipe? For this Instant Pot Bone Broth recipe, I added a mix of collagen-rich beef bones as well as chicken feet. If youre unsure at all, ask your local butcher for the best broth bones and then request that he or she cut them in half.

The Best Instant Pot Bone Broth Recipe

Instant Pot bone broth! You guys, finally. Finally! Its here. After so many comments and requests wondering how to make this stove-top bone broth recipe in the Instant Pot, its here!

Just like my stovetop version, this Instant Pot bone broth recipe is wiggly giggly gelatin gold cooked and ready to enjoy in less than 4 hours!

Some things you should know before diving headfirst into making this recipe:

  • First, and most importantly, read this post. Or, at the very least, the key points. Ive spent many hours testing and researching bone broth so that I may share all that I learn with all of you.
  • Youll need an Instant Pot . After all, we are pressure cooking bone broth, right? Anyway, I made this recipe in my 6-quart Instant Pot, but use your 8-quart pot if you have one. Better yet, have two Instant Pots? Double the recipe .
  • Blanching and browning the bones is completely optionalthough highly recommended. Read more about why I always blanch and brown my bones below.
  • Freezing Bone Broth For Long Term Storage

More than likely youll have a bigger batch of broth than you can use over the course of a few days.

You can freeze the majority using it later on as you need it. Once your pot of broth and bones has cooled, strain the liquid into your storage containers.

Depending on how you plan to use the broth later on, you can freeze it in mason jars or plastic containers.

Pour the broth in your containers and leave them on the counter until they have cooled to room temperature before sealing the containers and storing them.

I always advise you to label your containers with todays date before placing them into the freezer.

Did you use ice cube trays? Set them in the freezer for a few hours or until it freezes the broth. Then pop them out and transfer them to a freezer bag.

Label the bag with todays date and put it back in the freezer. You can grab individual bone broth cubes as you want to feed them to your dog.

How To Store Your Bone Broth

Once the broth has cooled for about an hour, use yourslotted spoon to remove all the bones and vegetables from the broth. I put themin a bowl so that the broth can fall to the bottom.

Spread out a towel under your jars. Put your funnel in thejar and put the strainer on top of that. Then pour the broth into the jar.

You will see that the fat comes right to the top of the jar.

    This is a good thing!

The first jar will have the most and sometimes I pour someof that out. I pour that into a paper cup or a can.

The fat on top is important. It seals your broth once it hardens.

Continue filling up your jars. Then carefully get the brothfrom your bowl where you put your bones and broth.

Dispose of the bones and vegetables.

Once your broth is in the jars, set them on a cooling rackand let them cool some more.

Then put the lids on and put in your refrigerator.

Bone broth prepared this way will last about a week in the refrigerator.

How to Make Bone Broth (Instant Pot)

Instant Pot Better Than Botox Bone Broth is full of natural collagen! Make chicken, pork or beef stock using kitchen scraps and your electric pressure cooker.

I talked in this post about how youll almost always find a mysterious bag of bones in my freezer. Theres also probably some onion peels, carrot nubs, parsley ends and celery leaves in there its my bag of bone broth making goodies. All that stuff that youd typically throw away in the garbage is perfect for making bone broth, or stock as its otherwise known.

I also use this technique for my homemade seafood stock recipe.

So, whenever Im chopping up some veggies for dinner, Ill pull out that ziploc freezer bag and just load those peels, ends and leaves in there. And, when Im making something like this Easy Roasted Chicken or these Short Ribs, those bones will find their way in there too. When the bag is full, I just empty it into my Instant Pot, add a good glug of apple cider vinegar and add water to 1-inch below the fill line. Then, I just set it to cook on high pressure for 120 minutes.

Once the 2 hours is up, I let the pressure release naturally and voila! Strain the broth and discard the bones and veggies and youre left with the most beautiful, golden broth!

Is Bone Broth Some New Fancy Food Trend

While bone broth is quite trendy now, it is absolutely not a new food! Healing broths and stocks have been part of the vast majority of cultures for centuries. Chances are if you can speak with an elder in your community, they can tell you stories about healing bone broth and soups from their childhood. If youd like to read more about traditional foods and how they are missing from our current diets, I highly recommend checking out Nourishing Traditions by Sally Fallon. Its an incredibly eye-opening look into how weve stripped away the traditional preparation methods for many of our foods in the interest of saving-time.

Instant Pot Bone Broth Experiment Conclusions:

    • Longer pressure cooking time doesnt always mean the bone broth will turn out better or tastes better.
    • Sauteed bones always produce a richer taste & darker broth color than the Non-Sauteed versions.

Weighing the three factors, our desired result in pressure cooking bone broth is Test #5. It produced the best overall flavor, gelatinous texture, and color.

Add Aromatics Apple Cider Vinegar And Water Soak

In our house, we use the lazy girl method of doing bone broth by saving up veggie scraps in the freezer. I have a freezer bag that all my onion, celery, and carrot scraps go into, and when its time to make bone broth, I grab a big handful and put in the pot with the roasted bones. You can also roughly chop up fresh aromaticsor use none at all. Some bone broth purists would say all you need to make bone broth is bones and water, but I like the complexity a little bit of veggie scraps adds.

I also add in apple cider vinegar , bay leaves, whole black peppercorns, and salt. I used to add garlic, but Ive found it just becomes too overpowering for my tastes during a long simmerso I tend to leave it out now. This is just my preference for seasoningsyou really can experiment to figure out what your favorite combination is!

I then cover the bones and scraps with filtered water from my Berkey water filter. I then let the whole mixture soak for about 30 minutes. Ive never seen the exact research on why this is a common practice when making bone brothso it might be completely uncessearybut I figure it doesnt hurt.

Making Bone Broth In A Slow Cooker Pros

How to Make Bone Broth in an Instant Pot

I was finally able to get consistently gelling broth when I switched from the stovetop to a slow cooker. And I made bone broth in my slow cooker for years and years.

Pros of making bone broth in a slow cooker:

    #1 No babysitting.

I burned a few batches of broth when I made it on the stove and let me tell ya, scrubbing out the burned remains of chicken feet and bones from the bottom of a stainless steel pot is not how I want to spend an afternoon.

The slow cooker, set on low, stays at a fairly constant temperature, meaning I can go to bed and leave it overnight without having to worry about waking up to a burned batch in the morning.

    #2 More consistent temperature.

Cooking on an electric stove frequently results in having to adjust the stoves temperature.

Cooking on a gas stove may require less adjusting, but you do have to adjust nonetheless.

The slow cooker really requires no adjusting.

    #3 Less waste.

A lot of water evaporates when cooking anything liquid on the stove top. Put a lid on your pot and the temperature goes up leading to boiling over, liquid evaporation, and needing to babysit the temperature.

What starts as a gallon of water may leave you with only two to three quarts of stock if relying on a pot without a lid that seals and the stove top. I have this Crock Pot, and I lose very little liquid because of the lid that seals down tightly.

    #4 Amazing for bigger bones.

Is There Such A Thing As Vegetarian Or Vegan Bone Broth

Sorry, Charlie. Yall know I love making vegan and vegetarian versions of our favorite carnivore dishes , but this is one case where there just isnt a substitute for my herbivore friends. Thats not to say you cant make a very good, very healing, very nutritious vegetarian brothyou absolutely can, its just obviously not going to be bone broth! In fact, while plants themselves dont produce collagen, many of them do promote collagen-building within our own bodiesbasically, you can make a broth that can help your body repair its own collagen and keep it vegan. Here is a good vegan bone broth recipe to try out from MindBodyGreen.

Instant Pot Chicken Bone Broth Ingredients:

    • Bones from 3-4 lb chicken we like to use the leftover bones from our Instant Pot Whole Chicken recipe or leftover bones from a rotisserie chicken to make things easy.
    • Apple Cider Vinegar vinegar is a key ingredient as it pulls the nutrients from the bones into the broth.
    • Vegetables Carrots, Celery, Parsnip, Onion, and Garlic. We recommend adding vegetables as they add great flavor and nutrients, however, they are optional.
    • Fresh Herbs we like to use a mix of sage, rosemary, thyme, and/or parsley. Like vegetables, herbs are optional.
    • Seasoning salt, peppercorns, and a bay leaf

Pro tip: we like to collect leftover bones and vegetable trimmings in separate bags in the freezer. Throughout the week, well throw in any leftover bones from our meals, plus any veggies or herbs that are starting to go downhill. Then, when were ready to make some bone broth, we have everything we need in the freezer!

I primarily use my Instant Pot to make broth for soups. Sometimes I make the soup in the Instant Pot, other times I revert to the traditional stove top method for soups. Getting the broth right is the hard part. Some of my favorite soups are Beet Borscht and Italian Minestrone.

Other people simply drink the broth by itself in a mug, the original cup of soup. I’ve even heard of people making bone broth popsicles . Like any stock, it can be used as a flavor enhancer. Freeze some in an ice cube tray to use in small amounts when cooking. Use it like you would regular soup stock, but with extra benefits.

    Add Water Bone And Vinegar

First of all, you should fill your cooking pot with bones. Because you will have to make sure theres a lot of healthy, joint-protecting gelatin in your broth. You should consider using bones with a lot of joints in them like chicken feet. You should also add some garlic to your bone broth and also some flavor. . If you dont have a pressure cooker, you can use a normal cooking pot on your stove. But you have to allow it to cook overnight so I prefer using the cooking pot.

natural, wheat-grass bones will do just fine dont skimp on the bones, and feel free to use thrown out bones from your own food theyre just fine for the broth.

Serving Bone Broth To Dogs As A Meal

How to Make Healing Bone Broth in the Instant Pot

When one of my dogs isn’t feeling too hot, I’ll give them bone broth as a meal. I mostly give it to my dogs when they have an upset tummy. It’s super easy on the system and makes sure that the dogs are getting nutrients.

Many raw feeders believe in fasting their dogs. I’m too much of a sucker for those I’m starving to death puppy eyes they give to me. Serving dogs a meal of bone broth offers a gentler fast.

I typically give my dogs 1-1/2 to 2 cups of bone broth when I serve it as a meal. Rodrigo and Scout get closer to 2 cups Sydney and Zoey get closer to 1-1/2 cups of bone broth.
