There are several ways to cook tamales but steaming them is widely accepted as the most suitable method.

Reheating Tamales In A Skillet

A further delicious way to heat your tamales is via skillet. And if this golden tint is your desire, its your way!

  • Preheat over gentle heat your big skillet. During cooking, remove the husks of corn on your tamale.
  • When heated, add 1 tsp of veg oil or lard. Permit the oil heat first before your tamale also place.
  • Arrange the tamales gently on the heated skillet. Fry the tamale on each side for 3 or 4 mines until golden brown. Continue to fry till the tamale are boiling.

Reheat tamales in the Air fryer

Just heat the air fryer to reheat the tamales in the air fryer. Moisten the tamales exterior with a low of water. Insert them in the basket and cook them for five min at medium temperature.

  • Lay the tamale and let them stand at room temperature. If you do not have the time to wait, let them sit for 10 minutes first at room temperature.
  • Keep the husks of the tamales. Moisten the tamale using a rubbing brush on either edge. When the husks are now gone, immediately dampen the tamales.
  • Preheat your fryer to medium temperature.
  • Put the tamales in the basket of the air fryers. Make sure you dont overstretch them there must be a gap around them so that air can pass.
  • Heat them for 5-8 minutes.
  • Very cautious about taking them out of the basket as they might be warm.

Make The Filling For Pork Tamales

Next, its time to cook that pork shoulder. This is the easy, set-it-and-forget it step to Instant Pot Pork Tamales. Just like you would for pressure cooker pulled pork, start with a flavorful cooking liquid.

We flavor the filling with onion, garlic, two kinds of chili powder, and cumin.

Dont be alarmed by the two kinds of chili powder! They give this dish a great flavor without making the meat too spicy! These pork tamales are fully kid-approved. Especially when the filling is encased with fluffy masa dough!

Set the pork shoulder on top of the cooking liquid and seal the pressure cooker. The meat cooks on High Pressure for 75 minutes. This long cooking time results in tender, fall-apart pork shoulder that shreds beautifully.

When its finished, transfer the meat to a bowl and shred.

In a separate bowl, reserve the cooking liquid, which will flavor your masa!

After cooling, store the meat and cooking liquid in the fridge overnight.

How To Steam Tamales On The Stovetop

When you are reheating Tamales directly from frozen on the stovetop, It will take about 40 minutes. But you must check the Tamales for overcooking after every 20-minute interval. Heres how to steam Tamales on the stovetop.

  • In a pot, add enough water so that It covers 2 inches of the pot from the bottom. Now place the steamer insert in the water. It should not sink into the water or else the Tamales will get mushy.
  • Now carefully place your Tamales into the steamer insert standing up. Do not overfill the pot, do not let the Tamales touch the water, and last but not the least, do not let your Tamales fall over.

    For The Makeshift Steamer These Are What You Need:

    • 3 pieces of equal sized aluminum foil.
    • Heat-proof plate.
    • Large pot with lid.
    • Tongs.

    You can also try baking your tamales however steaming has become the cooking method of choice by many because it keeps the dough as soft and tender as possible. And since you have no steamer on hand, you are given two options for steaming tamalespan colander and plate method.

    I have chosen to go for the plate method for two reasons. First of all, a plate is more readily available than a colander. Second, the plate technique is perfect for flat-laying items like asparagus, eggplants and in this case, tamales.

    Important Notes When Cooking Zongzi In An Instant Pot

    Note 1: Good zongzi are not overstuffed.

    This is especially important when cooking them in an Instant Pot. It shouldnt be loose, but you also want to avoid packing in too much rice. Heres why:

    • Sticky rice expands as it cooks, so if the rice is compacted too tightly when raw, there isnt much room for the rice to expand.
    • The rice will take longer to cook through.
    • The texture may turn out dense and chewy, rather than gooey.
    • Flavor from the other filling ingredients wont seep into the rice as easily.
    • Most importantly, the bamboo leaves may burst, causing you to lose rice and flavor. Overstuffed zongzi are especially prone to bursting in the high pressure environment of the Instant Pot.

    Note 2: Cook each type separately!

    If youre making multiple zongzi flavors or varieties, you shouldnt cook more than one variety at a time. If you cook multiple flavors together, they will end up tasting the same.

    This is especially important when it comes to making savory and sweet zongzi. Be sure to cook them separately!

    How to Make Easy Tamales in a Crock Pot Instant Pot Pressure Cooker

    This is not a method that I would recommend as there is a lot of room for errors. But you can use this method if you arent able to use any other options mentioned here. Only thing is you have to absolutely make sure no water touches the tamales or they will turn very mushy.

    • Place the tamales in sous vide bag or an airtight food grade resealable bag. Ziploc bag isnt safe to be used for boiling.
    • Seal the bag and keep them in boiling water for 10-15 min.
    • Keep a close eye on the bag to make sure no leaks develop.

    How To Make Tamales In The Instant Pot

    The first step is to cook the red chile pork in the Instant Pot.

    Make the red chile sauce by rehydrating some dried chiles in hot water and then blending them up with some dried seasonings until completely smooth.

    Then, sear big chunks of boneless pork shoulder in the Instant Pot on all sides. Add in the red chile sauce, a bay leaf, and then pressure cook on high for 40 minutes followed by a natural release of 15 minutes.

    The pork shoulder will come out fall apart tender and will look like this photo below.

    Once the pork is done, transfer it to a large bowl and set it aside. Then wash and rinse the Instant Pot to get it ready for cooking the tamales!

    Next, make the masa by combing masa harina, salt, baking powder, vegetable oil, and broth.

    Once the masa is done, its time to assemble! Using the back of a large spoon, spread out the masa onto one side of each corn husk, leaving about the top 1/3 of the corn husk clean. Try to spread it out so its not too thick, but not so thin that it doesnt completely cover the corn husk. Just do your best! Tamales can be very forgiving.

    Spoon a little of the red chile pork into the center of the corn husk, then fold it over once like a book, then once more, and then fold over the pointy edge so that theres only one open edge in the corn husk.

    Lastly, prepare the Instant Pot for cooking the tamales!

    Close the lid, seal the pressure valve, and pressure cook on high for 45 minutes followed by a natural pressure release of 15 minutes.

    How To Reheat Tamales In An Instant Pot

    If you are reheating Tamales using the instant pot method, you must have a steamer basket specially designed for the pot. Follow the steps below to reheat or steam or Tamales in an instant pot.

  • Fill your pot with at least 2 cups of water to produce steam sufficient for proper heating. Make sure your Tamales do not touch the water in the pot.
  • Place the Tamales in the basket in a circular pattern and make sure they are placed in a standing position with the open end facing upwards.
  • Close the instant pot with a tight lid and set the timer for 15 minutes.
  • After 15 minutes, let the pressure release naturally. After the pressure has released, remove the basket using tongs or mittens.

    How Do You Make The Masa For Authentic Pork Tamales

    Ive seen recipes where they recommend using oil instead of lard. Dont do that. You want masa flour and lard. Otherwise, you wont get that authentic tamale flavor.

    You also want to use the pork roast drippings. Its best to run it through a fine mesh sieve, and then combine it with chicken broth until youve got about 3 to 3 1/2 cups. Then, slowly add it as you mix the masa until you have the right consistency. The perfect consistency is like peanut butter thick but spreadable. If its too runny, slowly add a bit more masa at a time until you get that peanut butter consistency. If its too dry, add more of the pork juice.

  • Set a round metal rack inside a large pot.
  • Place a metal heat-safe bowl inside the pot upside down, resting it on top of the rack.
  • Stand the tamales on end inside the pot, resting them between the bowl and pot.

  • Steam the tamales for one hour, checking the water level every 15 minutes or so.

    And just so you know the correct terminology, if youre talking about one tamale its actually called a tamal vs two tamales is tamales. And, if youre having a party for assembling tamales, its called a tamalada.

    I know I’m going to be upsetting some people by making tamales without lard! Tamales, like most time-honored recipes have been passed down from generations and are large part of Mexican family traditions.

    Tamales are a common dish eaten during the holidays and can range from savory to sweet. Families traditionally make large batches and an assembly type line is helpful to get the process moving quicker. The recipe I’m sharing with you is for a small batch, but of course can be doubled up as needed.

    Instant Pot Steamed Tamales

    Making tamales is a labor of love. Make it easier on yourself by cutting out the lard and making Instant Pot steamed tamales. Any fillings you like with an easy to follow method.

    Just in case you havent noticed, I have been sharing, slowly but surely, most of what was on our Christmas dinner menu. My apologies if you already noticed this and I am just being Captain Obvious right now.

    Better late than never!

    This year for Christmas we flipped the script and ate everything from pozole to tamales. We had lots of salsa and toppings. I even made a small side of Mexican street corn off the cob in addition to Mexican rice. I would like to say that after this meal I felt satisfied and not the typical roll-me-out-of the-dining-room after dinner sorta full.

    That satisfied feeling was in big part to the menuand also maybe hosting and running around like a loon for a while.

    This recipe for tamales is from my second book, The Big Book of Instant Pot Recipes. It isnt very traditional. There is stock used in the place of the lard/fat. You do also add in a bit of canola oil to the tamale filling so that does help with the moisture factor.

    A tamale is a steamed masa dough with a few spoonfuls of a sweet or savory filling tucked inside and rolled together tightly in a banana leaf or corn husk. Captain Obvious here again for some of you.

    What If I Dont Have A Steamer Basket

    HOW TO STEAM TAMALES IN THE INSTANT POT

    If you need to reheat tamales but dont have a steamer basket, you can try standing the tamales up on the trivet that came with your Instant Pot. It can be a little tricky to balance them this way, but it can still be done!

    Alternatively, you can lay the tamales flat on the trivet and steam them that way.

    If youre stacking several tamales, Id increase the steam time by a couple of minutes. But if youre just laying a few on the trivet, the 5 minute recommendation should work just fine.

    Either way, enjoy your perfectly reheated tamales! I love serving mine with some Instant Pot Spanish rice or Instant Pot yellow rice as a quick and easy side item.

    There is a secret to reheating a tamale in the microwave. The secret is to know if your tamales are already thawed or still frozen. Youll then want to wrap them in a damp paper towel, cover, and microwave them.   • Set your deep fryer to medium.
  • Remove the husk from the tamales, and pat them dry with a paper towel if there is any excess moisture.
  • Slowly lower them into the oil and cook for 2-3 minutes.
  • When the tamales are golden brown, gently remove them from the oil and transfer to a paper-towel lined plate or a wire rack.

    Add water to the cooker until it reaches just below the surface of the rack. Lay tamales on the rack. If your slow cooker is able, heat the water quickly using the sauté or steam function, then lower the heat to slow cook. Cover and cook on HIGH for about 1-2 hours, or until the tamales reach at least 165 degrees.

    How To Soak Corn Husks For Tamales

    Simply fill up a large pot of cool water and place the corn husks inside. Place a plate or a weight on top of the corn husks to keep them fully submerged. Let soak for several hours or overnight.
