    First, we need to determine how much rice you need to make.

    What Type Of Rice Do You Use For Sushi

    Sushi Rice is rice thats flavoured with vinegar-based seasonings. Sushi rice is made of white, short-grain Japanese rice seasoned with rice vinegar, sugar, and salt. However, keep in mind that some rice companies outside of Japan call their short grain rice sushi rice so make sure to double check where it is made and if its truly sushi rice or just short grain rice.

    If you want real sushi rice, it is important you purchase authentic sushi rice as the consistency and flavour of Japanese rice is very different from other types of rice. Sushi rice has higher moisture content and is characterized by its stickiness and texture.

    How To Cook Sushi Rice In An Instant Pot

    To make the most delicious sushi rice in the Instant Pot perfectly every time, start by thoroughly rinsing the rice 6 to 8 times without allowing the rice to absorb too much water.

    Pour the water and rice into the inner pot and close the lid. Set the valve to sealing and pressure cook for 6 minutes. Once it goes off, allow the pressure to naturally release pressure.

    While the rice is pressure cooking, make the seasoning in a glass bowl. Dissolve the salt and sugar thoroughly in the sushi vinegar or rice vinegar. Carefully open the vent to do a quick release.

    Once the rice is ready, carefully open the lid and fluff the rice with a fork. Gently remove the rice into a glass or wooden bowl without breaking the rice. Next, pour in the sushi rice seasoning and gently mix it in the rice using a wooden spoon.

    Once you have mixed the rice, the sushi rice is ready to roll into a sushi roll or to be added to a sushi bowl.

    Instant Pot Sushi Rice Recipe – How To Cook Sushi Rice In The Instant Pot – Perfect Sticky Rice!

    Rice. For best results, use sushi rice . The best options are rice that is labelled sushi rice or Japanese style rice. The next best alternative is Calrose style as a more budget friendly option.

    If you’re in a real pinch, arborio rice or glutinous rice can work though will miss the same texture and either be too sticky or too hard. Sushi rice is best.

    Vinegar. Rice vinegar is the best for sushi rice. If you live somewhere that you can’t find rice vinegar, you can use white wine vinegar or slightly diluted apple cider vinegar in a pinch. Try to find the real stuff!

    No Instant Pot No Problem

    You can also make sticky rice on the stovetop or in a rice cooker.

    • Stove-top: Soak your rice and then place the rice in the colander. Add enough water in the pot to just touch the bottom of the colander. Bring the water to a simmer and cover it and steam it for about 10 minutes. You must make sure to flip the rice halfway through, like a giant pancake.
    • Rice Cooker: Place your rice and water in the rice cooker to let it soak there for 40 minutes to 4 hours. Then you can turn your rice cooker on cook until its done.

    Like we said no instant pot no problem!

    Can You Freeze Sushi Rice

    Although this is not an ideal option, you can also freeze cooked sushi rice. If you do this, keep in mind that thawed rice often ends up with an odd texture. Rather than freezing leftover sushi rice bowls, its better to use any leftover rice to make another meal.

    If you do plan to freeze it, store it in an airtight freezer-safe container or zip-top freezer bag. Be sure to release as much air from the bag as possible. Rice will keep in the freezer for up to three months.

    Fluff & Add Sushi Vinegar

    When there are around 5 minutes left on the 20-minutes natural release, cool the sushi vinegar by placing the saucepan in a sink filled with cold tap water.

    Once cooled, remove the kombu from the sushi vinegar.

    Gently transfer the sushi rice to a Hangiri Sushi Rice Barrel or large container.

    Gently spread out the sushi rice with a Wooden Rice Paddle or plastic rice paddle.

    *Pro Tip: Be very careful not to crush or press on the sushi rice because this may break the rice grain or make them mushy! Try using a slicing motion at a 45° angle.

    Slowly pour and evenly distribute the sushi vinegar on every rice grain.

    *Pro Tip: You can pour the sushi vinegar on the rice paddle to give it a more even spread.

    Gently mix the sushi rice with the rice paddle.

    *Pro Tip: We used a portable electric fan to cool off the sushi rice to room temperature simultaneously to give the sushi rice a beautiful shiny gloss.

    What Is Sushi Rice And How To Make It

    Instant Pot Sushi Rice

    Though you can make sushi with just about any rice, or even quinoa, traditional sushi rice differs from other rice varieties in a few ways. Sushi rice is typically more flavorful, with a balance of sweet, salty, and tangy. When cooked, its tender, moist and clingy, perfect for holding sushi rolls together.

    Instant Pot Cooking Method

    Rinsing the rice: Place the rice into a mixing bowl and cover with cold water. Clean the rice in the water with your hand, 2-3 times or until the water is clear.

    After the rice is rinsed, let the rice drain in a colander or strainer for 5-10 minutes.

    Cook rice: Pour in cold water and the well rinsed & drained rice in Instant Pot. Ensure all the rice is fully submerged in the water. Pressure cook for 5 minutes at HIGH pressure. Allow for a natural pressure release for five minutes before releasing steam manually.

    Seasoning: While the rice cooks, mix the vinegar, sugar, and salt in a bowl until blended. Gently heat in microwave or in a pan on stovetop, if needed.

    Note: Do not bring sushi vinegar to a boil. Mix it well and make sure that the sugar and salt get dissolved in the vinegar mixture.

    Season the rice: Transfer the rice to a large container or a bowl and gently spread out the rice with a rice paddle. Slowly & evenly pour the sushi vinegar over the rice. Gently mix the rice with the rice paddle.

    That’s it your sushi rice is ready to eat! If you are making sushi rolls, keep it covered with a kitchen towel to prevent it from drying till the sushi rice is cooled to room temperature.

    Close the lid and turn the valve to a sealing position. Press the Pressure Cook or Manual button and set the time to 4 minutes on HIGH pressure.

    When the Instant Pot is done cooking, let the pressure release naturally for 10 minutes followed by a quick release to release the remaining steam.

    Open the Instant Pot, remove the cooked rice from the Instant Pot, and serve!

    The Instant Pots rice button is best used for white rice, as it is specifically calibrated to weigh white rice and water and cook the rice accordingly. This is ideal for weeknights when you truly want to set and forget your rice, but not great for cooking different varieties of rice on the fly.

    How To Cook Sushi Rice On The Stove Top

    You can make this sushi rice on the stove top if you prefer. Rinse the rice 6 to 8 times to remove some of the extra starch.

    Add the water to a medium sized saucepan. Bring the water to a boil and stir in the rice. Once the rice is stirred in, reduce to a simmer and cover. Cook until the water has evaporated and the rice is fully cooked. Fluff the rice with a fork.

    In a small glass bowl, combine the salt, sugar, and vinegar. Transfer the rice to another glass or wooden bowl and mix in the vinegar mixture. Once combined, you can use it to make sushi or a sushi bowl.

    Cook In High Pressure For 2 Minutes

    After testing a few different variations, the best cooking time for short grain rice is 2 minutes on high pressure. Ive also tried using the Rice mode on the Instant Pot, which is set to 12 minutes on low pressure. As both manual and Rice mode takes 5 minutes to pressurize, Rice mode takes extra 10 minutes to cook.

    The Ratio For Water To Rice Is 1 To 1

    The golden rule for the ratio for Japanese short-grain rice to water is 1 to 1.1 or 1.2. So if the rice is 180 ml , you will need 200 ml water.

    However, when the rice is cooked in the Instant Pot, the steam does not escape from the pressure cooking. Therefore, the best ratio for the rice to water is one to one.

    Basmati rice is similar to jasmine rice. Though it can be used in sushi, it will have a different flavor and feel than sushi rice.

    Sushi rice is a short grain, white rice similar to pearl rice, Glutinous rice, or Japanese rice. When soaked in vinegar, the rice develops a sour flavor.

    What Kind Of Rice To Use

    The instructions below include directions for brown or white rice. You can also combine brown and white, and I have directions for that, too.

    Really, the only differences between making white vs. brown sushi rice in the Instant Pot are the water amounts and cooking time. Technique-wise, they’re both equally easy.

    White sushi rice uses one part water to one part rice and cooks at pressure for 5 minutes. For brown rice or a brown/white rice blend, you just use a bit more water and cook at pressure for 22 minutes.

    Traditionally, you’d use short grain rice to make sushi rice, because it gets stickier. Stickier is better for making sushi rolls.

    However, over the years, I’ve used medium and even long grain white rice to make sushi rice, and it has worked fine. Short grain is best, but if you can’t find it, you have options.

    When it comes to brown rice, I recommend using short or medium grain only. Long grain brown rice just won’t get sticky enough, and your rolls will fall apart.
