When you use a pressure cooker, you need to have enough liquid in the pot for it to come up to pressure and cook the food properly. The rule of liquids in pressure cooking is to always add at least 1 cup of liquid unless the recipe states otherwise. The liquid will help create enough steam to cook the meal.

Why Use The Pressure Cooker
Pressure cooking in the Instant Pot reduces the cooking time a fair amount. Using an electric one also allows you to leave the pot unattended while it cooks. This Instant Pot Vegetable Soup is incredibly freezer friendly!
Simply let cool to room temperature, pour into a freezer safe container or freezer bag, seal and freeze .
With soup, you need to make sure you leave room at the top if using a container of any kind as the soup will expand as it freezes.
To heat, let thaw overnight in the refrigerator or in a sink of cold water. Then reheat in the microwave or on the stove top .
*Note that not all dairy freezes well, so keep this in mind if adjusting the recipe.
What Veggies To Use
The short answer is: use any vegetables you want/like/have on hand!
The long answer is
There is no right or wrong answer! Do you have tons of squash from your garden? Use that! Did your neighbor unload his bumper crop of cauliflower on you? Use that! Did you find a great deal on organic beets or broccoli or spinach? Use those!

Why Dont You Add All The Ingredients At Once
Its important to add the ingredients in the order specified in the recipe for optimal cooking.
I opted not to add the tomatoes with the initial soak because it increases the cook time needed for tender beans. Hurst recommends adding tomatoes after the beans are tender.
In addition, I love the pop of color the carrots give to the soup, but theyd be mushy if you added them too soon. Adding the spinach after pressure cooking wilts the spinach, but adds a nice fresh green color.
Adding the lemon juice at the very end enhances the flavor of the beans and adds a little brightness to the soup. If you wanted, you could also add the spice packet with the lemon juice.

So what is bone broth anyway? Bone broth is basically stock thats been cooked for such a long time that the tendons and connective tissues have dissolved and the bones are falling apart and fragile. The extra long cook time helps more collagen and nutrients dissolve into the broth. Its because of this that so many people consider it to have healing benefits for the joints, gut and immune system.
We arent nutritionists so we wont go too far into that, but what I can tell you is that bone broth tastes more rich and intense than regular stock or broth. Its absolutely delicious as a warm drink or light soup. I especially love adding a little fresh pepper, minced ginger and herbs to mine. Think of it as a savory tea.

You can technically make bone broth on the stovetop, but it will take a very long time over 24 hours. Since we cant commit to standing next to a simmering pot for that long, we turn to a pressure cooker or slow cooker to make it. A pressure cooker takes about 4 hours, while the slow cooker will take 24 to 48 hours.
For the most rich and intensely flavored broth, roast your bones. We simply add them in one layer to a baking sheet and roast in a very hot oven until brown. It takes about 30 minutes.
Instant Pot Slow Cook Setting
