If you have leftover steak, be sure to follow these simple storage and reheating instructions.

  • To Store: Wrap the steak tightly in plastic wrap or place it in a food storage bag and press out as much air as possible before sealing.
  • Flank steak will keep for up to 3 days in the refrigerator.
  • To Reheat: Its best to place your steak on the counter at room temperature for about 15 to 20 minutes before reheating it. That way, it only needs a little bit of heating to come to the proper temperature. Less heat means less drying! From there, I recommend placing the steak in a covered skillet over low heat, and cooking until it comes just to the correct temperature. The correct temperature is 135°F for medium, or about 130°F for medium-rare.

Cooking Your London Broil

When your steak has been properly marinated and is ready to cook, remove the marinade by scraping off the excess garlic and shallots and patting the meat dry with a paper towel.

Add your meat to an oiled broiler pan or pre-heated cast-iron skillet and season with salt and pepper before placing the pan about 4 inches from the broiler, set to high. Broil for 6-8 minutes before flipping and cooking for an additional 6-10 minutes. When the steak appears to be nearing completion, check the internal temperature of the meat with a thermometer, removing the beef when it hits 125 degrees Fahrenheit. While the ideal medium rare temperature is 135-145 degrees, since the steak will continue to cook as it rests, taking it out slightly before it reaches this temperature guarantees the meat wont overcook.

After removing it from the oven, allow your meat to rest for about 10 minutes, tented with foil, before slicing into thin pieces. For the best result, cut across the grainrather than with itby slicing vertically through the lines running across the steak. Then, drizzle your slices with the pan juices before serving.

  • If youre not planning to marinate the meat for more than two hours, you can just cover it with cling wrap and leave at room temperature. However, if youre marinating it for more than 2 hours, make sure you put it in the fridge to avoid bacterial growth during the marinating process. Letting it chilled in the fridge helps the meat strand to relax and soak up those nice and delicious flavors and aromas that you want to infuse.
  • If you left the steak marinated in the fridge for about 4 to 24 hours, take it out 10 minutes before you bake it and let it rest at room temperature.
  • Sear the London broil on a screaming hot cast-iron skillet before baking to get the best flavor and color on it. Use a cast iron broiler pan and sear the steak for at least 30 to 45 seconds on each side before you put it in the oven.
  • The searing process creates a lovely crust and caramelization between the beef and marinate. It also seals the juices inside the meat to prevent it from leaking during the broiling process keeping it moist. Do not skip this step, its worth it!
