- Dont skip using the metal trivet and water. If you skip these steps you will most likely end up with a burn notice!
- If you want a little extra flavor use the sauté function of your Instant Pot, add olive oil, and brown the outside of your chicken before you pressure cook.
- For a faster pressure cook time, sauté your chicken first!

This recipe is for an Instant Pot whole frozen chicken but fresh whole chickens are great in the Instant Pot as well. Chicken thighs with or without bone, with or without skin, fresh or frozen get the times needed to cook chicken thighs of any type in the Instant Pot. This is a great technique for when chicken thighs are on sale and youre doing meal prep for the week.
I really love chicken thigh meat. I find it much juicier and more flavorful than chicken breast. So when its on sale at my grocery store, I load up on it.
My new favorite way to cook chicken thighs, especially if Im doing food prep for the week, is to put it all into the Instant Pot. It comes out really juicy and tender and full of flavor. I mean it. If I put half an onion and some garlic cloves into the Instant Pot with that chicken, the meat seems to get penetrated by that flavor. Probably due to the high pressure of the Instant Pot cooking method.
What youre going to do is to season up your chicken thighs with salt and pepper and anything else youd like.
Then put some water into the bottom of your Instant Pot insert. 1 cup is enough. I often put 2-4 cups because that water ends up deliciously flavored and I use it as stock or broth during the week. Note that if you use more water, the time the Instant Pot takes to get pressurized will increase. You still set your Instant Pot for the same number of minutes, all that changes is what the Instant Pot does, not what you do.

Of course, how long to cook chicken breast in a pressure cooker will vary depending on how big your chicken breasts are. This recipe is based on a typical 6-8 ounce size. If yours are larger, you will need to increase the time by a few minutes.
Getting the cook time right is important to be able to make shred chicken breast easily. If its too dry, it will be hard to shred. Obviously, you dont want to under cook it, either. To remove the guesswork for you, Ive repeatedly tested the pressure cooking times below for fresh and frozen chicken.
Other than the cook time, the pressure release mechanism will impact how easy it will be to shred your Instant Pot chicken. Natural release results in the most tender meat and the most effortless shredding, so use that if you can. At the very least, use the natural release for five minutes prior to using the quick release option.
After cooking, you can shred the chicken breast directly in the pressure cooker using two forks. Hold the piece of chicken steady with one fork, while pulling and tearing away the shredded pieces with the other fork. Repeat the process until all your chicken is shredded.

Weve found that a lot of recipes for Instant Pot shredded chicken actually call for pressure cooking the chicken for less time than we do, but in our experimentation, the lower amount of time tends to yield more rubbery, hard-to-shred chicken, while the amount of time that we recommend really allows the protein to break down and become tender + very easily shreddable.

Of course, youll want to add cook time if youre using a regular recipe that doesnt call for frozen meat. Typically I add about 5 minutes per pound of meat. If youre going to make bone broth save the bones by placing them into a freezer-safe container with a lid or a zip-top bag. They can be refrigerated for up to 3 days or placed in the freezer for longer storage.
We almost always go on to make chicken stock right away heres a tutorial and recipe for that but sometimes we dont have the time so we just toss the bones in the bone bag in the freezer.
