However, if you are short on time, simply skip this step. The end product will be just as delicious. Also, when cooking frozen meat, youll want to skip browning it, as frozen meat does not brown well.

If you dont think that a 4-5 pound roast is a big enough piece for your needs, then feel free to get a bigger piece of pork butt, maybe even double the size as long as it fits into your instant pot.

Some instant pots are larger than others and thats what you would need for a bigger piece of Boston butt.

If you increase the size of the meat you will also logically have to increase the other ingredients to compensate. Just be sure if you add a bigger piece of meat that it does not go about the maximum fill line because you still need to have air space inside the pot.

    I have gotten a number of questions about doubling our reducing the size of the recipe. You can increase the meat without adding more liquid, just be sure not to fill the pot more than 2/3 full and make sure there is space around the sides of the pot so that it can come to pressure.

    If you are using a smaller piece of meat, you will still want to use the same cook time, but just use half the barbecue sauce called for when cooking.

    Generously coat pork shoulder in seasoning this seasoning is very simple but it combines great flavors and infuses these flavors into pork as it cooks.

    Sear the meat first after coating the meat in seasoning, sear it on each side. Simply use the sear setting on the Instant Pot, add some oil, and sear until browned. Its best to use metal tongs to flip larger sized piece of meat.

    Save the juices after the pork is cooked, take the meat out of the pot, and save the juices. Use about half of it for the BBQ sauce. The rest of the juices can use used to make gravy. To make easy gravy, simply thicken the juices with some cornstarch and serve it on top of mashed potatoes.

    All the steps and tips weve discussed so far work for any Instant Pot pulled pork recipe. But we dont want to make any kind of Instant Pot pulled pork. We want to make healthy pulled pork.

    Authentic pulled pork requires a dry rub usually made with paprika, sugar, salt, and, sometimes, other spices. Were cool with the spices. Were cool with the rub too. But were not cool with the sugar. So were not going to use any.

    We also dont want to add a ton of sugar-laden sauces to it so were keeping it as simple as possible using spice rubs and strong flavors to get the flavors to pop. Theres no reason to drown delicious pulled pork in sauce if you cook it right and its already full of flavor, ya know?

    What is the best cut for pulled pork? I prefer pressure cooker pork shoulder or pork butt pulled pork. They might not be the leanest cut of pork meat, but if you want juicy and flavourful results then shoulder or pork butt delivers!

    • Water: As with any meat cooked in the Instant Pot youll need `liquid at the bottom of the pot.
    • Seasonings: Onion powder, garlic powder, smoked paprika, salt, pepper and cayenne.
    • Tomato paste: Use low sodium, this will be the base of the healthy BBQ pulled pork sauce and will add thickness and acidity to it.
    • Sweetener: Just a touch of maple syrup or honey. Typical BBQ sauce is quite sweet thanks to all the corn syrup, glucose and fructose. Using maple syrup or honey gives you the sweetness that is MUCH better for you!

    If you try to cook the entire pork roast in the Instant Pot, it will take around 120 minutes of pressure to cook it completely. Remember, for GOOD pulled pork you have to render the fat out of the meat, and not have it still in the meat for sandwiches.

    • For a whole roast that is 3-5 pounds, it can take up to 120 minutes of high-pressure cooking. You can absolutely cook the pork this way, I often do, when I dont need something ready for 2 hours.
    • If you cut the roast into smaller pieces, it will take around 60 minutes of high-pressure cooking. This is better for when you have less time for the roast to cook.
    • For smaller roasts cut the roast in half, or quarters, and cook for 45-50 minutes high pressure.

    Can You Use A Bigger Pork Roast

    Yes, of course, you can! Just make sure it fits in your Instant Pot. You need to ensure that you dont pack the pressure cooker full and go past the maximum fill line.

    Use 60 minutes as a starting point and go from there. You can always check how tender your pork roast is after 60 minutes of cooking time. Then put it back in your Instant Pot for longer if its not quite there yet.

    Approximate Instant Pot pulled pork cook time by weight:

    4 pounds of pork = 60 minutes cooking time

    5 pounds of pork = 1 hour 10 minutes cooking time

    6 pounds of pork = 1 hour 15 minutes cooking time

    Can I Use Frozen Pork

    If you buy a piece of pork butt and you are not going to cook it right away, then freeze it. You can then easily use frozen pork to make pulled pork.

    The nice thing when cooking it in an instant pot is that you do not have to thaw it out before cooking it which is great when you forget to take something out of the freezer for dinner.

    Plus when the pork butt is frozen you can skip the searing step.
