Rinse the rice in cold water about 4-5 times until the water runs clear. This just takes about 3 minutes. You can put the rice in a colander sitting inside a bowl and run the water over it until the really milky water gets clearer.

Then drain as much excess water from the rice as you can before adding it to the Instant Pot. This is because youve already measured out the water and adding any additional water will throw off the ratio. Pour in the water over the rice.

Stir it to break up any clumps. Then lock the lid and set the vent to sealing .

Press the pressure cook button and set the time to 4 minutes. When the time is up, let the pressure release naturally for 5 minutes, then do a quick release of the remaining pressure.

Youll want to remove the inner pot from the machine right away so the rice stops cooking. Stir the rice to fluff it up, then transfer it to a glass, wooden, or plastic bowl not metal.

Allow most of the steam to escape from the rice by letting it rest for a few minutes. While the rice is still warm, pour the vinegar evenly over the top. Then use the spatula or paddle to cut the rice and incorporate the vinegar evenly amongst the lot.

You dont want to stir the rice. You want to cut through the rice with the spatula. This is to keep the rice from becoming overly sticky or damaging it too much so that it loses its texture and become gummy.

What Is Sushi Rice

Sushi rice is made with a short grain rice that often becomes quite sticky when cooked. To make it perfect for sushi, some vinegar, sugar and seasonings are added to the rice after cooking to give it flavor.

The main difference between sushi rice and white rice is the texture. Sushi rice is much stickier than white rice, making it ideal for sushi. It attaches very easily to a piece of nori , and stays on the roll, even while eating it.

There is a lot of confusion about what type or rice to use for sushi. If you need a crash course, check out this post. Basically, you need short grain rice not glutinous or sticky rice, and definitely not medium or long grain rice.

How To Reheat Leftover Rice

First and foremost, lets store out leftovers properly. Always allow your rice to cool completely before transferring to an airtight container with a tight-fitting lid. Keep stored in the refrigerator for up to 5 days.

Your rice will naturally start to dry out a bit and clump together the longer it is stored in the refrigerator. This is especially true for starchier rice or rice that is already quite sticky after cooking.

Thankfully, its super easy to reheat rice in the microwave so that it is soft and fluffy and it takes just a couple minutes.

Simply transfer your rice to a plate, sprinkle with a tablespoon or two of water , and cover with a damp paper towel. Cook on high until heated through.

Rice Cookers And The Instant Pot

When you cook white rice on the stove, the typical ratio is 1 part rice to 2 parts water. With rice cookers you don’t need to remember ratios at all. Just measure rice with the cooker’s cup accessory . Then fill the machine’s pot to a precalibrated water line to match your uncooked rice amount.

Rice cookers often have multiple water volume lines. The one you choose depends on the kind of rice you plan to make. Not so with an Instant Pot, which has just one series of suggested water volume lines that matches the water levels that standard rice cookers suggest for white rice. It also translates to a 1:1 ratio . Most importantly, the volume lines account for displacement caused by the volume of rice itself .

Instant Pot also recommends a 1:1 ratio for all grains of cooked rice. This included everything from brown to jasmine, basmati and wild rice. The only variable that changes is how long it should cook.
