How To Use Instant Pot As A Sous Vide Machine

After you find that your Instant Pot model has the sous vide option, and after you learn which buttons to press in order to make it work, heres your easy step-by-step guide on how to sous vide in an Instant Pot:

  • Fill the inner pot with water up to the half full mark or until your food is completely submerged.
  • Close the lid and move the venting knob to the venting position.
  • Using the control panel, program the temperature and time for the sous vide function following the instructions above^^.
  • Meanwhile, place your food in a resealable freezer bag.
  • Squeeze out as much air from the bag as possible.
  • Seal the bag, leaving a 1 inch opening.
  • Once your Instant Pot reaches the right sous vide temperature, use a wooden spoon or tongs to gradually lower the bag into the water.
  • Finally, seal the bag and then close the lid.
  • Once the sous vide cooking time is up, the Instant Pot will beep. Press Cancel, open the lid, and use tongs to remove the bag of food.
  • Open the bag and transfer the food to a plate or cutting board lined with paper towels.
  • Allow the food to rest for 10 minutes before serving.
  • You may notice air jump out as you lower the bag so keep the bag opening above water at all times.

    Getting the device ready to cook is simple. It needs to be attached to the side of an appropriate vessel, whether its the inner cooking pot from an Instant Pot pressure cooker or its another container. Then, water is added to above the Min line, but below the Max line, so theres enough room to add the food without going over the Max.

    When the device is turned on, it is set for the default of 133 degrees and 4 hours. We used the + and buttons to change the time and temperature. The new setting doesnt get saved when the device is turned off, so it always returns to the default. The downside to this is that if it turns off for any reason, it returns to the default. When evaporation below the minimum caused the sous vide to turn itself off, we were nearby and able to reset it. While its easy enough to add water, turn it back on, and reset the temperature, it could be a problem if the heat was off for too long, cooling the food to below a safe temperature. It also loses the timer information, which could also mess up a recipe.

    Once the time and temperature are set and the button is pressed to start it, the display shows on until the cooking temperature is reached. Then, it shows the current temperature and the time starts to count down. In use, it makes a whining sound. Its not loud, but it is present.

    Of course we cooked a steak, as well as boneless, skinless chicken breasts, and both were cooked perfectly.

    What Is Sous Vide

    Sous Vide means Under Vacuum in French. The sous vide cooking method consists of sealing your food in an air tight bag and then cooking it in water that is kept at the desired temperature of the finished food. Have you ever wondered why if you want a steak cooked to 140° F in the oven, you have to place the temperature of the oven to 350°F and not the temperature you want your food to be cooked at? Well, thats because air is a terrible conductor of heat. It would take so long for the heated air to bring your food up to temperature, that it would be a dried out mess. Not only that, but because you have to have the oven turned up so high, it doesnt transfer heat well so by the time the inside of your food is cooked, the outside is overcooked.

    Water conducts heat much better than air, so it does a much better job of transferring heat to your food. That is why you can bring the water to the exact temperature you want your food at and not higher like you would if cooking in an oven or on the grill. The air tight bag, helps this heat transfer to go directly to the food. It also protects the food inside and keeps all the juices and moisture that is naturally in the food, right where it should be. Thats what makes it different from just placing food directly into a hot container of water. That would work, but all the flavor and juices would seep out into the water. Thats why boiled food doesnt take so good.

    How Does The Instant Pot Sous Vide Function Work

    The Instant Pot sous vide smart program is a built-in function that works differently than traditional sous vide circulators.

    When using the Instant Pot sous vide function, the pot heats to the desired temperature, but there is no circulator inside the pot. Its merely a matter of programming the pot to your desired temperature.

    This is less precise than using an immersed circulator, because the water isnt being circulated , and because the pot cant actually measure the temperature of the water.

    For this reason, I recommend using a thermometer to check the temperature of the water to ensure it is adequate for the food you are cooking.

    Despite this shortcoming, Ive found the built-in smart program sous vide function to work quite well.

    However, if you want the ability to precisely control the temperature, and if you prefer to have the water agitated throughout cooking, it would be best to purchase an immersion circulator.

    When To Use An Instant Pot Vs Sous Vide

    As a general rule, I like to use an Instant Pot when the goal is speed and convenience, and to sous vide when the goal is excellence or perfection.

    Want a perfectly cooked pork chop to serve with a baharat and quince sauce to impress your date? Go for the sous vide. But want to whip together some pulled pork sandwiches for the whole family in under an hour? Its time for the Instant Pot.

    But this perfection vs. convenience paradigm doesnt quite tell the whole story. There are times when using the Instant Pot makes the perfect dish, or when the sous vide is more convenient.

    Sous Vide for Convenience

    Sous vide cooking is very similar to using a slow cooker! You can get it going several hours before dinner time, then basically ignore it until its time to add the final touches. So even though it typically takes hours, this doesnt mean it takes much work or attention from you.

    Instant Pot for Perfection

    If you think an Instant Pot cant be used in the search for perfection, just watch almost any MasterChef finale. Youre almost sure to see some daring home cook throw a tough cut of meat into a pressure cooker while the judges wonder out loud whether itll be done in time.

    Dry vs. Wet

    Another important point to keep in mind is how you want to serve your finished dish. Both sous vide cooking and an Instant Pot require liquid.

    But the big difference is that in sous vide cooking, the liquid can be outside of the bag.

    With an Instant Pot, the liquid is in contact with the food.
