How to Make Instant Pot Chicken Vegetable Soup~Easy Cooking

Most soups start with a mirepoix sauteed onions, carrots, and celery. This creates a delicious, flavorful base that you cant really recreate if you simply dump everything into the Instant Pot and press START.

However, some soup recipes are different. For example, if youre making chili, you brown the ground beef first, then add the rest of the ingredients.

Here are the basic guidelines:

  • For meat-less or bean-based soups, saute the onions, carrots, and celery first.
  • For chicken-based soups, either brown the chicken then remove it and make the mirepoix, or add it raw with the liquids, then shred it after the soup is cooked.
  • For ground meat, brown the meat first, then add the onions and such.

NOTE: Some people prefer removing meat or chicken from the pot then making mirepoix separately. This doesnt make enough of a flavor difference to me, so I usually add the veggies right on top of the browning meat.

Generally speaking, this will be your go-to order of ingredients:

  • Saute
  • Liquids and herbs
  • Add additional salt and pepper after cooking

    Step 1: Cut the meat into cubes if not already done so . Sprinkle with salt and pepper.

    Step 2: Select the saute function on your Instant Pot. Add cooking fat of choice and when fat just starts to shimmer, add half of the meat and cook for 2-3 minutes until browned. Flip the cubes of beef over and repeat on the other side. Remove meat to a plate and repeat with the remaining beef cubes. Press Cancel when the second half of the meat has been browned. Return all meat to the Instant Pot.

    Step 3: While the beef is browning in the Instant Pot, prep the vegetables.

    Step 4: To the meat in the Instant Pot, add the onions, potatoes, carrots, celery, garlic, diced tomatoes, broth, thyme, and Italian seasoning . Stir, lock the lid into place, set value to Sealing position then set cooking time for 20 minutes at high pressure.

    Step 5: After cooking time is up, allow for 10 minutes of natural pressure release before flipping the vent valve to venting to release any residual pressure. Remove the lid. Press Cancel then select the Saute function.

    Step 6: Add frozen peas and green beans to the soup. Stir then cook for 5-6 minutes or until they are heated through. Taste your homemade vegetable beef soup and season with additional salt and pepper to taste.

    How To Make Vegetable Soup In An Instant Pot

    Start by setting the Instant Pot to the saute function. Drizzle in a little olive oil, then add the onion, carrot, celery, and garlic. Leaving off the lid, stir and cook until translucent .

    Next, add in the tomato paste, spices, and a bit of salt. Cook, stirring, for another minute. Then, add the zucchini , bell pepper, cabbage, tomatoes, chickpeas, and vegetable broth.

    Cover your Instant Pot, seal the valve, and set to the soup setting to pressure cook on high pressure for 6 minutes. This doesnt mean your soup will be ready in 6 minutes, just FYI it takes the IP about 10 minutes usually to get up to pressure before starting the 6 minutes. It will just say on while its heating up, then when you see the 6 minutes appear that means its high pressure and actually cooking. So be sure to plan for that extra time!

    Once its done, carefully release the steam by turning the pressure release valve .

    Once all the steam is released, remove the lid and stir in your frozen green beans and leafy greens while the soup is still super hot. Let rest for a few minutes, until the kale is wilted and green beans are heated through. Lastly, season as you like with salt and pepper to taste.

    Serve on its own, or with a hunk of crusty bread and/or a sprinkle of parmesan cheese. You do you! Its also great with grilled cheese.

    Pre-soaking the beans is not required. This method and recipe will work for any of our bean soups. For a large soup, simply add 1 cup less water than the instructions call for. For a small soup, add 1/2 cup less water than the instructions call for.

    Instructions

  • Sort through beans for pebbles or other field debris.
  • Add the beans and water to the Instant Pot.
  • Add all the spice packets, stir to combine.
  • Lock the lid on and set the Instant Pot on the Soup Mode, or set to Manual, High Pressure for 30 minutes.
  • Make sure the valve on top is set to Sealed.
  • Once the beans are done cooking, let the pressure release naturally.

    The best turkey soup recipe is full of noodles. If you are gluten-free, you can use brown rice or quinoa noodles. I found a brand I love at ALDI that is inexpensive and made with organic rice and quinoa. I love to add these into my soups to add texture, flavor and make them more filling.

    Instant Pot Porridge Setting

    The porridge setting on the Instant Pot can be used to cook oatmeal using old-fashioned oats and steel-cut oats, rice porridge and congee or porridge-like dishes that use a mixture of grains that expand in liquid. Ideally, you should use natural release when cooking high-starch foods that expand or a combination of 5-10 minutes natural release and quick release to follow. Below is how to use the Porridge setting on Instant Pot.

    • Turn the Instant Pot on, it will say OFF to indicate the Stand-By mode. Add the grains, liquid and spices or fat if you wish. Secure and lock the lid. Press the Porridge button. The default setting is pre-programmed to set the pot to cook at High pressure for 20 minutes. If you press the Porridge button again, you can adjust the mode from Normal to Less or More.
    • Less mode 5 minutes at High pressure this is suitable for cooking rolled oats and risotto-like porridge or rice porridge with slightly firmer to bite texture.
    • Normal mode 20 minutes at High pressure use for steel-cut oat porridge or rice porridge with a slightly softer texture and for making congee.
    • More mode 30 minutes at High pressure use for a porridge/congee that contains a mixture of beans or tougher grains.

    If desired, use the / + buttons to further customize the time. The cooking time may be adjusted at any time during pressure cooking.
