  • Type of Milk and or Starter plays a role. Ultra Pasteurized Milk is heated to 280 degrees, which kills about 99.9 percent of the bacteria needed to properly culture yogurt, so therefore, it doesnt generally set up well. Milk labeled Organic is most likely Ultra Pasteurized.
  • The Starter you use for the yogurt is very important too. The first time making yogurt, purchase a high quality container of yogurt containing milk and live active cultures nothing more, nothing less.

What Can Go Wrong When Making Yogurt

1. The yogurt does not set and is runny.

  • You perhaps added too much starter, which crowds the bacteria. In the case of starter, more is not better. Two tablespoons is enough to culture half a gallon of milk.
  • You may not have incubated the yogurt long enough. Keep at it, checking every hour or so.

You may have added the starter before allowing the just-boiled milk to correctly cool. Very hot milk can kill the cultures youre depending on. Let it come down to under 120°F and above 116°F.

2. The finished yogurt is gritty or chunky.

This can happen when you incubate the yogurt too long. Next time, check your yogurt every hour or so after the first 4 hours of incubation.

What Kind Of Yogurt To Add To The Milk When Making Yogurt

Make sure the yogurt has actual live cultures in it, not stabilizers and other weird ingredients. You can use store-bought yogurt . There are also cultures that you can buy and once youve made your own yogurt, you can use that to make yogurt and have a never ending supply.

When I make yogurt using the ultra filtered milk, I use one jar of Vanilla Oui yogurt.

To Make Greek Yogurt:

After the yogurt is made place cheese cloth over a fine mesh strainer and set it on a large bowl. Pour the yogurt into the strainer and allow it to strain for at least 2 hours or up to 6. . Scoop out the thick Greek yogurt and store in a container in the fridge for 7-10 days.

Whey from the yogurt will drain into the bowl and it can be discarded or saved and used for protein smoothies or shakes.

Can I use skim milk?

Yes! You can make non-fat yogurt in the instant pot using skim milk, but because skim milk is missing the fat that helps thicken the yogurt, add an extra tablespoon of yogurt starter for every quart of milk. So, for 1 gallon of skim milk and 6 tablespoons of yogurt starter.

Troubleshooting: Yogurt is runny and didnt set up.

This can happen if too much starter is added, or if the yogurt has not incubated for long enough. Leave it incubating, checking it every hour. It could also be from adding the starter when the milk was too hot, killing the active cultures.

I used sweetened condensed milk, which equates to .27 ounces of the sweetener per ounce of yogurt. I think it is pretty comparable to other brands of yogurt. Ive never tried this myself, but many people have said theyve used:

  • Coffee creamer such as Bliss Natural coffee creamer
  • Coconut creamer
  • A bottle of Premier Protein drink
  • I also like just eating it plain with honey or berries!

You can always use any sweetener or flavors after it has set, such as vanilla extract or cinnamon.

When I want to make low carb yogurt, I make a sugar free Instant Pot yogurt using monk fruit sweetener. I use the Lakanto brand sugar-free substitute. It tastes the most like real sugar to me, and it works in the yogurt! In order to make it low carb, you need to ensure you use a low-carb milk like Fairlife.

You can add vanilla or other extracts before or after incubating. I have not noticed a difference.

Please note that mixing up yogurt will break down the proteins, making it thinner. So if you decide to mix in some vanilla, I recommend doing it for each serving and not the entire batch unless you dont mind it being thinner.

One of my favorite ways to sweeten yogurt it adding in some pineapple juice or chunks and Cream of Coconut for a pina colada yogurt!

  • Whisking the milk every 10 minutes during the boil cycle will help the milk come up to temperature quicker.
  • Getting milk to 183-185 degrees and holding there for a few minutes, will yield a thicker yogurt.
  • Boil Cycle will take about 45 minutes.
  • Cool Down will take about 10 minutes.
  • Incubation Time for Instant Pot Yogurt From 5 hours to 10 hours.
  • Most people incubate for 9 hours.

    What Kind Of Milk To Use For Yogurt

    I use whole milk because that is what we buy. Im pretty sure it will work with reduced fat milk, but it might not be as thick and you will have more whey.

    I also use Fairlife whole milk to make yogurt and in this case, you dont need to heat it all all. Since the Fairlife milk is already boiled and is ultra filtered, it doesnt need to be boiled at all. Not only does this make the process of making yogurt much easier, it also comes out much creamier and thicker.

    I have never tried making yogurt with other non-dairy milk so I have no idea if it works, how to adjust it, etc.

    How Long Does It Take To Make Yogurt

    Now that my system is streamlined, the hands-on time is less than 15 minutes.

    But there is hands-off time.

    • Heating and cooling the milk: 1-2 hours
    • Incubation period: 5-10+ hours
    • Straining yogurt: 1-3 hours

    Adding up those hours sounds like an all-day affair. But its like doing the laundry. You learn how to weave it into your schedule.

    Shrikhand is a thick sweet Greek yogurt dip. The key to a thick consistency is to strain the yogurt enough until all the whey has separated and thick strained yogurt is obtained.

    After adding and mixing sugar, the yogurt gets some moisture back. If you are using store-bought Greek yogurt, it is best to strain it for few hours, else the consistency may not be as thick as desired.

    The Costco brand organic, lactose free 2% milk is ultra-pasteurized, which means it was heated to a high temperature to kill the bacteria. Youll notice on both of these options that they stay fresh much longer that regular milk.

    Making yogurt the traditional way requires you to basically pasteurize the milk yourself by boiling and cooling it down to a specific temperature. Using this no-boil method, you can skip that part and the straining and get beautiful Instant Pot yogurt!

The yogurt can be strained all day long in the refrigerator if you are looking for a very thick yogurt. Straining for shorter amounts of time will result in a thinner yogurt.

    If you have strained the yogurt and feel that it is now too thick, add whey back in. A small amount of whey can be stirred back into the yogurt until you like the consistency.

    Why Isnt My Yogurt Thickening In The Instant Pot

    If the yogurt is not thickening in the instant pot, it can be due to several reasons. The most common problem is the milk fat. Do not use skim, 1% or 2% milk. Always use whole milk when making greek yogurt. The fat in the milk is essential for properly thickening yogurt.

    Make sure that the milk has reached the proper temperature. The yogurt button on the Instant Pot does not always get the milk up to 180 F. Use a thermometer to check the temperature of the milk and ensure that it has reached the proper temperature.

    The longer the yogurt rests and ferments, the more it will thicken. Make sure that the yogurt is allowed enough time to properly ferment and thicken up.     Why Cool Down Milk In Sink

    • While an ice bath will cool the milk quicker, you will have a better overall yogurt result using cold water and not shocking the milk. Using a whisk will aerate the milk and help it to cook down quicker.

    If you sense a metallic taste try using this silicone whisk instead. Another way to cool down the milk is to let the cooking pot sit on a cooling rack, but that will take about 30 minutes.
