Instant Pot Chicken Stew | Epic 30 Minute Dinner!

The best part is you can make a batch of this pressure cooker chicken stew and store it in various ways to enjoy it again later.

Honestly, it might even taste better the next day.

I recommend storing the leftovers in the refrigerator and packing them for lunch over the next day/s. Or, of course, just having it again for dinner some night.

That said, you can store this Instant Pot chicken stew in the fridge for about 3-4 days in an airtight container. And if you want to keep it for longer, you can store it in the freezer for about 4-6 months in a freezer bag or airtight container.

If you are serving this for family dinner or taking it to a party, it might be best to make a fresh batch since it’s so easy.

Ingredients For Instant Pot Chicken Stew

  • Boneless skinless chicken breast White meat chicken is leaner than dark, so that is what I use. If you prefer dark meat, feel free to use boneless skinless chicken thighs.
  • Baby potatoes You want to use waxy potatoes with thin skin rather than starchy potatoes like russets. As a result, they are less likely to fall apart and become mushy during cooking. Using baby potatoes will cut down on your prep time. However, if all you have hand are large potatoes, they will be fine. Just cut them into smaller pieces to ensure that they cook completely.
  • Carrots You can either slice large carrots into 2-inch pieces, or use baby carrots.
  • Onion I use white onion, but you could use also yellow or red onion. Be sure to chop it finely, but not so small that it disintegrates under pressure.
  • Tomato sauce Any plain or Italian flavor tomato sauce will taste great in your chicken stew. NOTE:To keep the recipe Whole30 compliant, be sure to use sugar-free tomato sauce.
  • Chicken stock or broth If you need to monitor your intake of salt, use low sodium stock.
  • Olive oil I use extra virgin olive oil. If you need a substitute, any neutral flavor of unsaturated fat will work just fine.
  • Low sodium soy sauce or coconut aminos The coconut aminos is what you will need to use to keep the recipe gluten free.

The classic recipe for coq au vin consists of chicken parts first being browned until golden, then braised in red wine with carrots, onions and mushrooms. Bacon is often added for extra flavour. The stew is slowly cooked in an oven until the chicken is tender and the sauce is thick and flavourful.

Instant Pot Chicken Stew in Tomato Sauce

When cooking soups or stews in the Instant Pot, I like to use a 10 minute natural pressure release to avoid liquid spewing through the vent. What this means is that when the cooking cycle is done, we let the Instant Pot sit for 10 minutes. At this point, we can carefully move the steam release handle into the ‘venting’ position, allowing the remaining pressure to release.

How To Store Leftovers

Chicken stew leftovers can be stored in the fridge in an airtight container for up to 4 days. Or they can be frozen in an airtight container for up to 3 months. Make sure to store stew and sides in different containers.

To reheat from the freezer, I recommend putting it in the fridge the night before to thaw. If youre in a rush, you can heat up the frozen stew in a small pot on the stove but youll need to add 1/4 to 1/2 cup of water or broth to avoid scorching.

Chicken Stew On The Stove Top:

Add the avocado to a thick bottomed pot and heat to medium-high on the stove top. Add the chopped onion and sauté, stirring occasionally, until onion begins to turn brown, about 5 to 8 minutes.

Add the remaining ingredients except for the flour to the pressure cooker and stir well.

Cover the pot and bring it to a full boil. Once boiling, reduce the heat to a simmer and continue cooking until the potatoes have softened and the chicken is cooked through, about 20 to 30 minutes .

Remove the lid and transfer the chicken to a cutting board. Use two forks to shred the chicken.

Transfer the chicken back to the pot and stir.

If youd like a thicker stew, add the gluten-free flour and continue cooking at a gentle boil until thick, about 8 to 10 minutes longer.

Stir in some frozen green beans or peas after pureeing the soup.

Most varieties of potatoes work well in this recipe. My favorite is Yukon Gold, but red or russet potatoes are also good choices.

For a shortcut, use a teaspoon or two of my Homemade Poultry Seasoning Blend in place of the dried herbs.

This chicken stew could also be made in the slow cooker. Add all ingredients to the slow cooker, cook on Low for 5-6 hours, then remove the chicken and puree a portion of the soup as indicated in the instructions below.

  • Why Do you Add the Ingredients In The Inner Liner Pot Before Placing the Pot inside the Instant Pot?
  • I have read from multiple people how they started adding ingredients, including the liquid, in the Instant Pot, only to realize that they did not have the Inner Liner pot inside the Instant Pot before doing that. In this instance, they MAY have ruined their Instant Pot. That is why I recommend adding the ingredients into the Inner Liner Pot first and then placing the Inner Liner Pot that contains the ingredients inside the Instant Pot.
  • Why Natural Release instead of a Quick Release?
  • InstantPot.com recommends using a natural release for soups and poultry and quick release for vegetables. Since the stew continues to cook during the natural release, I pressure cook for 10 minutes and then let it release pressure naturally for 10 minutes, but then do a quick release to prevent the vegetables from overcooking and turning to mush.
  • Why add liquid first?
  • According to InstantPot.com, one of the ways to prevent food for sticking to the bottom of the instant pot and burning, and to prevent receiving a Burn message, add the liquid first and then add other ingredients.
  • Why Is The Order of Ingredients Important?
  • Yes. InstantPot.com calls this layering ingredients. Add the liquid to the bottom and then layer the ingredients on top and DO NOT STIR. This helps to prevent foods that might scorch from sticking to the bottom of the pot.

    Easy Stovetop Chicken Stew:

    You can easily make this in chicken stew on your stove

  • Cut chicken and veggies.
  • In a large pot heat 1 tablespoon olive oil. Sear the chicken for 2-3 minutes until lightly browned on all sides. .
  • Add onions, garlic, celery, and carrots. Sauté for 4-5 minutes until fragrant and slightly translucent.
  • Add all remaining ingredients. Stir to combine.
  • Cook on medium-high heat for 30 minutes, stirring occasionally. At this point, the stew will be ready to eat but you can reduce the heat so the stew comes to a simmer + cook for additional 30 minutes.
  • Add The Potatoes Chicken And Cook

    Once your veggies are sautéed, add the potatoes, chicken, salt, black pepper, ranch seasoning mix, and chicken broth to the Instant Pot. Then stir everything together. All the ingredients need to be fully submerged and covered in liquid, so if they arent, just add a little more broth.

    Next, close the lid on your Instant Pot and set the valve to the sealing positing. Now, set the IP to manual setting and set the timer to 8 minutes. Yet, after you do this it will take the Instant Pot about 10-15 minutes to come to pressure before you see it starting to cook and the timer counting. So dont worry, just be patient. It is doing its thing.

    Its pretty easy to make chicken stew but here are some tips for making the best stew!

    • Pound chicken breasts Pound your chicken breasts before cutting into cubes. This helps them to be super tender!
    • Use fresh herbs if you can Dried spices work great in a pinch but fresh herbs really make this extra delicious!

    How To Make Chicken Stew In The Instant Pot

    10 Minute Chicken Stew Instant Pot Recipe

    Making chicken stew in the instant pot requires no browning chicken or sauteing veggies. Simply add everything to the pot and set to cook. This recipe has the same ingredients as my slow cooker chicken stew, but the cooking time is way faster.

    Heres what to do:

  • PrepChop the veggies, potatoes, and chicken.
  • SautéAdd a little oil to the pot of the Instant Pot and in sauté mode, cook the chicken for 5-7 minutes, stirring frequently, until its mostly cooked through.
  • CombineAdd all of the remaining ingredients, minus the cream and the peas, inside the pressure cooker. Place the lid on the Instant Pot, seal, and close the release valve. Cook on HIGH for 15 minutes.
  • ReleaseOnce the cycle is finished, allow it to sit for 10 minutes on natural release. Carefully open the pressure valve to release the steam away from you. Remove the lid and stir in the green peas and cream. Place the lid back on and wait 3 minutes for the peas to heat through.
  • EnjoyGive the chicken stew a quick stir, and ladle it into a bowl. Serve it homemade rolls or thick, crusty bread.

    How To Thicken Stew Without Using Flour

    The easiest and healthiest way to thicken any soup without using any flour is to simply blend a small portion of the soup. There are three ways to do that:

  • Ladle about a cup of the stew into a mug, taking care to avoid chicken pieces if possible. Using an immersion blender, blend the stew until smooth and thick. Transfer back to pot and stir to combine.
  • Alternatively, you may use this method directly in the Instant Pot. Carefully scoop out the chicken pieces from one section where you will be blending. And using an immersion blender, blend a small section directly in the pot. Stir to combine.
  • If you don’t have an immersion blender, pour approximately one cup of stew into a blender, taking care to avoid chicken pieces if possible. Blend on medium until smooth. Transfer back to pot and stir to combine.
  • Many stew recipes call for thickeners such as flours or starches. Even some paleo recipes will often have starches such as arrowroot and tapioca listed as ingredients.

    You may use that method to thicken this Chicken Stew, if so desired, just follow the instructions below.

    A bonus advantage to thickening stews using this method is the thickener will not separate if you choose to freeze the stew for later. If you freeze any leftover Chicken Stew without using any thickeners, you will still get a uniform texture rather than the floury mess separating from the rest of the stew.

    • Refrigerate: Allow the stew to cool completely, then, place in an airtight container. Refrigerate for up to 3 to 4 days. Reheat on the stovetop.
    • Freeze: Though freezing may change the texture of the veggies and the cream may separate, this dish can withstand up to 4 or 6 months of storage. Thaw completely first before reheating on the stovetop.

    Recipe Tips

    • You can use any cut of the chicken for this, even the breasts will be a good choice. Another variation of this recipe is to simply put all the ingredients in, except for the cream or it might curdle, then cook without sautéing.
    • Instead of cubes, you can simply cook the whole chicken cut, then, after cooking, remove each cut from the pot. Shred them, discard the bones, then, put the shredded meat back into the soup.
    • Another way to thicken this is to get some of the broth and the potatoes, then, puree using a blender. Then, stir everything back into the soup.
    • You may choose to leave out the cream if you want.

    6 quart Instant Pot Pressure Cooker – I find that the 6-quart size is plenty big for all my cooking needs, however, I do own 2 pressure cookers. If you need a larger size, this 8 quart Instant Pot is great!

    Can you double the recipe if using the larger size?Certainly! It’s great as an instant freezer meal for busy nights.

    Instant Pot Liner – I have an extra one so I can literally swap them out without transferring the food. This is super convenient when making Chicken Stew if there are any leftovers, simply cover and transfer to the refrigerator.
