  • Youll need a 6-quart or larger pressure cooker for this recipe. The pot should be just big enough to fit a 3- to 4-pound chicken. If you have a larger pressure cooker , you can also get away with using a slightly larger chicken.
  • Be careful when doing a quick-release. This is because liquid-heavy pressure cooker recipes like this soup can release a lot of steam during the venting step after cooking.
  • Scared of steam? That’s ok! If you want to avoid the jet of steam entirely, you can wait for the pressure to release naturally. Just wait until the pressure cookers float valve has returned to its “down” position. This will take quite a while, though, since this recipe contains a lot of liquid.
  • Chicken jello?! Good chicken soup made with the whole chicken will often develop a jelly-like consistency once chilled, so don’t be alarmed if this happens to you! The soup will turn back into liquid when warmed.

The secret to good chicken noodle soup is to make the broth from scratch using chicken with skin and bones. My mom always made her soup with a whole chicken, lots of carrots, onion, celery and sometimes a parsnip for more flavor. The end result is always the best and tastiest broth and my favorite part was always the noodles. Oodles of noodles, the more the better.

This Instant Pot chicken noodle soup is similar but it takes a lot less time and the soup is just as incredible, loaded with tons of flavor.

I did not use a whole chicken, its not necessary, but youll need about 2 lbs of chicken with skin and bones. You will want at least one chicken breast, so that you have some to shred after to add back to the soup. The biggest advantage of using the Instant Pot to make this soup is of course time. It takes 7 minutes to cook the chicken for that delicious broth.

Someone asked me if the food cooked in the Instant Pot is bland and I think the exact opposite is the truth. I find the flavors richer and much deeper. When you open that lid after cooking and the aromas hit your nose, you wont be able to wait till you have a taste of this soup.

One thing to note is I didnt cook the noodles with the chicken on the soup cycle and that is because I didnt want to end up with mushy noodles, noodles cook quick anyway, so I didnt think its necessary.

Absolutely, I frequently cook Instant Pot Mac and Cheese, its easy and wonderful. In the mac and cheese recipe, the pasta is cooked in the Instant Pot under pressure.

In this recipe, the Instant Pot cooks the chicken and veggies under pressure however it is used to boil the pasta using the saute setting at the end. While the noodles could be cooked under pressure in this recipe, the chicken and noodles need different cook times and the Instant Pot takes a lot of time to come up to pressure.

  • Add the chicken. You can add the chicken breast whole or cut it up into chunks. Sprinkle in the Italian seasoning, salt, and pepper, and saute until the meat is no longer pink. It will continue to cook under pressure, so no need to overcook it.
  • Pour in the stock. Add both the stock and water to the pot. Cover with the lid and turn the valve to the sealing position. This helps to make sure the pressure builds, otherwise, the steam will just continue to escape, and nothing will happen. When making this Instant Pot Chicken noodle soup, youll use a quick release to stop the cooking so the chicken doesnt overcook. When the cycle ends, just turn the venting knob to vent to release the steam.

Always protect your hand with an oven mitt or kitchen towel to prevent burns as the steam is very hot. Quick release will make the pressure drop in seconds instead of minutes. Once released, the lid will easily open. Never force the lid off your Instant Pot if it doesnt open easily, it is still under pressure and should not be opened!

We tried this chicken noodle soup recipe with both stocks. Its definitely best to use homemade chicken stock for a boost in flavor. If youre using store-bought chicken stock, be sure to use an unsalted or low sodium version.

Can I use a whole chicken breast?

Yes! To kick our chicken noodle soup up a notch, we used a whole chicken breast. We cut the breast in half and removed the bones, then added the bones for even more chicken flavors! Or you can throw in a few chicken bones you have in the freezer

Can I cook the noodles on stovetop?

Yes! You can reduce ~12 minutes overall cooking time by cooking the wide egg noodles on the stovetop instead of the Instant Pot. First, bring 4 5 cups of unsalted chicken stock to a boil, then cook the noodles in boiling chicken stock. You can cook the noodles while the chicken is pressure cooking in the Instant Pot.

Why Use The Pressure Cooker

Pressure cooking in the Instant Pot reduces the cooking time a fair amount. Using an electric one also allows you to leave the pot unattended while it cooks. The cooker will even switch to a Keep Warm setting once cooking has finished so you dont have to worry about turning off the cooker right away when the soup is done.

Notes About Cooking Noodles In The Instant Pot:

Cooking noodles in the Instant Pot can be tricky, especially when they are a delicate variety like egg noodles. Here are some tips on how to cook them in the Instant Pot if you decide that is what you want to do.

  • If you would like to cook the egg noodles in the Instant Pot. Add them to the pot after you have released the pressure. Let sit for about 10 to 12 minutes and egg noodles will cook in the broth.
  • If you would like them to be cooked faster then set to saute mode and cook for 8 minutes. I warn that this method could result in mushy vegetables. I dont recommend cooking the noodles in the pot.

How To Make A Thick Or Creamy Chicken Noodle Soup

If you want a creamy chicken noodle soup, add 1/2 cup half-and-half or heavy cream. Stir to combine, and add more as desired.

For a thick chicken soup that sticks to your spoon, make a cornstarch slurry using 1 tablespoon cornstarch mixed with 1 tablespoon water. Select Saute and add to the cooking pot and stir until soup thickens, about 1 minute.

Keep in mind that it will continue to thicken as it cools however, if you want it thicker, add more cornstarch slurry until it reaches desired consistency.

When my kids are sick, I dont thicken it. But if Im serving it for dinner in a bread bowl, I prefer it thickened with cornstarch.
