Add all of the ingredients to the Instant Pot . Pressure cook on HIGH for 10 minutes. Allow the steam to naturally release. Remove the bay leaves and the sprigs of thyme. Shred the chicken with two forks. Select the SAUTE option on the Instant Pot then add in the noodles. Let them boil for 5-6 minutes or until tender. Serve immediately with fresh chopped parsley and enjoy!

There is nothing, NOTHING better than the perfect Chicken Noodle Soup especially on a freezing cold winters day or evening. And this ones going to help fend off those nasty colds!

I am known to make some of the greatest chicken noodle soup amongst friends and loved ones but it always took about a solid 2-3 hours to do it on the stove. Now, it only takes 30 minutes!

My mom has been begging me to convert my stove-top recipe into one for the Instant Pot so she could be pushed over the edge to finally get one of her own so here it is, MA!

Heres How I Made It!:

Start off by going straight to the Instant Pot and add some water

and some chicken broth.

No whats chicken soup with out the chicken?! Were gonna want to use various parts of a butchered chicken and add each piece to the liquid in the pot.

Now lets take an onion and cut it into large chunks

and then add it to the broth as well. Also throw in some Italian seasoning

some lemon pepper seasoning

.. .a few bay leaves with a few shakes of ground black pepper

and some kosher salt.

Give it all a good stir, secure the lid and cook on high pressure.

Once done, skim out the onions and bay leaves and discard.

Then, using some tongs, remove the chicken

and set aside to cool.

Now lets chop up some carrot and celery, reserving the leafy tops of the celery

and then adding it to the broth as well as some fresh dill !

Now well spice it up with a little seasoned salt

Cooking Times For Instant Pot Recipes

Often when I post an Instant Pot recipe, people get really confused on the timing of the recipe. It says to cook for 5 minutes but the total time on the recipe is 55 minutes. I get it, it is a little confusing.

The total time of an Instant Pot recipe reflects the prep time of the recipe, in this recipe the sauté time for the vegetables, the time it takes for the pressure cooker to come to full pressure, and the time it takes for the pressure to release at the end. The five minutes you set the Instant Pot to is that time between it coming to pressure and it releasing.

In this particular recipe, it takes 16 minutes for the pressure cooker to come to pressure, then it will cook for 5 minutes, and then it takes another 6 minutes for the pressure to release.

For The Shredded Chicken

  • Chicken thighs Boneless and skinless. You can also use boneless, skinless chicken breasts that have been cut in half width-wise so they are about the same size as the thighs.
  • Kosher salt Or you could use sea salt.
  • Ground black pepper
  • Chicken stock You can also use vegetable broth.

Note: Make sure you keep the broth after your chicken has finished cooking because the liquid will be added to the soup as well.

Tips For This Chicken Noodle Soup Recipe

BEST Instant Pot Chicken Noodle Soup Recipe
  • To make this soup with frozen chicken, I would suggest increasing the pressure cooking time to 12 minutes plus a 10 minute natural release.
  • You can use chicken thighs in this recipe if you prefer dark meat.
  • You can use bone-in chicken breasts or bone-in thighs if you prefer. Increase the pressure cooking time to 10 minutes plus 10 minutes of natural release. Cooking the meat on the bone will add even more flavor to the broth.
  • If you can find them, whole wheat egg noodles work wonderfully in this recipe. You can also substitute other pasta shapes if you dont have egg noodles on hand.
  • To freeze this soup, I recommend that you wait and add the noodles after freezing. Cooked noodles may become mushy after freezing. You can cook the noodles separately and add them to the soup when you are ready to serve it.

Why Cook The Noodles Separate

I prefer to cook the noodles separately because they get mushy when they sit in the broth too long or when you reheat them.

Generally, I dont add them to the soup before I serve it. I let each person fill their bowl with as many noodles as they like, then ladle the broth and vegetables over the top to suit their taste.

Plus, the soup reheats much better if the noodles are frozen separately. Noodles require less time to reheat, and heating them separately keeps the noodles from absorbing all the broth.

Thats where the Instant Pot comes in pressure cooking makes homemade broth much easier. Now, Im not going to say its as easy as opening a can of Campbells – its not – but Instant Pot Rotisserie Chicken Noodle Soup is worth the extra effort.

    The secret to good chicken noodle soup is to make the broth from scratch using chicken with skin and bones. My mom always made her soup with a whole chicken, lots of carrots, onion, celery and sometimes a parsnip for more flavor. The end result is always the best and tastiest broth and my favorite part was always the noodles. Oodles of noodles, the more the better.

    This Instant Pot chicken noodle soup is similar but it takes a lot less time and the soup is just as incredible, loaded with tons of flavor.

    I did not use a whole chicken, its not necessary, but youll need about 2 lbs of chicken with skin and bones. You will want at least one chicken breast, so that you have some to shred after to add back to the soup. The biggest advantage of using the Instant Pot to make this soup is of course time. It takes 7 minutes to cook the chicken for that delicious broth.

    Someone asked me if the food cooked in the Instant Pot is bland and I think the exact opposite is the truth. I find the flavors richer and much deeper. When you open that lid after cooking and the aromas hit your nose, you wont be able to wait till you have a taste of this soup.

    One thing to note is I didnt cook the noodles with the chicken on the soup cycle and that is because I didnt want to end up with mushy noodles, noodles cook quick anyway, so I didnt think its necessary.
