How To Make The Pot Roast Gravy:

Remove the beef and peppers from the instant pot and switch the instant pot to the sauté setting.

Then mix 2 tablespoons of cornstarch with 1 cup of cold water. Whisk together until blended completely.

Whisk this mixture into the juices in the instant pot. Then cook for 2-3 minutes until the sauce has thickened.

Taste test it and seasoning with salt and pepper. Then its ready to serve with the Mississippi roast.

Time For Slow Cooking

Put the lid on, plug in your Instant Pot, select the Slow Cook program. Set the temp to HIGH and KEEP WARM = On. Time should be set at 4 hours. If you want to cook for longer times then choose the medium or low temp options. The Temp HIGH setting defaults to 208 degrees. After two hours in my Instant pot the roast had an internal temp of 206.8 degrees.

  • Open and remove the roast from the packaging. Place on a large plate, pat dry with paper towels and sprinkle salt over the roast. Let sit at room temperature for about 30 minutes before cutting.
  • On a cutting board cut and discard any silverskin from the roast. If any large fat chunks are present on the roast, trim fat off. Set the fat pieces aside as youll add those back into the stew before pressure cooking for additional flavor. Now cut the remaining roast into 1 inch square pieces.
  • On the Instant Pot select the Saute function. When the pot gets hot, add the tallow. Then add the roast pieces and sear for about 8 to 10 minutes or until browned. In a medium bowl remove the browned beef and set aside.
  • Add in the fat pieces, along with the onion quarters into the Instant Pot. Saute for a few minutes until the fat and onions are golden brown.
  • Deglaze the pot by pouring in red wine and scraping the bottom to remove any browned bits. Bring to a simmer for about 4 to 5 minutes or until the wine has reduced by about half. Press the Cancel function and then pour in the beef bone broth.
  • Place the lid on the Instant Pot and lock the lid. Turn the vent valve to sealed and cook on manual high pressure for 35 minutes.

    Tips For The Best Mississippi Pot Roast Recipe

    • This dish has quite a bit of salt, thanks to the au jus gravy mix, the Ranch dressing mix, and the pepperoncini. As a result, I do not recommend adding any extra salt until you taste the finished product. Use water or low-sodium broth, unsalted butter, and unseasoned flour to avoid an overly-salty dish.
    • Dredge the meat in flour before browning. This adds body to the finished sauce and helps to achieve a beautiful browned, crusty exterior on the beef.
    • Sear the beef and get some really nice color on it before you begin the slow braising process. The caramelized surface of the meat will give the dish rich flavor and the browning process will help to lock in the juices.
    • Deglaze the pot with water or low-sodium beef broth after browning the meat. The browned bits on the bottom of the pot will add great flavor to the finished dish!
    • If your beef is still tough at the end of the suggested cooking time, continue cooking for even longer. Undercooked roast will be tough and chewy. When the chuck roast is fully cooked, it should be fall-apart tender so that it shreds very easily with two forks.

    • Make the Cornstarch Slurry. When the Instant Pot finishes cooking, there will be a lot of liquid remaining. To thicken the liquid and turn it into a brown gravy, make a cornstarch slurry to add to it. To make the cornstarch slurry, mix 2 tablespoons cornstarch with 2 tablespoons water and stir until the cornstarch is dissolved and the water turns white. Then pour the cornstarch slurry into the liquid in the Instant Pot.
    • SAUTE. Press the SAUTE button and stir the liquid with the cornstarch slurry until it thickens. This should take about 3 minutes but could take a little longer.
    • Serve. Pour the brown gravy over the Mississippi Pot Roast on the platter and serve.

    Greg’s Kitchen – Instant Pot Mississippi Pot Roast

    Heat up a large skillet on high. Add oil to hot skillet. You want it really hot here to brown or “sear” the beef quickly. Note: I have one of the Ninja slow cookers that has a “stovetop” option, which means I can brown the meat all right in my crock pot and not dirty up any other dishes. However, if you are in a rush, just skip the browning step altogether.

    Take a paper towel and make sure you dry both sides of the pot roast Then season with a little bit of salt and pepper. Once the skillet is nice and hot, add the roast. Allow the roast to cook for about 2-3 minutes until it is golden brown. The browning of the outside of the meat just adds flavor. Using tongs, flip the meat over and sear the other side of the roast for another 2-3 minutes.

    Transfer meat to slow cooker. Sprinkle packets of dry ranch dressing and onion soup mixes over pot roast. Top with a stick of butter. Then place peppers on and around roast.

    Note: This butter is a Kerrygold garlic & herb butter. The sticks were on sale at Kroger so I had picked up a bunch. But a regular stick of salted butter will still work perfectly in this. Cover and cook on low for 8 hours. You don’t add any other liquid to this. The meat will create it’s own juices at it cooks. DO NOT remove the lid while cooking.

    Serve on mashed potatoes, rice or on a roll with a slice of provolone or mozzarella cheese.

    How To Make It

    Instant Pot Mississippi Pot Roast

    To start, cut your chuck roast into pieces. Usually, 3 to 4 equal-sized pieces will fit easily in the Instant Pot. Next, youll get the beef browned and ready for pressure cooking:

    Prepare the Beef: With the Instant Pot set to saute, brown the beef pieces. This should take about 5 minutes per side to get a nice, even sear. Once browned, remove the meat and set it aside.

    Assemble the Roast: Pour in the beef broth to deglaze the pot. Use a spatula to scrape the bottom, lifting all those flavorful stuck-on bits. Next, turn off the pot and place the meat back in. Add the dressing and gravy mixes, butter, and pepperoncini. Now, for even more flavor, pour in the pepper juice, too!

    Generally, I do not brown the roast before making this recipe just because Im kind of lazy in the kitchen.

    If you prefer to brown your roast first, you definitely can for this recipe.

    To brown, place the instant pot on the sauté setting. Add a small amount of olive oil to the instant pot insert.

    Then add in the roast and cook for 3-4 minutes on each side to brown the roast.

    After the roast has been browned, remove the roast from the instant pot. Then use a wooden spoon to remove all the brown bits from the bottom of the pot.

    Then add add the roast back to the instant pot with the other ingredients and cook based on the recipe.

    Recipe Tips For Perfect Instant Pot Mississippi Pot Roast

  • Use Good Quality Beef. Use a good chuck roast that has lots of marbling.
  • Brown The Beef First. I know people love their dump and go recipes, but you can add so much flavor to the recipe by taking an extra few minutes to brown both sides of the beef before you start pressure cooking. After you taste it, you will thank me for adding this step.
  • Use Low Sodium or Homemade Ingredients. This recipe can get salty because several ingredients, including the beef broth, pepperoncini peppers and juice, and seasoning packets already have salt added. Therefore, I recommend using the low sodium versions of these ingredients. To reduce the salt even more, you can make homemade versions of the ranch seasoning and au jus mix. Remember, you can always add salt later, but you can never take it away once it is added.
  • Use Natural Release and not Quick Release. This is very important. Be patient and allow the Instant Pot to release pressure naturally. The roast will still be cooking during this time. If you do a quick release, your pot roast could be tough and may not be completely cooked.
  • Make Gravy with the leftover liquid. Obviously, the gravy is optional, but it is so flavorful when made with the liquid left over from cooking the roast. In my opinion, dont skip the gravy.
  • You Will Need An Electric Pressure Cooker

    I am using an 8 quart Instant pot but you can use a 6 quart. I personally have an Instant Pot and so far I am loving it.
