Once I discovered making a one-dish pasta dinner with it, I have decided it may rank higher on my list of favorite appliances.

I simply adapted my taco pasta recipe and made it in the Instant Pot instead, it can also be in the Ninja Foodi too. I was a bit skeptical of how the gluten-free pasta would turn out, but it worked just as well as regular pasta.

    We currently have one Instant Pot model that is capable of pressure canning. The 6-quart Instant Pot Max is rated at 15 PSI. Pressure canning is for low-acid foods, like vegetables and meats, and requires a minimum 15 PSI, says Stefanie Daichendt, influencer relations manager at Instant Brands. All other Instant Pots are rated up to 12 PSI. This means that they do not reach the appropriate pressure for safe canning. It is possible to do water boil canning in our other Instant Pots. For water boiling in the Instant Pot, we would recommend using the ‘slow cook’ function on the ‘more’ setting, as this will ensure that the water in the pot remains at a steady boil between 200 and 210 degrees Fahrenheit.     Im pretty sure youve got all the ingredients in your refrigerator and pantry. Thats whats so great about this recipe. Its simple, its hearty, and its oh so comforting.

    Heres what youll need:

    • Onion, carrots, celery, and garlic
    • Dried herbs, such as basil and oregano
    • San Marzano crushed tomatoes, make sure to look for the certified label. The San Marzano tomatoes are a bit sweeter in flavor
    • Bone broth or vegetable broth, whichever you have on hand
    • Fresh Spinach or Kale, for that fresh, leafy green flavor
    • Bay Leaf, fresh or dried
    • Gluten-Free Elbow or Shell Pasta, I like the quinoa version, but use your favorite
    • Freshly cooked White Cannelini Beans, you could opt for a can of white cannellini beans if you dont have them pre-soaked and cooked on hand
    • Grated Parmesan Cheese and Pesto to top off the minestrone soup recipe at the very end. Omit for vegan option.

    The process for Instant Pot minestrone is simple.

    • Saute the vegetables in the Instant Pot and add the tomatoes and bone broth.
    • Set to HIGH pressure in the Instant Pot, and youve got soup on the table in about 20 minutes.
    • The actual cook time is 5 minutes but it takes about 12 minutes to get to pressure. Thats way better than anything youd get in a soup can.

    Tips For Making Gluten

    The best way to make this is by using the saute function on the Instant Pot to brown the beef. Once the beef is browned, it can be drained if needed however, mine did not.

    I suggest using lean ground beef.

    Once the beef is drained, simply add all the ingredients into the instant pot. Once I had everything in the Instant Pot, I cooked on high pressure for 6 minutes.

    A quick release of the pressure and a nice stir, it was a delicious pasta all in one dish!

    We paired ours with some corn, of course, a salad is nice too. Once it was paired, we had dinner ready to go. This made enough to serve 8 or more.

    We had plenty of leftovers for the next day, plus my son had multiple servings. He sure does love his pasta! Thats one food he will not turn down.

    If you are new to instant pot cooking, check out my complete beginners tutorial on how to use an instant pot. Below are the important basics to be aware of.

  • Liquid Always have at least 1 cup of liquid in pressure cooker. Sometimes recipes will call for less if the ingredients contain a lot of water, like chicken, fruits, or vegetables.
  • Seal Lock lid in place by turning clockwise. Make sure the valve at top is in SEAL position. The valve will let off a little steam as the float lifts up and locks into place. This is normal and it will stop once the pressure cooker comes to full pressure.
  • Timing The recipe will include a cook time, which is the time to set for cooking under high pressure. It will not start counting down that time until it comes to pressure. This can take anywhere to 5-30 minutes, depending on how much liquid is inside.
  • Quick Release vs. Natural Release For QR, when the cooking time ends press or turn the button to release pressure immediately. For NR, after the cook time ends do not do anything and the unit gradually releases pressure as it sits.
